How To make White Chocolate Raspberry Cake
1/4 lb White chocolate
6 tb Unsalted butter
6 Eggs
2 tb Sugar
1/4 c All-purpose flour
2 pt Raspberries
PREHEAT OVEN TO 325F. Melt the chocolate in the top of a double boiler. Cut the butter into tablespoon pieces, place in the bowl of a mixer and mix until smooth. Slowly add the melted chocolate until incorporated. Add the eggs, one at a time, as each one is absorbed. Add the sugar, then the flour. Lightly grease a 9-by-11-inch baking pan. Pour in the batter and smooth the top. Place in the oven and bake for 25 to 30 minutes. When the cake is cooked, remove from the oven and let cool before removing from the baking pan. To serve, cut the cake into individual portions and top with fresh raspberries. Accompany with whipped cream or raspberry sauce, if desired.

Ingredients:
3.6oz (100 g) raspberries
1tsp (5 g) flour
cake batter:
4 eggs
3/4 cup (150 g) granulated sugar
3/4 cup (160 ml) sunflower oil or vegetable oil or olive oil (light)
1/2 cup (120 ml) buttermilk or kefir
20 ml lemon juice, from 1 small lemon
1 1/2 cups (210 g) flour
1 tsp (10 g) baking powder
Cream:
1.7oz (50 g) butter, soft
7.1oz (200 g) cream cheese, room temperature
1.8oz (50 g) powdered sugar
7.1oz (200 g) white chocolate
garnish:
raspberries
Pistachios
cream

Ingredients (US & METRIC):
For the cake:
200g/ 7 oz self raising flour
1 tsp baking powder
200g/ 7 oz caster sugar
Pinch of salt
250g/ 9 oz ricotta
4 large free range eggs
125g/ 1 stick butter, melted
250g/ 9 oz raspberries
200g/ 1 cup white chocolate, roughly chopped
For the topping:
150g/ ¾ cup white chocolate
125ml/ 4 fl oz double cream
½ vanilla pod, split and seeds scraped
125g/ 4 oz creme fraiche
Strawberries, halved, to decorate

Baked at 325 degrees for 1 hour 10 mins. (Time may vary depending on your cake pan and/or oven.)
3 Cups Cake Flour

1 C Milk (Room Temperature)
1 Box 3.3 oz White Chocolate Jello Pudding Mix
1 Cup Frozen Red Raspberries
1/2 Tsp Baking Powder
1/4 Tsp Salt
3 Dropperfuls of Chocolate Oil
1-2 Tsps. Vanilla Extract
2 Tsps. Creme Bouquet
