How To make Coffee Cake Muffins

finely chopped
1/3 c Light brown sugar :
firmly
-packed 1 1/2 c Plus 1 tabl. flour
1 t Cinnamon
1/8 ts Nutmeg
1 tb Butter or margarine melted
1/3 c Sugar
2 ts Baking powder
1/2 ts Salt
1/4 c Vegetable shortening
1/2 c Milk
1 Egg
12 Pecan halves :

Preheat oven to 375 degree F. Grease 12 muffin pan cups; set aside. In a small bowl; mix together pecans, brown sugar, 1 T flour, cinnamon, nutmeg, and butter; set aside. In a medium bowl, sift together 1 1/2 cups flour, granulated sugar, baking powder and salt; cut in shortening. In a small bowl, blend egg with milk. Add to dry ingredients with half of the pecan mixture, stirring until just blended. Spoon batter into muffin cups; sprinkle with remaining pecan mixture. Garnish each muffin with a pecan half. Bake 15 minutes or until cake tester inserted in center comes out clean. Remove muffins from pan to cool on wire rack. Mixing muffin ingredients requires a special, but easy-to-learn technique. The liquid ingredients (milk, eggs, etc.) are beaten together and then added all at once to the dry ingredients. Mixing is kept to a minimum--just enough to moisten the dry ingredients. INGREDIENTS
For the crumble mixture:
1/2 cup (70 grams) flour
1/4 cup (50 grams) brown sugar
1/4 cup (50 grams) sugar
1 teaspoon cinnamon
1 ounce (30 grams) butter, melted
For the muffin mixture:
2/3 cup (95 grams) flour
1 teaspoon cinnamon
1 teaspoon baking powder
1 teaspoon baking soda
1/2 cup (100 grams) brown sugar
1 tablespoon instant coffee
1/2 cup (125 ml) milk
1 tablespoon olive oil
2 eggs
PREPARATION
For the crumble mixture, sift the flour through a strainer and place it in a large bowl.
Add the sugar, brown sugar, cinnamon, and melted butter.
Use your hands and mix until the mixture gains the aspect of crumbs. Leave the mixture aside.
For the muffin mixture, sift the flour through a strainer and place it in a large bowl. Add the cinnamon, baking powder, baking soda, and brown sugar. Mix.
Separately, place the instant coffee in a large bowl. Add 2 tablespoons of milk, olive oil, and 2 eggs. Whisk everything until smooth.
Pour the obtained liquid over the muffin mixture, while whisking vigorously. Also pour the remaining milk.
Preheat the oven to 350°F/175°C.
Place the mixture into individual muffin molds. Fill around 2/3 of the entire mold, leaving room for the crumble. Add the crumble on top.
Bake the muffins for the next 25 minutes.
