How To make Viennese Cookies
1 c Pecans
1/2 ts Ground cloves
1 c Brown sugar
2 Lemon rind 1"x2"
2 1/2 c Flour
4 Eggs
1 c Sweet chocolate chips
1 tb Salt
1 c Butter; softened
1/2 ts Cinnamon
MAKES 7 DOZEN COOKIES PREHEAT OVEN TO 400 DEGREES CHOP PECANS. ADD FLOUR AND CHIPS. GRATE LEMON INGREDIENTS IN MIXER OR PROCESSOR. POUR INTO FLOUR MIX AND MIX TOGETHER WELL. DROP BY TEASPOONFULS ON UNGREASED BAKING SHEET. BAKE 6 TO 8 MINUTES UNTIL LIGHTLY brOWNED. -----

Thanks for joining me today! Here is the most delicious, melt in your mouth, biscuits you can make for your friends and family - Viennese Finger Biscuits! It's a quick and easy recipe to make. Always make sure you have your ingredients measured out before you start, line your baking trays with baking paper and turn your oven on to 180C. Have some fun and enjoy your efforts!
You will need:
INGREDIENTS:
• 500g butter
• 4 Cups of Flour
• 1 Cup cornflour
• 1 Cup Icing sugar
• 10ml Vanilla Essence
• 125ml Sunflower oil
• 300g Dark Chocolate
METHOD:
1. Pre heat the oven to 180C
2. Line 3 – 4 baking trays with baking paper
3. Cut butter into cubes and beat in mixer until soft
4. Add Icing sugar, oil and vanilla essence and beat for 6 – 8 minutes till light and fluffy
5. Add Flour and cornflour and mix into butter mixture with a wooden spoon. (gently mix it – you can also use your hands for this)
6. Half fill a piping bag with the mixture (I us the Ateco 846 star nozzle) and pipe out the finger biscuits onto your baking tray (approximately 4 – 5cm in length).
7. Bake at 180C for 10 – 13 minutes until lightly brown
8. Melt chocolate in microwave (1 minute on full power, stir then another minute on full power). Mix until all chocolate has melted
9. Dip ends of finger biscuits into chocolate and allow to cool
10. Enjoy!

1 Pound/453g x Fresh strawberries
104g/1/2 Cup x Caster/Fine granulated sugar
2 tbsp x Lemon juice
Biscuit Mix
60g/1 Cup x Icing sugar (Separate bowl)
200g/1 2/3 Cup x Plain/All purpose flour
2 Pinches x Natural sea salt
1/2 tsp x Baking powder
5g/2 tsp x Corn flour/Starch
200g/7/8 Cup x Soft unsalted butter
Butter Cream
155g/3/4 Cup x Soft unsalted butter
1 tsp x Vanilla extract
175g/7/8 Cup x Caster/Fine granulated sugar
Chocolate
150g/1 cup x Milk or dark high quality chocolate
Temperature of the oven - 180c/350f
Cooking time - 10 - 12 minutes till golden

Viennese Biscuit Whirls Recipe | Good Housekeeping UK

Ingredients:
175g (6oz) unsalted butter, softened
40g (1½oz) icing sugar
175g (6oz) plain flour
40g (1½oz) cornflour
1tsp vanilla extract
1. Into a mixing bowl, add butter, icing sugar, plain flour, cornflour and vanilla extract. Whisk until smooth. Chill mixture for 15min.
2. Prepare a piping bag with a large star nozzle and put in a jug to hold steady. Spoon biscuit mix into piping bag and twist top to secure bag and push mixture to bottom.
3. Line baking sheet with baking parchment. Make rounds by piping in a spiral shape, from centre outwards, to about 6.5cm (2½in) in diameter. Or make fingers by piping in zigzags, about 10cm (4in) in length.
4. Bake at 180°C (160°C fan) mark 4 for 12-15min until biscuits look pale golden and feel firm. Leave to cool completely on tray.

Method:
1. Preheat the oven to 350 F
2. Put the butter and sugar, vanilla into the bowl of a freestanding mixer with 3 speed, then beat until light.
3. Scrape down and add in ½ the flour and mix for a further 5 mins until light
4. Scrape down and add the rest of the flour and mix for a further 5 mins until light.
5. You need a Pipe bag and a star tube
6. Spoon the mix into a piping bag fitted with a medium star tube, and pipe out 4 in long fingers onto the prepared baking tray.
7. Bake on the middle shelf of the preheated oven for about 10-15 minutes until they are a pale golden colour.
8. Remove from the oven and cool on the baking tray for 5 minutes.
9. Move to a wire rack until completely cold
Chocolate fudge Recipe : 368g Bakers Fondant, 80g Dark Chocolate Drops
10. Put your Chocolate fudge into a heatproof bowl and melt in a microwave on a low power
11. Spread fudge on one ½ and then put the other ½ on top, let it set for 5 mins
12. Put the chopped milk chocolate into a heatproof bowl and melt either in the microwave on a low setting or over a pan of barely simmering water (bain-marie). Remove from the heat and stir until smooth.
13. Dip one 1/2 of the biscuit into the chocolate and leave to set on baking parchment. Repeat for all of the biscuits.
14. If you like you can sprinkle a little chopped pistachios on top of the chocolate or 100’s & 1000’s.
