It's that time of year! Every Halloween we had Chili growing up and we continue the tradition with my little family. This recipe is an AWARD WINNING recipe made by the one and only Walt Disney himself!
You can also make this chili on the stove top or slow cooker - and maybe we are biased, but we think the Instant Pot it is the BEST!
If you are new to the Instant Pot, this is the PERFECT beginner recipe for you. You can just dump everything and GO! These are my favorite kinds of recipes!

Walt Disney's Copy Cat Chili Recipe
I CUT THE RECIPE IN HALF! This is the original recipe!
Ingredients
2 tablespoons extra virgin olive oil
1 large green bell pepper diced
1 large white onion coarsely diced
2 tablespoons minced garlic
2 large jalapeños minced
2 15 ounce cans pinto beans
2 15 ounce cans diced tomatoes in juice
1 cup parsley chopped
2 cups water
1 1/2 cups reduced sodium chicken broth
1 stick salted butter
2 1/2 pounds ground beef
1 pound ground sausage I used Jimmy Dean in roll
1 tablespoon kosher salt
2 teaspoons freshly cracked black pepper
1/3 cup chili powder
2 tablespoons ground cumin
Garnish
1 cup shredded cheddar cheese
1/2 cup chopped fresh tomatoes
1/4 cup chopped green onions chives or parsley (I had parsley on hand so used that)
Instructions
Heat oil in large soup pot over medium heat. When hot, saute onions, green bell pepper, and minced jalapeno. Cook for about 10 minutes until tender. Add pinto beans, diced tomatoes, 3/4 cup parsley, water and broth. Reduce heat to low to simmer.
In a separate medium pot, melt butter over medium heat. Add ground beef and sausage. Season with salt and pepper, cooking until browned. Drain most of fat, leaving a little still in meat. Season with chili powder and cumin, stirring to combine.
Transfer cooked beef/sausage to vegetable pot, carefully stirring. Cover and simmer for 30 minutes to 1 hour.
Place chili into soup bowls and top with shredded cheddar cheese, fresh diced tomatoes and sour cream drizzles.
TRICKS TO MAKING INSTANT POT CHILI
If this is your first time making chili, or any soup for that matter in the Instant Pot, we have a few suggestions to make sure it turns out perfect every single time.
Brown and Flavor Ground Meats
Cooking the meat before throwing it in the Instant Pot may not be the case for all soups, but we’d recommend browning ground beef, turkey, or sausage before tossing it in the Instant Pot.
This not only helps with the flavor of your soup, but it also prevents large chunks of meat from cooking together. You’ll have perfectly ground beef in your chili if you take this step.
We love to brown our meat with onions in this recipe, giving the meat great flavor. Other soups may have you throw in some garlic, spices, or even a packet of taco seasoning.
You can also pre cook your ground beef in the Instant Pot. Watch I how cook 3 pounds of frozen meat here:
2. Drain and Rinse Your Beans
Avoiding this step could be detrimental to your chili! We’ve listed which cans need to be drained in this recipe, but you can almost always assume that beans in any recipe will be drained and oftentimes rinsed (especially black beans!).
Without draining your beans, your chili will be turn out runny and a little too “soupy” to be considered chili. We know it’s an extra step, but it’s definitely worth it.
3. Add Enough Liquids
While draining some ingredients is important, it’s also important to make sure you have enough liquid in your Instant Pot so it will pressurize.
The best part about this Instant Pot Chili is the delicious flavors that combine together.
Don't have an Instant Pot? No problem! You can make this Chili on the stove top!
HOW TO MAKE INSTANT POT CHILI INTO A FREEZER MEAL
We get asked how to turn Chili into a freezer meal A LOT. Here’s how you do it:
Brown your meat and onions according to directions in original recipe.
In a large Zip-Loc or freezer safe bag, combine remaining ingredients.
Place laying flat in your freezer to save the most space. We like to label our bags before hand so we know what’s in the bag. If you’re anything like us, in a months time you’ll forget what freezer meals you’ve stuck in the freezer.
Place freezer bag in the refrigerator the night before cooking to allow it to partially thaw.
Cook according to the directions in original recipe. It’s that easy!

