How To make Whole Wheat Oatmeal Cookies
3/4 c Butter-flavored shortening
3/4 c Brown sugar
1/4 c Molasses
1/4 c Honey
1 Egg
1/3 c Apple juice
1 ts Vanilla
1 c Whole wheat flour
1 ts Cinnamon
1/2 ts Baking soda
1/4 ts Salt
1/8 ts Nutmeg
3 c Quick-cooking oats
3/4 c Raisins
3/4 c Walnuts; chopped
Recipe by: Sue Klapper Preheat oven to 350~. Grease baking sheets with shortening. In large mixer bowl, combine shortening, sugar, molasses, honey, egg, apple juice and vanilla. Beat at medium speed of electric mixer until well-blended. In another bowl, combine flour, cinnamon, baking soda, salt and nutmeg. Mix into creamed mixture at low speed until just blended. Stir in oats, raisins and nuts with spoon. Drop rounded tablespoonfuls of dough 2 inches apart onto baking sheets. Bake 13 to 14 minutes, or until set. Cool 5 minutes on baking sheet. Ingredients:
* 1 1/4 cups Oat flour (150 g)
* 3/4 cup Whole wheat flour (100 g)
* 1/3 cup Sugar (80 g)
* 1 teaspoon baking powder (5 g)
* 1 large egg
* 1/4 cup Melted butter (50 g)
* 2 1/2 tablespoons Maple syrup (40 g)
* 2 1/2 tablespoons Sour cream (40 g)
* 1/4 teaspoon salt
* 1 teaspoon cinnamon (optional, but highly recommend)
Instructions:
1. In a mixing bowl whisk together oat flour, whole wheat flour, baking powder, cinnamon, just to combine.
2. In a separate bowl lightly beat egg and sugar, add maple syrup, melted butter, sour cream, salt and mix to combine.
3. Add the flour mixture into the wet ingredients , stir with spatula.
4. Scoop 2 tablespoons of the batter and roll balls (~12 balls)
5. Space balls 2 inches apart on prepared baking sheet. Flatten halfway with your fingertips.
6. Bake in a preheated 350F (175 C) oven for 20 to 25 minutes until the edges are lightly golden brown. Do not over-dry them!
7. Remove from the oven and cool completely on a rack.
