This easy zucchini bread recipe is always a popular family favorite. The trick is to keep the bread moist with the right blend of ingredients. Zucchini bread makes the perfect breakfast or snack for anytime of the day.

Ingredients:
1 3/4 cups grated zucchini (not drained)
1 cup sugar
1/4 cup brown sugar (packed)
3/4 cup unsweetened applesauce
1/3 cup canola oil
2 eggs
2 tsp vanilla extract
1 1/2 cups all-purpose flour
1/2 tsp baking powder
pinch of salt
1 tsp cinnamon
1 tbsp orange zest
1/4 cup walnuts (chopped)
Instructions:
1. Preheat your oven to 350F and prepare a basic loaf pan (9x5 inch) with your preferred cooking spray or grease with butter.
2. While the oven preheats, combine the zucchini, sugar, brown sugar, applesauce, oil, eggs, and vanilla until thoroughly mixed. Once the wet ingredients are combined, add the flour, baking powder, baking soda, salt and cinnamon. Stir until just combined. Pour the batter into the prepared loaf pan.
3. Bake the bread for 45-50 minutes or until a skewer inserted into the center of the loaf comes out with a few moist crumbs. Cool the pan for about 15 minutes before placing on a wire rack to cool completely. Bread is best served after being chilled in the fridge.

Zucchini Bread Recipe
Preheat oven to 350 Fahrenheit.
Ingredients:
3 cups all purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon salt
2 teaspoons ground cinnamon
3 cups shredded zucchini
3 eggs
1 1/2 cups granulated sugar
1 cup vegetable oil
2 teaspoons vanilla extract
Bake for 30 minutes or until toothpick comes out clean. Enjoy!

The Recipe:
Ingredients
3 cups - All-Purpose Flour
1 tsp - Baking Powder
1 tsp - Baking Soda
1.5 tsp - Kosher Salt
3 tsp - Cinnamon
1 tsp - All Spice
1 tsp - Ground Chinese Ginger
1 cup - Vegetable Oil
1 cup - Light Brown Sugar (Packed Tight)
1 cup - White Sugar
3 eggs - Farm Fresh
3 tsp - Vanilla Extract
3 cups - Fresh Zucchini (Grated)
Favorite nuts (optional) such as walnuts.
Instructions
Preheat oven to 325 degree F.
Grease two bread pans liberally with butter and flour accordingly.
In a medium bowl, combine flour, baking powder, baking soda, kosher salt, and all seasonings. Whisk as needed and put aside for further instructions.
In a large bowl scramble eggs until uniform. Add oil, sugars, and vanilla. Mix with a mixer until smooth and creamy.
Add 1/2 of the dry mix from the first bowl and mix until evenly moist. Add remaining 1/2 of dry mix and blend until evenly moist.
Mix in by hand fresh zucchini until evenly distributed. Mixture will get more liquid in texture.
Throw away the optional nuts if you have them. They never really were optional. Why would you want something crunchy in bread?
Pour in to the prepared bread pans.
Bake for 50 minutes. Tip: Baking time will vary. Until you know your oven begin checking at 45 minutes, and in 5 minute intervals. Remove when bread is slightly moist in the center. Overcooking by 3 minutes will result in less than perfect bread. Don't do that.
Remove from oven. Cool 10 minutes before removing from pan.
Tip: For maximum moistness use fresh zucchini that are small in size. For extra moist, use 4 cups of shredded zucchini, which will require 5 to 10 minutes additional cooking time. Use more care when removing from pan, but worth the hassle. The bread will be so moist you most likely will not be able to pick it up without it falling apart.