EASY SUNDAY MEAL PREP (WW) | GROUND TURKEY CHILI & CORN MUFFINS | CHICKEN, QUINOA, & BELL PEPPERS!!
Hi everyone ???????????????? and thanks for watching my WW Meal Prep video. These meal preps are the food that I eat for weight loss each week. So far I have lost a total of 72 pounds following WW.
Since Thanksgiving was this week we had a pretty easy prep to do. We made a low point Ground Turkey Chili with Corn Muffins for one of our meals. And we made Chicken, Quinoa, and Bell Peppers for our other meal, which has been one of our favorite meals for a long time.
WW Crockpot Chili:
I did make some modifications to this recipe I am going to list the ingredients I used below:
1 pounds 99% Lean ground turkey
28 oz can Hunts Crushed Tomatoes
1 can of Fire Roasted Rotel
1 can of Original Rotel
1 can of black beans
1 can of Bush's Mild Chili Beans
1 can of Brooks Chili Hot Beans
Salt & Pepper to taste
3 Tbsp Chili Powder
2 Tbsp Ground Cumin

Corn Muffins - 3 Points Each
1.5 cups of self rising corn meal
21 ozs of cream style corn
3 tbsp egg whites
Mix well and divide into muffin tin.
Bake for 15 - 17 minutes at 400 degrees.
Makes 12 servings.

Chicken:
2 lbs of chicken breast diced into small bite size pieces
salt
pepper
garlic powder
chili powder
ground cumin
Weber's Garlic and Herb Seasoning
Season chicken well to your liking, saute in skillet until done and set aside.
Bell Peppers:
4 -5 Bell Peppers (any color)
Salt & Pepper
Slice bell peppers into strips, season with salt & pepper. Saute in pan until softened.
Quinoa:
1 cup dry Ancient Harvest Quinoa (this made four 1 cup servings)
2 cups of liquid (I used 1 can of chicken broth and the rest water)
Put in rice cooker until done.

This is how I make a giant batch of homemade chili! It is super quick and easy!! Also, makes the BEST leftovers!
This batch made 8 servings, each only 1 SP!!
INGREDIENTS:
-99% ff ground turkey
-diced onion
-diced bell pepper
-diced jalapeno
-fired roasted tomatoes
-tomato sauce
-diced tomatoes
-pinto beans
-black beans
-kidney beans
-chili seasoning packet x2
-chicken stock
-additional spices: salt, pepper, chili powder, garlic salt, cumin

This chili recipe is only one smart point, as made in the video. You can easily get it to zero SP on the weight watchers freestyle plan. Either way, the chili can be a healthy part of your diet and weight loss plans.
Ingredients:
1 pound 99% lean ground turkey
1 Cup Sweet kernel corn
1 Packet Hidden Valley Buttermilk Recipe ranch mix
1 Tbs Chili Powder
1 Cup 0 point Chicken broth
2 Cans Red Gold tomato sauce
1 Can diced petite tomatoes with chilies
2 Cans Ro-Tel Lime and Cilantro
1 Oz Tones Taco seasoning mix
1 Can Bush's chili beans with mild chili sauce
1 Can Fat-free refried beans
1 Can Bush's low sodium pinto beans
1 Can Bush's low sodium black beans
1 Onion (Diced)
Start with large pot on medium heat
Spray a little cooking spray in pan and add onions
Cook onions, stirring occasionally, until soft
Add ground turkey to brown
As turkey browns, crumble it so you don't end up with huge chunks in the finished chili. (See the end of this post for my recommended meat chopper.)
While turkey browns, open all the cans.
After turkey has browned a little, dump in all of the remaining ingredients.
Stir well.
Bring to a boil and turn burner down to low.
Cover and cook for about three hours, stiring every 1/2 hour to keep beans from burning on the buttom.
