How To make Apple Brandy Cake
5 tb Apple brandy
4 c Apples; peeled and chopped
2 c Flour; all-purpose
2 ts Cinnamon; ground
2 ts Soda
1 ts Nutmeg; ground
1 ts Salt
1/2 ts Cloves; ground
1 c Walnuts; chopped
1 c Raisins
2 c Sugar
1/2 c Oil; salad
2 Eggs
Powdered sugar Sprinkle brandy over apples, and set aside. Combine flour, cinnamon, soda, nutmeg, salt, and cloves; stir in walnuts and raisins. Combine sugar, oil, and eggs; beat well, and blend into flour mixture. Stir in apples. Spoon batter into a greased 13x9x2" pan. Bake at 375 degrees for 1 hour. Remove from pan; cool on wire rack. Sift powdered sugar over top. -----

The Classic Tarte Tatin With Brandy Chantilly Cream
Tarte Tatin is one of the worlds most famous desserts. The classic upside down caramel apple tart owing its name to the Tatin sisters. But the popular dish on the menu at Hotel Tatin in France was called Tart Solognote. It wasn't until after the sisters died that the famous dish appeared as Tart Tatin on the menu at Maxims hotel in Paris... and the rest is history!
In this video I share the Tart Tatin recipe I prepared at Buckingham Palace for the Queen and her guests. Delicious caramelized apples atop a buttery melt in your mouth pastry base and laden with caramel sauce and brandy infused whipped cream. A real show stopper at the table. Enjoy!

Tart Tatin
Serves 6
For the Caramel;
2 cups sugar
1 cup water
For the base;
1 ¼ cups flour
1 ½ sticks butter
¼ cup Lard
3 Tbs cold water
For the topping;
2 lb Granny Smith’s apples – peeled and sliced
½ stick butter
zest and juice of 1 lemon
¼ cup sugar
1 cup heavy cream
¼ cup sugar
2 TBS brandy
1)Pre heat the oven to 350 degrees and Prepare the base by rubbing the butter and lard into the flour and gradually adding the water. Chill the paste for at least 1 hour for the fat to set up.
2) Prepare the caramel by bringing the sugar and water to a boil in a small heavy based pan. Whisk once it comes to a boil and then boil without stirring until it is golden and caramel colored. Pour about a 1/3 into the bottom of a 9 inch cake tin. So that it covers the bottom and allow it to cool. Carefully add about ½ cup of water to the caramel remaining in the pan and leave to cool.
3) Prepare the apples by melting the butter in a skillet and adding the sugar, apples and lemon zest and juice. Cook for about 5 minutes until the apples start to soften. Remove from the heat and allow to cool, tilting the skillet so that the juices run off the apples.
4) Lay the apples in a pattern in the cake tin and top with the remaining apples. Roll out the paste to about ½ inch thick and place over the top of the apples – cutting around the edges of the cake tin.
5) Place in the oven for about 20 minutes or until the caramel starts to bubble around the edges of the paste. Remove from the oven and invert onto a warm plate. Pour the remaining caramel sauce over the top of the apples and serve with Chantilly cream.
6) Whip 1 cup of cream and ¼ cup sugar until almost stiff, whisk in 2 TBS brandy, or to taste.

