How To make 100% Whole Wheat Bread
2/3 c Water
3 pk Yeast
1 tb Sugar
8 c Scalded Milk
2/3 c Shortening
1 c Sugar
1/2 c Molasses
2 tb Salt
12 c Whole Wheat Flour
Dissolve yeast in 2/3 c water while your milk is cooling. Dissolve 1 cup sugar in the hot milk. Stir all ingredients in large bowl, turn out and knead about 5 minutes, adding flour if needed. Knead about 5 minutes. Let rise until doubled in bulk, about 1 1/2
to 2 hours. Knead down and shape into 6 loaves, let rise until doubled in pans. Bake at 375 degrees F. for 40 minutes. Turn out on wire rack and let cool to cold before slicing, if you can. NOTE: Raisins and/or walnuts can be added for a change. Also this bread freezes well. -----

⁉️For some may find the dough too wet or sticky but if it’s manageable to knead then it’s not necessary to add flour. The longer it’s being kneaded will become smooth & elastic.
⁉️Every flour may behave differently when absorbing liquid, so in case the recipe's measurement might not be compatible with the quality of your wheat flour or if your dough mixture turned out too wet & seems impossible to knead, then it’s a sign to add flour.
✔️Ingredients
1 cup lukewarm water [240 ml]
2 & 1/2 tbsp honey [38 ml]
1 & 1/2 tsp instant yeast [5 grams]
1/4 cup vegetable oil [60 ml]
1/4 tsp salt
2 & 1/2 cups whole wheat flour [300 to 340 grams] (weight may vary, add up if it needs it coz every flour absorbs liquid differently)

These 100% Whole Wheat Baguettes Are Unique and Super Tasty
You can find a couple of regular baguette recipes on my channel. They use the exact same principles as this version, so if you have made baguettes before, then you will be able to make these too. I thought a whole wheat version would be quite unique and interesting. The result was surprisingly good. The crust of the baguette was crispy, and it had a great flavour. It was denser than my white flour baguettes, but that can be adjusted by increasing the hydration.
Although the hydration of this dough is 80% it still came out a little heavier than I expected, but I was happy with the result regardless. If you want to make them, then I would suggest first following my recipe and then adjusting from there if need be.

How to Make a Cold Proofed 100% Hydration 100% Whole Wheat Bread
This is the third time that I make a 100% hydration bread, but this is the first time I use the cold proofing method for it. The main advantage of cold proofing is that the bread can be baked right from the fridge the next day. That makes it the perfect method for all the breakfast bakes.
Not only is this convenient but it’s also extremely easy to make. There is no kneading. We mix the dough, leave it ferment for a while on the kitchen counter, give it a few folds, divide it, and pop it in the fridge to finish rising ready to be baked the next morning.
This bread is super light and airy. It’s full of whole wheat goodness and enhanced cold fermentation flavours. You could be eating it tomorrow morning!
