Baked Apple Oatmeal Cups | Easy + Healthy Muffins
These easy + healthy Baked Apple Oatmeal Cups make a delicious grab-and-go seasonal breakfast. Think apple pie mixed with oats baked into a yummy muffin. BAKED APPLE OATMEAL CUPS RECIPE
3 cups old-fashioned rolled oats
1 teaspoon baking powder
1/2 teaspoon cinnamon
1 cup organic buttermilk (you can sub any milk you prefer)
2 eggs, beaten
1/2 cup applesauce (I used cinnamon applesauce)
1 large apple, chopped (1 heaping cup)
1/4 cup raisins
Preheat oven to 350ºF. Spray a 12-count muffin pan with non-stick cooking spray or coat with coconut oil and set aside.
In a large bowl combine oats, baking powder, cinnamon, buttermilk, eggs, and applesauce. Mix together until everything is well incorporated.
Add in chopped apple and raisins and gently toss until they are evenly distributed throughout the batter.
Divide batter amongst all 12 muffin cups and pop in the oven for 25-30 minutes or until they have set through and are golden brown on top.
Cool and enjoy.
*I like to store these in an airtight container and keep them in the fridge. They will last a good week stored this way.

INGREDIENTS:
●1 1/2 cups flour
●1 teaspoon baking soda
●1 teaspoon cinnamon (or more)
●1/4 teaspoon salt
●2 eggs
●3/4 cup dark brown sugar , firmly packed
●1/4 cup vegetable oil
●1/4 cup sour cream
●1 teaspoon vanilla
●3/4 cup apple , unpeeled and diced
●3/4 cup cranberries
●1/2 cup walnuts , chopped

Ingredients
Plain flour- 1 and 1/3 cups (163g)
Baking powder- 1 and 1/2 teaspoons
Baking soda- 1/2 teaspoon
Salt- 1/4 teaspoon
Sugar - 1/2 cup (100g)
Eggs -2
Melted unsalted butter- 1/2 cup (113g)
Buttermilk - 1/2 cup (120ml)
Dried cranberries— 1/3 cup (44g)
Vanilla- 1 teaspoon
Bake in preheated oven at 220•c for 5 min
And then reduce the temperature to 180•c and bake for 10 to 12 min
