How To make Apfelpfannkuchen (German Apple Pancakes)

Directions:
Preheat oven to 475. Peel, core and very thinly slice the apples: you should have approximately 1-1/2 cups. Melt 3 tablespoons of the butter over medium low heat in a small fry pan, and saute the apples until they are just tender. Keep apples warm while preparing the batter.
Place a 9 or 10 inch cast-iron skillet in the oven to heat for at least 5 minutes - the pan has to be very hot for this to work. When it is well heated, add the remaining 2 tablespoons of butter to melt and put the skillet back in the oven. The butter should be very hot buy not brown when you add the apples and the batter.
Place the flour, milk, vanilla, salt and nutmeg in a blender and whirl until smooth. Remove the skillet from the oven, quickly arrange the warm apple slices over the melted butter, and pour the batter evenly over all. Bake for 15 minutes. Reduce heat to 375 and bake 10 minutes longer. The pancake will puff and climb up the sides of the pan. Sprinkle with confectioner's sugar, then cut in wedges and serve with maple syrup.
Note: If you do not use apples, add 1/4 cup (1/2 stick) butter to the hot skillet.

Ingredients:
200g flour
200ml whole milk
62,5ml sparkling water
2 eggs
50g sugar
1 pinch of salt
2 apples
oil
Instructions:
1. Peel your apples and cut them into slices.
2. Separate the eggs. Beat the egg whites until stiff.
3. Take the bowl with your egg yolks, add flour, milk, sugar, vanilla paste and salt and mix everything until well combined.
4. Fold in the egg whites (don't use your handmixer).
5. Heat up a pan with 2tsp oil to medium heat. Add some batter and apple slices, brown on both sides.
6. Dust with some sugar or icing sugar (optional) and serve hot.

INGREDIENTS
1 egg
40g (3 tbsp) sugar
½ tsp vanilla extract
30ml (2 tbsp) vegetable oil
150g (⅔ cup) yogurt
200g (1 ⅔ cups) all-purpose flour
8g (2 tsp) baking powder
1 medium apple, peeled and cored
a pinch of cinnamon
a pinch of salt
METHOD
1. In a medium bowl whisk eggs with sugar, yogurt, vanilla, and vegetable oil.
2. In a smaller bowl whisk flour with baking powder, salt, and cinnamon.
3. Pour liquid ingredients into the dry mixture and mix to combine.
4. Grate one apple using a large grater and add to the batter. Mix well.
5. Scoop a portion of the batter onto an oiled preheated pan and cook without flipping until small bubbles appear on the surface. Flip and cook until brown on both sides.
