How To make Any Fruit Coffee Cake
4 c Apples, apricots, peaches, 1 ts Ground cinnamon
-chopped pineapple 1/4 ts Mace -or whole blueberries 1 c Butter 1 c Water 2 Eggs, slightly beaten
2 tb Lemon juice 1 c Milk
1 1/4 c Sugar 1 ts Vanilla
1/3 c Cornstarch 1/2 c Sugar
3 c All-purpose flour 1/2 c All-purpose flour
1 c Sugar 1/4 c Butter
1 tb Baking powder 1/2 c Walnuts, chopped
1 ts Salt
Preheat oven to 350 degrees. In a saucepan, combine choice of fruit and the water. Simmer, covered, about 5 minutes or until fruit is tender. Stir in lemon juice. Mix the 1 1/4 cups sugar and cornstarch; stir into fruit mixture. Cook and stir
until thickened and bubbly. Cool. In a mixing bowl, stir together the 3 cups flour, 1 cup sugar, baking powder, salt, cinnamon, and mace. Cut in the 1 cup butter until mixture resembles fine crumbs. Combine eggs, milk, and vanilla. Add to flour mixture, mixing until blended. Spread half of the batter into a greased 9x13 baking pan or two 8x8 baking pans.
Spread the cooled fruit mixture over the batter. Spoon the remaining batter in small mounds over the fruit mixture, spreading out as much as possible, Combine the 1/2 cup sugar and 1/2 cup flour; cut in the 1/4 cup butter until mixture resembles coarse crumbs. Stir in nuts. Sprinkle nut mixture over batter in pan. Bake 45-50 minutes for a 9x13 pan or 40-45 minutes for the two 8x8 pans, or until cake tests done. Cool. Three coffee-cupfuls milk slightly warm, one coffee-cupful butter, melt the butter in the milk, one coffee-cupful sugar, two cakes Fleischmann’s yeast, one teacupful stoned raisins. Make a sponge in the evening, let it rise overnight: in the morning stiffen with flour and knead about half an hour. When risen again roll out an inch thick and put in pans, then when light melt butter and thicken with flour and spread on cakes. Bake. Before serving sprinkle with cinnamon and sugar.

❗PRE PREP❗
Preheat oven at 180°C for 15 mins.
OR
Preheat your stove pot for 15 mins medium flame
You can use any oven proof dish pan/pyrex (square, rectangular, circle etc) Grease with oil and dust with flour.
Sieve:
1 + 1/3 cup All purpose flour
Salt half tsp
Baking powder 1 tsp.
Keep aside.
Beat: (you can use hand whisk too)
Half cup oil/ghee/butter in 3/4cup sugar (powdered or castor not icing sugar) for 4-5 minutes till turns white/off-white.
Add 3 eggs, one by one. Keep beating till it changes it's colour.
Add 1 tsp vanilla essence.
Prepare buttermilk: 1/4 cup milk half tsp vinegar.
(IT HAS NO TASTE, IT MAKES THE SPONGE SOFT)
Add the dry mix into the wet mix. Fold with a wooden spoon or spatula. Add buttermilk. Mix until you see no flour. Don't over mix.
Pour the batter in your prepared pan.
Bake for 30-40 minutes until the skewer comes out clean.
Temp:
Oven 150°C
Stove medium
Coffee Frosting:
1 cup icing sugar
135 grams butter more than half cup less than 1 cup (chilled not at room temp)
1 tbsp coffee mixed in 2 tbsp water.
Chopped almonds for side decor.

Cold Coffee Cake
Serves 5-6
Recipe in English:
Ingredients:
-Doodh (Milk) 500 ml
-Instant coffee 1 tbs
-Cheeni (Sugar) 3 tbs or to taste
-Cream 400 ml
-Bareek cheeni (Caster sugar) 2-3 tbs or to taste
-Cocoa powder 1 & ½ tbs
-Rusk 1 packet
-Cream
Directions:
-In saucepan,add milk,instant coffee and sugar,whisk well and bring it to boil & set aside.
-In bowl,add cream,caster sugar,cocoa powder,whisk well & set aside.
-Now dip rusk one by one through the coffee+milk mixture to absorb the liquid then settle into a serving dish forming a bed.
-On wet layer of rusk,add a layer of cream+cocoa powder mixture.
-Repeat the layers alternatively until you reach the edge of the serving dish.
-Garnish with cream and coffee powder.
-Freeze for 3-4 hours & serve!

-Ab rusk ko coffee+doodh ka mixture mein ache tarhan dip karein aur serving dish mein rakhtay jayein.
-Rusk ka upper cream+cocoa powder mixture ki layer laga lein.
-Alternatively yehe layers repeat ker lein.
-Cream aur coffee powder sa garnish karein.
-3-4 hours kliya freeze ker lein & serve karein.
