Pumpkin Spiced Muffins. Cream Cheese Filled Pumpkin Muffins, Cream Cheese Topped Pumpkin Muffins, Crumb Topped Pumpkin Muffins and Cinnamon Pumpkin Muffins. In this video, I'll be making pumpkin muffins with several variations that your friends and family are sure to love. It starts with a basic recipe and you can build at least 6 variations with a few add- ins. They're delicious, moist, fluffy muffins.

Ingredients for pumpkin muffins:
1 1/2 cups of all purpose flour
2 teaspoons of pumpkin pie spice
1 teaspoon of baking powder
1/2 teaspoon of baking soda
1/2 teaspoon of salt
1/2 cup of oil
1/2 cup of sugar
1/2 cup of brown sugar
2 eggs
1 teaspoon of real vanilla extract
1 can of 100% pumpkin
Ingredients for the sugar and cinnamon topping:
1/4 cup of sugar
1 teaspoon of cinnamon
1/4 cup of real butter
Ingredients for cream cheese filling

1/4 cup of sugar
1 egg
2 teaspoons of vanilla
Ingredients for crumb topping:

2 tablespoons of butter
1/4 cup of flour
1/4 cup of sugar
1 teaspoon of cinnamon
2 to 3 tablespoons of chopped pecans

I am. This is why I ONLY deal with muffins that are ACTUALLY good. I can't stand a dry, crumbly, too-sweet, boring muffin.
These pumpkin muffins are super tender, MOIST (I said it) and they somehow stay fresh for days!
I'm going to show you how to make a pumpkin cranberry muffin here, but you can easily jazz these pumpkin muffins up with whatever add-ins you like. Dates, chocolate chips, raisins, blueberries, nuts, heck—you can even ditch the spices and make it a savoury muffin with cheese!
This is such a nice option for a healthy pumpkin muffin. I hope you like it!

PUMPKIN CHEESECAKE SWIRL MUFFINS
Ingredients
* 3/4 cup pumpkin puree (the canned variety is best, unsweetened)
* 2 eggs
* 1 cup white sugar
* 1/2 cup vegetable oil
* 1 1/2 cups all purpose flour
* 1 teaspoon baking soda
* 1/2 teaspoon sea salt
* 2 teaspoons ground cinnamon
* 1/4 teaspoon ground cloves
* 1 teaspoon ground ginger
* 8 ounces full fat cream cheese, softened to room temperature
* 1/2 egg (beat one egg and use half the mixture)
* 1/3 cup white sugar
Instructions
* Preheat your oven to 350 degrees Fahrenheit and line a 12-cup muffin tin with paper liners.
* In a large bowl, whisk together the pumpkin puree, eggs, sugar, and vegetable oil until well combined.
* Add the flour, baking soda, salt, cinnamon, cloves, and ginger and mix with a rubber spatula just until no streaks of flour remain. Set the batter aside.
* Combine the cream cheese, 1/2 egg, and sugar in a medium bowl with a wire whisk until the mixture is creamy and smooth. Set aside.
* Portion out the pumpkin batter into the 12 muffin cups, filling each one about 2/3 full.
* Add one tablespoon or so of the cheesecake mixture to the top of each and use a toothpick to swirl the cheesecake mixture into the pumpkin batter.
* Bake the muffins at 350 degrees Fahrenheit for about 20 minutes, or until the muffins pass the toothpick test (insert a toothpick and if it comes out clean, they're done!).
* Allow the muffins to cool in their pans for about 10 minutes before removing them to a wire rack to cool completely.

Ingredients:
1 cup (240ml) Milk
2 Eggs
1/4 cup (60ml) Oil
1/2 teaspoon Salt
1 teaspoon Garlic powder (optional)
1 teaspoon Dried oregano (optional)
1¾ cups (220g) Flour
2 teaspoons Baking powder
1 cup (100g) Mozzarella cheese
1 Tomato, chopped
1/3 cup Olives, sliced (optional)
Tomato sauce or ketchup
Directions
1. Preheat oven to 375F (190C). Grease a muffin tray with oil and set aside.
2. In a large bowl whisk milk, eggs, oil, salt, garlic powder, oregano and other spices if desired.
3. Add flour baking powder and mix until combined.
4. Add grated cheese, chopped tomatoes, olives and other topping/additions if desired.
5. Divide the batter between 12 muffin cups. Spread 1 teaspoon of tomato sauce or ketchup on top of each muffin and sprinkle some cheese.
6. Bake for 15-20 minutes, until golden.
7. Allow to cool slightly before serving.

The Streusel Topping is versatile and can be used on a variety of muffins or cakes .
Ingredients:
STREUSEL TOPPING - 1Cup King Arthur Flour, 1 stick melted butter, 1/3 Cup sugar, 3 Tablespoons brown sugar and 1 Teaspoon cinnamon.
BATTER - 2 Cups King Arthur Flour, 3 Tablespoons Baking Powder, 1/2 tsp. salt, 1 tsp. cinnamon, 1/2 tsp. nutmeg, 1/4 tsp. cardamom, 2 eggs, 1/3 cup canola oil, 1 Cup milk, 1 tsp. vanilla, 1/2 Cup sugar, 1/2 Cup brown sugar, and 2 Cups diced apples.
