8 Pounds white beans 2 ham hocks 4 large onions -- diced 1 quart chili sauce 1 1/2 bottles catsup 1 pound brown sugar (or less) 4 teaspoons prepared mustard salt and pepper to taste water Soak the beans overnight. Cook beans in water with ham hocks and onions until nearly done. Remove the ham hocks and take meat off bones. Put meat back in the beans and add the remaining ingredients. Bottle and pressure for 1 hour at 10 pounds pressure. Makes about 30 pints. "When I made mine, I used a medium size shoulder ham roast instead of the ham hocks and added more mustard."

Today I'm going to show you how I make WHITE BEANS Cooked With BACON. Grab your ingredients and cook along with me. RECIPE BELOW

Ingredients you'll need: • 1 - 16oz Bag of Dried Great Northern Beans - Any Brand Will Do • 4 -7 Slices of Bacon ( I USED 7 SLICES) KEEP IN MIND THAT YOU WILL NOT NEED TO ADD AS MUCH SALT WHEN COOKING WITH BACON • 1 - Tablespoon Pepper • 1-2 - Teaspoons Salt
Instructions: • Pour your 16oz bag of great northern beans in a colander • Go through your beans Dry Picking to remove any rocks, deformed or shriveled beans that were missed during the packaging process • Once you have dry picked your beans, you will want to rinse them. While your rinsing the beans this is your chance to go through them once more to see if you missed any of the bad beans • Pour cleaned and picked beans into a pot • Fill the pot with water - Careful not to add too much water so when your beans begin to boil, the water will not bubble over the pot • If there are any floating beans in your pot, remove them. These beans are the remainder of the bad ones that weren't taken out in the beginning • Add your salt, pepper & bacon • Turn your stove eye on high until the water in the pot begins to boil • Once the water is boiling, turn down the temperature to a medium/low • Add a lid to the pot once the water is boiling at the desired temperature • After one hour, check your beans to see if any water is needed. If not, come back every 30 - 60 minutes to check - You will more than likely need to add water at some point during the cooking process. Stirring beans frequently. • Add water if needed - Not too much as there is a point in the cooking process when the beans no longer absorbs the water - I like my beans with some soup gravy for cornbread dipping • Continue to check on your beans every 30 minutes until the desired consistency is achieved • Total cook time can range from 3 - 4 hours depending on your preference of bean constancy • Serve when ready • Refrigerate leftovers