*Irish Apple Crumble Cake Recipe*
*Timings:*
• Prep Time: 15 mins.
• Cook Time: 1 hour.
• Total Time: 1 hour 15 mins.
*Servings:*
• 1 cake of 8 slices.
*Ingredients:*
_For the Irish Apple Cake:_
• ½ cup + 1 tbsp (125g/4oz) Unsalted Butter.
• ½ cup + 2 tbsp (125g/4oz) Caster Sugar.
• 1 tsp Vanilla Extract.
• 3 Medium Eggs.
• 1¼ cup (200g/7oz) Plain/All Purpose Flour.
• 1 tsp Baking Powder.
• Pinch of Salt.
• 1 tsp of Cinnamon.
• 3 Granny Smith Apples (peeled and chopped into cubes or sliced thinly).
• 3 tbsp Milk.
_For The Crumble topping:_
• ½ cup + 2 tbsp (100g/3½oz) Plain/All Purpose Flour.
• Pinch of Salt
• ¼ cup + 3 tbsp (100g/3½oz) Unsalted Butter.
• ½ cup (100g/3½ oz) Caster Sugar.
• ¼ cup (30g/1oz) Porridge Oats/Rolled Oats.
_Serve with:_
• Ice Cream.
• Whipped Cream.
• Caramel Sauce.
*Method:*
Preheat the oven to the following temperatures:
• 160°C/320°F [Fan Oven]
• 180°C/360°F [No-Fan]
• Gas Mark 4.
_For the crumble topping:_
1. Mix the flour, salt, butter, sugar and porridge oats.
2. Rub in the cold butter with your fingers until fully incorporated and you've reached the texture of coarse breadcrumbs.
3. Place in the fridge to chill.
_For the Irish apple cake:_
1. Line the base and sides of an 8 round loose-bottom cake tin.
2. Cream together the butter and sugar until soft and pale in colour.
3. Add the vanilla and add eggs to the mixture one by one until thoroughly combined.
4. Sieve in the flour, baking powder, salt & cinnamon and mix.
5. Add in the chopped apple and milk and fold them in.
6. Spoon the mixture into the prepared cake tin and smooth the top.
7. Place the crumble mix on top of the cake batter.
8. Bake in an oven for 60 minutes or until a knife inserted into the middle of the cake comes out clean.
9. Once the cake is baked, remove it and allow it to sit for 15 minutes before removing the tin.
10. Serve warm with ice cream or whipped cream (or why not both) plus my caramel sauce.

Ingredients:
1 cup mixed glazed fruits, chopped
½ cup dried apricots, chopped
½ cup dried cranberries
½ cup dark raisins
½ cup candied orange peel
1 cup walnuts, coarsely chopped
½ cup golden raisins
1 cup pecans
1 cup pitted dates
½ cup green candied cherries
½ cup red candied cherries
¾ cup rhum
1 ½ cup all purpose flour
1 tsp cinnamon
½ tsp allspice
½ tsp nutmeg
½ tsp baking soda
½ tsp salt
½ cup (113g) softened butter, unsalted
1 cup packed brown sugar
3 eggs, medium
⅓ cup molasses
2 tablespoons rhum
*Divide evenly into three 6x3x2.5 loaf pans greased and lined
*Bake in a preheated oven at 165C for 1 hr 30 mins or until toothpick inserted at the center comes out clean (you can opt to bake them using baine marie method for even cooking and prevent the cake from drying out or just bake them longer at lower temperature)
*Cool completely and brush all over with rhum or brandy
*Wrap them individually in aluminum foil and refrigerate. Avoid touching with bare hands to prevent spoilage
*Brush them again with rhum after a week then repeat brushing for four weeks
*To make a chocolate fruit cake, replace 1/2 cup of flour with alkalized unsweetened cocoa powder

Apple Cheesecake: a unique and delicious dessert!
Ingredients:
12 biscuits
50g melted butter
2 packets philadelphia
1 packet mascarpone
100g sugar
2 eggs
1 tsp vanilla
4 peeled and chopped apples
100g dark brown sugar
1 tbsp cinnamon
75g sultanas
100g brown sugar
100g plain flour
100g butter
50g oats
Mix apples, sugar, cinnamon and sultanas
Bake for 25 min at 180°C/350°F
Crush the biscuits and mix them with melted butter
Mix together brown sugar, flour, butter and oats until it becomes a crumble
Beat mascarpone, philadelphia and sugar, add eggs and vanilla.
In a spring form press down the biscuit base, then add the cheesecake filling, add the chopped apples in a layer, then sprinkle over the crumble topping.
Bake for 1 hour at 160°C/320°F
Allow to cool for at least three hours in the fridge

My favourite time of the year is here! I love #Christmas baking and I'm kicking off the series with this Christmas Plum Cake, which is honestly EPIC! It's a classic Christmas dessert but I make it #Eggless and without rum and it tastes SO good!
You can use rum instead of water and white sugar instead of brown sugar.
Bake this cake at 160C for 50-55 minutes!
