How To make Vegetarian Mince Pies Ii
1 lb Fresh ripe pears, chopped
1 ea Lemon rind, grated
1 ea Orange rind, grated
1 lb Mixed dried fruit
4 oz Candied peel
4 oz Glace cherries
4 oz Dates, chopped
2 oz Flaked almonds
1 ts Allspice
1/2 ts Nutmeg
1/2 ts Powdered ginger
4 tb Whisky or other liquid
Mix all the ingredients together & let stand for 1 to 2 hours. Store in air-tight jars. Use as regular mincemeat.

RECIPE (makes 12-16 and is easily doubled)
1 jar vegan friendly mince meat (most of it is but check for suet!)
Flaked almonds to top them with
Pastry:
zest of an orange and juice of half
185g plain flour
40g ground almonds
25g icing sugar
100g vegan butter (I used flora salted block but stork baking block/other vegan butter blocks would also work fine)
Sponge topping *NOTE - this makes enough for at least 24 mince pie toppings, put the spare in cupcake cases for mini sponges or double the pastry recipe!*
100g plain flour
35g ground almonds
70g caster sugar
3/4tsp baking powder
1/8tsp bicarbonate of soda
50ml vegetable oil
125ml plant milk (I used soya)
1/2tsp apple cider vinegar
These took around 20 minutes in the oven at 180c whereas in the video I stated 12-14 minutes!

How to make your own Mincemeat - homemade Mince Pie filling for Christmas Desserts
How to make Homemade Traditional Mincemeat, a Recipe for making mincemeat, the perfect filling for Christmas desserts, cakes, muffins and of course mince-pies!
*Timings.*
• Prep Time: 10 mins.
• Cooking Time: 10 mins.
• Total Time: 20 mins.
*Servings.*
• Makes 3 cups or 3 x 370g.
*Ingredients.*
• 1 cup (5oz/150g) Currants.
• 1 cup (5oz/150g) Sultanas.
• 1 cup (5oz/150g Raisins.
• ½ cup (3½oz/100g) Mixed Peel.
• 1½ tsp Mixed Spice/Pumpkin Spice.
• 1 tsp Ground Cinnamon.
• 1 Orange zest and juice.
• 1 Lemon zest and juice.
• 1 cup (175g/6oz) Muscovado/Brown Sugar.
• ¼ cup + 1 tbsp (75g/2½oz) Butter.
• 1 Medium Cooking Apple, finely chopped or grated.
• ¼ cup + 3 tbsp (100ml/3.4 fl oz) Amaretto/Brandy/Rum/Whiskey/Port.
*Method.*
1. Put all the ingredients, except the alcohol, in a medium-sized saucepan.
2. Cook over low heat for 10 mins, stirring occasionally until the sugar and butter have completely dissolved.
3. Remove from the heat and leave to cool to room temperature before stirring in the alcohol.
4. The mincemeat may look loose at this stage, but it will thicken up as it cools.
5. Spoon the warm mincemeat into sterilized jars and seal tightly.
*Storage.*
• Store in a cool dark place and will keep for 12 months.
• Once opened, store in the fridge.

Apricots - 50 gm
Golden Raisins - 50 gm
Black Raisins - 50 gm

Figs - 50 gm
Orange Juice - 400 ml
Zest of two Oranges
Zest of two lemons
Juice of two lemons
Apple - 1
Paneer - 150 gm
Butter - 40 gm
Cinnamon - 1 tsp
Ginger - 1/2 tsp
For The Pastry Crust:
Maida - 100 gm
Butter - 50 gm, chilled and cubed
Ice cold Milk - 2 tbs
Sugar - 1 tsp
Salt - a pinch
