How To make Jalapeno Drop Biscuits
1 cup flour
1/2 cup yellow cornmeal
2 teaspoons double-acting baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2 tablespoons cold unsalted butter
cut into bits
1 1/2 cups Monterey jack cheese :
coarsely grated
2 2" pickled jalapeno peppers, seeded minced
2 2" fresh jalapeno peppers, seeded :
minced
2/3 cup milk
Into a bowl, sift together the flour, cornmeal, baking powder, baking soda and salt. Add the butter and blend the mixture until it resembles coarse meal. Stir in the Monterey Jack and the peppers; add the milk. Stir the mixture until it just forms a soft sticky dough. Drop the dough by rounded tablespoons onto a buttered baking sheet and bake the biscuits in the middle of a preheated 425 oven for 15 to 17 minutes or until pale golden. Makes about 16 biscuits.

Butter Swim Jalapeño, Garlic, & Cheese Biscuits
Butter swim biscuit recipe:
Melt one stick of butter in an 8 x 8 dish or 10 inch dutch oven
2 1/2 cups of all purpose flour
4 teaspoons baking powder
4 teaspoons sugar
1 teaspoon salt
Mix together well
1 3/4 buttermilk
1 cup of cheese of your choice
2 garlic cloves minced
1 seeded and chopped jalapeño
Mix together with dry ingredients and pour batter over melted butter in 8 x 8 dish. Cut Square biscuits with a spatula. bake at 450 for 30 minutes or until not doughy.

••It took me a bit to edit this video because there is a 15 min limit on video uploads, I didn’t realize how much I can talk ???????? lol but I edited it as best I could leaving in the most important stuff (sorry had to cut out a few of my jokes ????) but yeah this is the gist of it. I no longer make the bagel version and really prefer this new way my daughter and I just love these!

This is only a video on how I make my dough. I do know there is a 100 other ways it can be done but this is just my way.
Ingredients Used:
1-3 cups Kirkland Brand NF Greek Yogurt
1-3 cups Gold Medal Self Rising Flour
Dried Jalapeños (add to ur liking)
1-3oz Light Mozzarella (Trader Joe’s)
Minced Garlic w/the juice (from the jar)
Directions:
Preheat oven 400•
Mix equal parts of flour & yogurt (refer to video to see how I mix it)
1 cup ratio makes 4 #3SP servings
2 cup ratio makes 8 #3SP servings
3 cup ratio makes 12 #3SP servings
Before kneading add dried jalapeños (optional) if u don’t like jalapeños you can skip this part.
Knead dough for a few mins
Weigh the dough out and split into equally weighed out sections. Throw your dough on the counter, throw on baking pan and repeat till u have them all “dropped” Brush with minced garlic, add cheese and your ready to bake.
Set timer for 15 mins to check on progress if not browned continue baking for up to 5 mins but keep checking them so u don’t burn them. It should take 15-20 mins depending on your oven. If after 20 minutes they’re still not brown to your liking continue to bake but carefully keep an eye on them so that you don’t burn the bread.
