Mexican Chicken Casserole Ingredients:
2 lbs (3 medium or 4 small) chicken breasts, halved
Salt and Pepper, to taste
8 oz (3 cups) shredded Mexican cheese, divided
1 cup sour cream
14 oz diced green chilis (two 7 oz cans) with their juice

MEXICAN CHICKEN STREET TACOS
Hello and welcome to my channel, The Lazy Spork! This is my recipe for authentic mexican street tacos, The one thing i enjoy about this recipe and making these tacos is you can make it in double, or more, batches and it microwaves well for lunch the next day. At least the tortillas and chicken. Hope you enjoy my video and if you dont plz comment why so i can improve, really new to making vidoes. I will have the main recipe list below with a shortcut version.
mexican chicken street tacos recipe list:
The Chicken:
2 lbs boneless chicken thighs
4 cups water
2 bay leaves
1 tsp oregano
1/2 tsp whole peppercorns
1/2 a yellow onion
Chile Sauce:
4 guajillos
4 cali chiles
1 tsp oregano
1/2 tsp cumin
1/2 tsp whole peppercorns
2-3 cloves of garlic
1/2 a yellow onion
1 cup chicken broth
The Topping:
1/2 a white onion
1/2 cup cilantro
The Salsa:
2 tbsp reserved chile sauce
2 roma tomatoes
1/2 jalapeno
1 clove garlic
Mexican Chicken Street tacos recipe: Easy Mode
2 lbs boneless chicken thighs
boiling in 4 cups of water for 15 min, cool and chop down to 1/4 pieces
1/4 cup of chile powder
1/2 yellow onion
1 tsp oregano
1/2 tsp cumin
1/2 black pepper
1 cup water or broth
Add all in ingredients into a blender and blend until smooth. Fry chicken in a pan on med high with oil until browned and add Chile sauce. Drop heat down to med/med low and add some water/broth, 1/4 - 1/3 cup. Simmer chicken for 15-20 min until sauce is evaporated and chicken starts to fry. Heat tortillas and serve with cilantro & white onion, lime, salsa and hot sauce.

Ingredients For fajita seasoning mix:
Chilli powder : 1 teaspoon
Paprika powder or chilli flakes : 1 teaspoon
Garlic Powder : 1 and 1/2 teaspoons
Cumin powder : 1and 1/2 teaspoons
Salt : 1 and 1/2 teaspoons or as per taste
Dried Oregano : 1 and 1/2 teaspoons
Black Pepper Powder : 1 teaspoon
Ingredients for Chicken marinade:
Chicken breast : 2
Olive Oil : 1 table spoon
Lime Juice : 2 tea spoons
fajita seasoning mix : 3 tea spoons
yellow Bell pepper : 1 sliced
Red Bell Pepper : 1 sliced
Green Bell Pepper : 1 sliced
Onion : 1 large sized sliced
oil : 2 table spoons
Chicken Tinga Recipe (Spicy Chipotle Shredded Chicken) - Perfect for Tacos!
This Chicken Tinga recipe is juicy shredded chicken slowly simmered in a zesty tomato-chipotle sauce. Serve it as tacos, tostadas, burritos, or tortas. Very easy to prepare.
It also freezes wonderfully, so make extra and keep in the freezer for quick and easy lunch or dinner meals throughout the week.

Chicken Tinga Recipe (Chipotle Shredded Chicken) - How to Make Chicken Tinga
Ingredients
1 tablespoon olive oil
1 medium onion chopped
1 jalapeno pepper chopped
2 cloves garlic chopped
2 pounds skinless chicken thighs chicken breast is good, too
16 ounce can tomato sauce
7 ounce can chipotles in adobo sauce
1 tablespoon chili powder
1 teaspoon Mexican oregano
½ teaspoon cumin
Salt and pepper to taste
Cooking Directions
Heat the oil in a large pan to medium heat and add the onions and jalapeno peppers. Cook them down about 5 minutes.
Add the garlic and cook another 30 seconds to 1 minute, until the garlic becomes fragrant.
Season the chicken thighs with salt and pepper, then add them to the pan. Give them a nice sear on each side, a couple minute each.
Process the tomato sauce and chipotles in adobo sauce in a food processor, then pour the mixture into the pan, covering the chicken.
Stir in the seasonings.
Bring to a quick boil, then reduce the heat and simmer for 30 minutes, or until the chicken is cooked through and easily pulls apart.
Remove the chicken and shred it with a couple of forks.
Return the chicken to the pan and simmer in the sauce another 5 minutes.
Serve with tortillas or on torta buns and all your favorite fixings.

Ingredients
1/2 cup onion chopped
1 no. red pepper chopped
1 no. green pepper chopped
2 tbsp olive oil
2 cloves garlic smashed.
1 tsp paprika powder
1 tbsp tsp cumin powder
500 gms chicken mince
12 corn taco shells
Salsa
1 large tomato
1 medium onion
2 tbsp fresh parsely
2-3 green chillies
1 tsp tabassco
1/2 lemon (juice)
Salt
Guacamole
1 ripe avocados
½ lime
Salt as required
2 tbsp fresh cream
Method
- Chop the veggies
- In a pan heat some olive oil and then add the veggies and saute them
- Add minced chicken and cook it on a high flame
- Add salt, paprika and roasted cumin powder
- Roughly chop the garlic and add it into the pan and stir it properly
- Once the chicken is cooked properly turn off the flame and keep it aside to cool
- Chop onion,green chillies and tomato and mix them together
- Also chop some parsley, salt and juice of lemon mix it and add tabasco
- In a bowl add the avocado, salt, cream and juice of lemon
- Whisk it all together
- Shred the lettuce leaves
- In a taco shell put lettuce leaves, chicken filling, salsa and guacamole
- Chicken Mexican Taco is ready to be served.
