How to make The BEST Baked Ziti!
About 6 months ago, I binge watched the greatest television show of all time, The Sopranos. During this time, I rekindled my love for a good occasional Cigar, (Thanks a lot Tony) and also went on an Italian Food bender. This Baked Ziti recipe stood out among the many other dishes that I created, and I hope that you enjoy it. Now get in the kitchen and make Carmela Soprano proud!

Ingredients: (Grocery List)
1 lb Rigatoni Noodles (or traditional ziti noodles)
1 Onion
3 garlic cloves
2 bay leaves
1 tbs olive oil
16oz diced tomatoes
34 oz tomato sauce
1/2 cup dry red wine
3 tbs tomato paste
Salt, pepper, sugar - to taste
Fresh basil, rosemary, oregano, thyme. Diced or dried
1/2 lb Ground Beef
1/2 lb Hot Italian sausage
1/2 lb mild Italian sausage
6 oz Ricotta cheese
1/2 cup sour cream
3/4 cup cubed mozzarella
Fresh Mozzarella for topping
1 cup parmesan cheese
Directions:
For the Sauce:
Finely chop onion and sauce in olive oil, over medium heat until they become soft. Mince Garlic along with fresh herbs and add to onion mixture. Cook until garlic becomes fragrant. Remove onion and garlic and cook ground beef and sausage until no longer pink. Season ground beef with salt, pepper, garlic, and Italian seasoning. Once meat is cooked, add in onion and garlic and then Add in tomato paste and incorporate. (2-3 minutes) - Next, add in red wine and bring to a boil. Reduce to a simmer and reduce liquid by about half. Add in your 2 jars of sauce and mix together. Or if you are making your own sauce, add in diced tomatoes and tomato sauce. Taste as you go and adjust seasoning to your preference. Sugar can be used to balance any acidity from the tomato sauces. In a separate pan, cook ground beef and sausage until no longer pink. Season ground beef with salt, pepper, garlic, and Italian seasoning. Add meat to your sauce and incorporate. Add in 2 bay leaves and simmer sauce on low for up to 1 hour, stirring occasionally.
Cook noodles to package instructions. (Heavily salt pasta water) Strain and set aside.
In a separate bowl, mix together Ricotta Cheese, Sour Cream, and 1/2 of your shredded cheese. Season with salt and pepper. (Taste as you go) Next, mix your sauce with your noodles, until they are sauced to your preference. Add in cubed mozzarella cheese.
Add a little sauce to the bottom of your baking dish and begin to add a layer of pasta. Then add a layer of your cheese mixture and repeat until the dish is full. Top the dish with shredded parmesan and fresh mozzarella and bake at 375 for about 30 minutes or until browned and bubbling. Garnish with some chopped basil.
