INGREDIENT LIST
▢1 ½ cups zucchini grated
▢2 cups gluten-free flour blend
▢¼ teaspoon xanthan gum omit if your flour blend contains
▢1 tablespoon granulated sugar
▢4 teaspoons baking powder
▢½ teaspoons baking soda
▢½ teaspoon kosher salt
▢½ teaspoon garlic powder
▢1 cup milk
▢2 eggs beaten
▢3 tablespoons butter melted
▢1 ½ cups grated sharp cheddar
▢4 green onions whites and light green parts, chopped

Hello, everyone - Kim here at Olive City Homestead, and today's video is all about using up your extra zucchini and baking with your own veggies and herbs!
It's mid-September, and even though I'm already enjoying my FALL Garden, northern California is still sunny and hot, and my zucchini is growing stronger than ever, with no signs of stopping before December! So.... what can I DO with all this Zucchini???
That's actually a question many gardeners are asking right now, including Angie from Doing Things Different. Angie has so much zucchini growing she decided to start the #ZukeChallenge, asking people to share videos of their favorite SAVORY Zucchini recipes since (like most of us!) she already has plenty of sweet recipes.

Here are the recipes! I hope you'll try them! I had a lot of fun making them and learning how to save a bread that doesn't quite bake all the way through the middle. (...and share why that might happen!) Also, I think homemade savory croutons could be my new favorite snack!
***Kim's Basic Savory Zucchini Bread***
2 1/2 Cups Flour
2 teaspoons Baking Soda
1/2 teaspoon Salt
1 1/2 - 2 Cups Shredded Zucchini
1/2 Cup Chopped Basil ( I used 1/3 C Basil and added several large Green Sorrel leaves.)
1/3 Cup Chopped Green Onions (I used the greens from Egyptian Walking Onions.)
1 Tablespoon Fresh Winter Savory (or other herbs... parsley, sage, rosemary, & thyme
1 Tablespoon Fresh or Dried Oregano
1 Tablespoon Vinegar (Apple Cider or White)
1/3 Cup Olive Oil (or Melted Butter)
1/2 Cup Water
1 Egg (optional, but I used one in these loaves)
*Optional Add-Ins -- Be Very Careful to NOT Add Too Much or a Liquid Element!*
Adding any of these items might increase the bake time and/or prevent the bread from baking completely. I don't want to discourage you from experimenting though! You might come up with something amazing!!! ????
Shredded Carrots
Diced Peppers
Diced Tomatoes
Sliced Olives
Cheese. Shredded or Cubed
DIRECTIONS --
Mix the three dry ingredients in large bowl and set aside. (I made my second loaf with a Gluten-Free flour blend, and it worked great!) Shred zucchini and chop basil and green onions to desired size. Mix veggies and herbs together and stir in vinegar, oil, and water. Add this mixture to dry ingredients and mix well with wooden spoon. Pour in greased loaf pan and bake at 350 degrees Fahrenheit for 70- 85 minutes.
***SAVORY ZUCCHINI CROUTONS***
Savory Zucchini Bread, cut in relatively uniform cubes, 1/2 - 3/4 in size
(uniformity helps them bake evenly)
Olive Oil or Melted Butter
Seasonings (salt, pepper, Italian, chili powder, garlic powder, etc.)
DIRECTIONS --
After dicing the bread cubes, toss, dip, or brush them with olive oil or melted butter in the amount you prefer. Place the cubes on a stoneware cookie sheet. (If you use another type of pan, line it with parchment paper.) Bake at 375 degrees Fahrenheit for 15 - 30 minutes, until croutons reach your personal desired level of chewy, crispy, or crunchy texture. If browning too much, lower temperature to cook more slowly.
I added no seasonings at all to my croutons because the savory zucchini bread was already full of flavor, and they turned out great! ????

Cheesy Zucchini Bread
If the thought of making bread at home has ever intimidated you, this recipe is for you!
A tender bread dough specked with hearty shredded zucchini, cheese, and green onions. Cheesy, moist, and oh so delicious! This is a great one if you're trying to get kids (or adults haha) to eat their veggies, because they won't have a clue that there's zucchini in it.
No fancy equipment needed for this one, just a bowl and a spoon. I can't wait for you all to try this one. If you do, don't forget to tag me on social media as I'd love to repost :)

RECIPE
INGREDIENTS
1 cup, grated Zucchini
1.5 cups, All Purpose Flour
1 tsp, Salt
1/2 tsp, coarsely ground Black Pepper
1 tbsp, Baking Powder
2 large Eggs
1/2 cup, Milk
1/4 cup, Olive Oil
1 cup, grated Sharp Cheddar
1/4 cup, chopped Green Onions
METHOD
Preheat oven to 350 degrees and grease a loaf tin with butter.
Place grated zucchini in a colander, and grab a fistful and squeeze out as much of the juice as possible. Repeat with remaining grated zucchini.
In a bowl whisk together flour, salt, black pepper, and baking soda until well mixed.
In a large bowl whisk together eggs, milk, and olive oil. Stir in grated zucchini, then add in dry ingredients. Mix until no white streaks of flour can be seen.
Then add cheese, and green onions, and fold to evenly distribute.
Transfer batter to loaf tin, smooth top, and bake for 50 minutes. Invert onto a cooling rack and allow to cool for a minimum of 10 minutes. Cut into slices and enjoy! :)
