Italian Almond Biscuits (Riciarelli)
Called Riciarelli or Brutti ma Buoni (“Ugly but good” in Italian!), these Italian Almond Cookies are chewy on the inside, filled with wonderful almond flavour, and studded with dried cherries. They keep for 10 days, and because they're gluten free, everybody can enjoy them!

Macao Almond Cookies
Macau-style almond cookies are tender and crumbly, sweet but just a tad savory, and fragrant from almond and mung bean flour.
INGREDIENTS
• (200 g) mung bean flour
• (70 g) powdered sugar
• (40 g) Roosted almond
• (55 g) Almond flour
• (25 ml) Water
• (25 g ) plain flour
• (50 g) soften Salted or unsalted butter
• (Few ) Pandan leaves (optional)
INSTRUCTIONS
1. Sift all the powdery ingredient in to a large bowl, whisk together the mung bean flour, powdered sugar, almond meal and plain flour until well-combined. Add the soften butter pastry cutter or your fingers to work it into the flour until very crumbly and thoroughly distributed. Add in water in 3 batches rub it until crumbly, the final mixture should be dry and crumbly, but should hold together easily when squeezed.
2. To form the cookies, place a sliced almond nips into the cookies mold — they’ll be on top once the cookies are inverted out of the mold. Press the first layer of the cookie mixture into each hole then put second layer of cookie mixture and use thump to press down the mixture in to the mold. Knock out the cookies.
3. Preheat oven to 140 degrees, Bake the cookies at 140 degrees for 25 to 30 minutes, Let cool completely and serve.

Almond crescent cookies are delicate and will melt in your mouth. They are made with almond meal and are very easy to make. They are a great addition to any cookie platter and a fantastic gift from your kitchen.

Makes 24 to 30 cookies
1 cup (227 grams) of unsalted, softened butter
1/3 cup (67 grams) white sugar
1 2/3 (210 grams) cups all-purpose white flour
2/3 (100 grams) cups almond meal
¼ tsp. salt
Confectioner’s sugar
Cream the butter and the sugar for about three minutes until it is fluffy.
In a separate bowl, mix the flour with the almond meal and the salt. Add it to the butter and mix it in. Do not over beat.
Cover the bowl and refrigerate for about 30 minutes.
Heat the oven to 350 degrees F (175 C) and line your cookies sheets with parchment paper or silicon mats.
Scoop out about a TBS of dough and form a log. Bend it to form a crescent moon shape and place it in the cookie sheet. These will not spread so you do not need to separate them too much. Bake them for about 8 to 9 minutes until they start to lightly brown.
Remove the cookies from the oven and allow them to cool on the sheets for about 5 minutes. They will continue to be soft but will harden as they cool. Transfer them to a cooling rack.
Place the confectioner’s sugar in a sieve and generously sprinkle over the cookies. Keep the cookies in an airtight container for up to a week.

### Almond flour vs almond meal
You can use both because almond flour or also known as almond meal are both made out of grounded almonds. Most companies use the terms interchangeably but [in the US for example, there is a slight difference between almond meal and almond flour]( Almond flour is sold with the finest grind of blanched almond while almond meal is slightly coarser as the skin is also blended together. For this recipe, you would want to get almond meal for the best flavours. Traditionally, you can feel the crumbs of almond in the cookies as you chew on them. Moreover, the blended skin makes the cookies very attractive too.
### Homemade almond flour
Almond flour can be made at home. Just blend the almonds finely but do be careful not to blend them for too long or it would end up as almond butter.
### Can I use corn/tapioca flour instead of wheat flour?
You may but it is going to change the texture of the cookies. This recipe delivers the light crunchiness on the outside while crumbly and soft on the inside. Using corn or tapioca flour will not deliver this effect. Wheat flour is required to create structure in the cookies as almond flour (or almond meal as known in the US) does not bind well.
### Must I use baking powder and/or baking soda?
Yes! Baking soda is needed to raise the dough to give it the soft and crumbly texture. However, baking soda reacts immediately and fizzles off pretty quickly. Since the baking process happens slowly, you'd want to extend the effect of baking soda. To counter the quick reaction of baking soda and extend it, baking powder is required as one of the acids in it reacts to heat. This makes the dough rise as it is baking.
### Which type of oil?
Peanut oil would be the best choice to accompany the nutty flavour of almonds. However, any neutral-flavored oils such as canola, sunflower or corn oil would be great too.
### How to store the cookies?
Almond cookies must be cooled to room temperature before stacking them up in an airtight container. They can be kept for 4-6 weeks in a cool area, away from the sunlight. Enjoy the cookies with a good cup of quality Chinese tea.
