How To make Apfelpfannkuchen (German Apple Pancakes)

Directions:
Preheat oven to 475. Peel, core and very thinly slice the apples: you should have approximately 1-1/2 cups. Melt 3 tablespoons of the butter over medium low heat in a small fry pan, and saute the apples until they are just tender. Keep apples warm while preparing the batter.
Place a 9 or 10 inch cast-iron skillet in the oven to heat for at least 5 minutes - the pan has to be very hot for this to work. When it is well heated, add the remaining 2 tablespoons of butter to melt and put the skillet back in the oven. The butter should be very hot buy not brown when you add the apples and the batter.
Place the flour, milk, vanilla, salt and nutmeg in a blender and whirl until smooth. Remove the skillet from the oven, quickly arrange the warm apple slices over the melted butter, and pour the batter evenly over all. Bake for 15 minutes. Reduce heat to 375 and bake 10 minutes longer. The pancake will puff and climb up the sides of the pan. Sprinkle with confectioner's sugar, then cut in wedges and serve with maple syrup.
Note: If you do not use apples, add 1/4 cup (1/2 stick) butter to the hot skillet.

Ingredients:
•½ cup all purpose flour
•1 tablespoon + ½ cup sugar
•½ teaspoon baking powder
•¼ teaspoon salt
•4 eggs
•1 cup milk
•1 teaspoon nutmeg
•1 teaspoon vanilla extract
•6 (¾ stick) tablespoons unsalted butter
•½ teaspoon cinnamon
•1-2 peeled, thinly sliced apples
Directions:
•Melt 2 tablespoons (¼ stick) of unsalted butter and set aside.
•In a bowl, whisk together the all purpose flour, a tablespoon of sugar, the baking powder, and salt.
•Whisk in the eggs until incorporated.
•Whisk in the milk until incorporated.
•Whisk in a ½ teaspoon of nutmeg, the vanilla extract and melted butter until incorporated.
•Allow the batter to sit for 30 minutes.
•Preheat an oven to 425 degrees.
•Peel and slice the apples.
•Once the batter has sat for 30 minutes, place a skillet over medium heat (This will go from the stove to the oven. So, it needs to not have any plastic that can melt. I use a cast iron skillet for this recipe.).
•Melt a ½ stick of butter in the skillet, making sure melted butter coats the inner sides, as well as the bottom.
•As the butter finishes melting mix in a bowl a ¼ cup of sugar, a ½ teaspoon of nutmeg and the cinnamon.
•Sprinkle (do not stir) all of the sugar/nutmeg/cinnamon mixture over all of the melted butter.
•Line the bottom of the skillet with the apple slices.
•Sprinkle a ¼ cup of sugar over the apple slices in the skillet and let cook for 5 minutes.
•Pour the batter over the apples in the skillet and place the entire skillet in the 425 degree oven.
•Bake for 15 minutes.
•After 15 minutes of baking, reduce the oven temperature to 375 and bake for another 10 minutes.
•Transfer the German Apple Pancake from the skillet to a serving dish.
•Slice and serve.
German Apple Pancake, Mi Cocina My Kitchen
Ingredients for the German Apple Pancake:
3 to 4 Tablespoons of Butter
2 Apples
3 Tablespoons of Sugar
4 Large Eggs
1 Cup of Milk
1 Cup of Flour
1/8 Teaspoon of Cinnamon
1/8 Teaspoon of Vanilla Extract (optional)
1/8 Teaspoon of Salt

These exquisite German apple pancakes are not much like normal pancakes—more like a set custard and lacking the air pockets normal pancakes have. They're quite easy to make and there's nothing like caramelized apples for a great dessert or breakfast dish.

You'll need:
A non-stick frying pan that won't melt in the oven
4–5 apples (pick something that will hold together when cooked. I used empire, but pretty much anything with decent acidity is okay: granny smith, golden delicious, etc.)
100 g white flour
90 mL (6 tbsp) white sugar
1.25 mL (1/4 tsp) kosher salt
180 mL cream or milk
60 mL sour cream
3 eggs
5 mL (1 tsp) vanilla extract
1.25 mL (1/4 tsp) powdered cinnamon
60 mL (4 tbsp) butter
