Fruit Blend Recipe
You may allow your fruits to sit in your refrigerator overnight up to 1 year before baking into your cake. I allowed mine to soak for 3 weeks this time.
1/2 cup raisins
1/2 cup currants
1/2 cup prunes
1 cup glazed cherries
3 oz Wray & Nephew rum
8 oz Red Label Wine
Cake Recipe
2 cups unsalted butter
2 cups brown sugar
1 tbs orange zest
2 tbs lime juice
8 eggs
2 1/2 cups all-purpose flour
1/2 tsp salt
1 tsp ground clove
1 tbs ground cinnamon
1 tbs ground nutmeg
1 1/2 tsp baking powder
1 tbs pure vanilla extract
3 cups fruit blend
5-6 tbs browning
1/4 cup red label wine
You may bake this recipe in a 10” x 3” round baking pan or a 9” bundt pan.
Bake at 350 degrees for 1.5 - 2 hours.

My Christmas is absolutely incomplete if I don't make lots of gorgeous desserts in my kitchen and enjoy them with friends and family! This Chocolate Fruit and Nut Cake is a chocolatey rendition of the Eggless Plum Cake I made last year that you guys loved so much. And I hope you give this recipe equal amounts of love and recreate it in your kitchens this Christmas!

For the cake
1 + ¼ (150g) cup maida
¼ cup (25g) cocoa powder
1 teaspoon (5g) baking powder
½ teaspoon (2.5g) baking soda
¼ teaspoon (2g) cinnamon
⅛ teaspoon (1g) ginger
⅛ teaspoon (1g) clove
⅛ teaspoon (1g) grated nutmeg
1 teaspoon (5g) orange zest
½ cup (110ml) vegetable oil
¾ cup (150g) brown sugar
4 eggs
1 teaspoon (5g) vanilla extract
For soak
⅓ cup (80ml) orange juice
⅓ cup (75ml) water
1 tablespoon (7ml) lemon juice
¼ cup (40g) raisins
¼ cup (48g) dried apricots
⅛ cup (20g) dried cranberries
1 cup (240g) tutti frutti
⅛ cup (21g) prunes
For folding
¼ cup (35g) almonds
¼ cup (35g) cashews
¼ cup (28g) walnuts

How to Make Perfect Rum Baba | Boozy Yeast Cake Recipe
Rum baba is a dessert of rum syrup soaked bread/cake often served with whipped cream and berries. There are many recipes out there and this is by no means an authentic one, but it stays true to the principle - an enriched bread soaked in sweet syrup. It is rich, moist, flavourful, and irresistible.
You can adjust this recipe to your taste. Add, remove, or modify ingredients in the syrup. You can use all orange juice instead of a mix of orange juice and water. You can add the zest of the oranges to the syrup to make it more intense. Use more rum if you want it boozier. Use different flavourings in the dough, or even use a different dough.
The dough is pretty much a same day brioche, so be ready to knead for a while. Although, it does not take nearly as long as my other hand mixed brioche recipe.

Slutty Wendys Rum Cake: The Most Decadent and Boozy Cake!
Spookie is my brother’s godmother, and has been a part of my life ever since I was born. A traveller, adventurer, and always filled with stories and a wink, I remember her teaching me how to cut cards during gin rummy and calling me a “Cheatin’ Charlie” if I ever won a board game. Her humor and wit are only out-classed by her heart, and her deep abiding passion for all creatures, including two adorable rescue dogs named Minky and Scallywag, has always had a great effect on me.
Spookie didn’t bake or cook, but she did have one go-to recipe: her rum cake. This was the most exotic, luscious, delicious cake that ever captured an eight year-old’s mind. She visited my family for a weekend while I was recipe testing, so it was the perfect opportunity to pick her brain for details. When I asked her how she came across the recipe, her answer, like almost everything about Spookie, was unexpected. “Well, when I was a black jack dealer in Vegas, I had this room mate named Wendy. She’d trot this rum cake out all the time, I’m pretty sure it’s the only thing she could make. Then she hooked up with my boyfriend, so I started referring to it as ‘Slutty Wendy’s Rum Cake.’”
Here I thought it was an old Irish or Aussie recipe passed down over the generations.
Using box cake mix, pudding straight from the pack, and a few other odds and ends, this cake is sticky, sweet, and completely delicious.
