Easy Gluten-Free Chocolate Cake Made with Applesauce
This gluten-free chocolate cake is a rich, moist and decadent ... and it's my go-to dessert for potlucks and events. Everyone loves this cake... and I love that it comes together in minutes and bakes up in 35 minutes with no fuss. Plenty of applesauce keeps is delicious and offers a better-for-you dessert option.
Ingredients:
1/2 cup butter 1 stick
1 1/2 cups sugar
2 large eggs
2 1/2 cups unsweetened applesauce
1 tsp vanilla
2 cups Bob's Red Mill 1 to 1 Gluten-Free Flour Blend 280 grams
2 heaping tbsps cocoa powder
1 1/2 tsp baking soda
1/2 tsp cinnamon
1/2 tsp salt
1/2 cup brown sugar (for topping)
1 cup chocolate chips (for topping)

I love fall flavors and this cake encapsulates fall in the most perfect way. Warm, soft, and spicy all wrapped into a beautiful cake ready to share with family and friends. Plus, it is gluten free! and I have an amazing hack for gluten free baking.
Heres the recipe:
1 1/4c King Arthur's Gluten Free Baking Blend Flour
1/2c Oat Flour
1/2c Flaxseed Ground
1/2c Shortening
2 Eggs, beaten
1c Unsweetened Applesauce
1 tsp Salt
1 Tsp Cinnamon
1/2 tsp Nutmeg
1/2 tsp Clove
1/2 tsp Baking Soda
1 tsp Baking Powder
1/4c Cottage Cheese
1/4c Buttermilk
1 1/4 c Coconut Sugar
1. Blend, shortening and coconut sugar well. Add eggs one at a time. Add applesauce.
2. Use Hack, Combine cottage cheese and buttermilk together, then add to the wet ingredients.
3. Sift flour, spices, baking soda and powder together. Mix in oat flour and flaxseed.
4. Combine dry ingredients into the wet ingredients a little at a time until fully incorporated.
5. Bake in a greased cake pan, at 350 degrees for around 30 minutes.
Spiced Butter Cream:
2 sticks softened butter
1 tsp Cinnamon
1/2c - 3/4c Coconut Sugar or Swerve powdered sugar pending on how sweet you want it.
1. Blend Butter until fluffy. Add sugar and spice, blend until light and fluffy.
2. Once Cake is cooled, top with buttercream and ENJOY!!!

Dreamy 1-BOWL Applesauce Bread! Vegan Gluten-Free Oil-Free Egg-Free Dairy-Free WFPB
You will LOVE this applesauce bread recipe!!! It's tasty, healthy and an easy recipe to make. It is also vegan, gluten free, refined sugar free, dairy free, oil free, egg free, (WFPB) whole food plant based, and guilt free.
You just need 2 cups gluten free flour, 1/2 cup old fashioned oats, 1/4 cup maple syrup, 1 3/4 cup apple sauce, teaspoon of vanilla extract, 2 teaspoons of baking soda, 1/2 teaspoon baking powder, 2 teaspoons pumpkin pie spice, 1/4 cup almond milk and 1/2 cup walnuts.
Mix it all together (except the walnuts) and pour into bread pan. Add walnuts on top and bake your applesauce bread at 350 for about 55 minutes. Let cool and then enjoy your amazing gluten free, vegan applesauce bread recipe for a healthy vegan breakfast, dessert or snack!! I hope you enjoy this applesauce bread many times in the near future.
