How To make Apple Harvest Squares
1 1/2 c All purpose flour
1/2 ts Salt
1 c Sugar;divided
1/2 c Butter
4 c Apples; sliced, peeled
2 tb Lemon juice
1 ts Ground cinnamon
1 Egg; lightly beaten
1/3 c Evaporated milk
1 ts Vanilla extract
3/4 c Chopped nuts
1 1/3 c Flaked coconut
In a bowl, combine flour, salt and 1/3 cup sugar. Cut in butter until the mixture resembles fine crumbs; press into the bottom of a greased 13x9x2-inch baking pan. Arrange the apple slices on top of crumbs;
sprinkle with lemon juice. Combine 1/3 cup sugar with cinnamon; sprinkle over apples. Bake at 375 deg. for 20 min. Meanwhile, in a small bowl, combine remaining sugar with the rest of the ingredients. Spoon over baked apples; bake for another 20 minutes or until golden brown. Cut into squares while still warm,

4 c : Apples; Sliced, Peeled
2 tb : Lemon Juice
3/4 c : Pecans; Chopped
Fall Entertaining Fun Harvest Grazing Table, Apple Pie Cocktail & Quick Fig & Brie Bites
FIG + BRIE CUPS
MAKES 12 MINI CUPS
Timing: 10 minutes, plus baking
3 tbsp butter, melted
4 oz phyllo dough, thawed and cut into 2 ½ inch squares (roughly half of an entire package)
¾ cup fig preserves
4 oz brie, divides into 12 equal ½ inch pieces
1 small container of fresh figs, for garnish
Equipment needed: mini muffin tin
Preheat your oven to 350 degrees F.
Butter one 2 ½’’ square of phyllo, top with another square in an alternating direction and butter the top. Repeat until you have 4 layers of phyllo being sure to alternate directions.
Place the layered square into your mini muff tin, repeating step 2 until the muffin tin is filled.
Add one ½ inch piece of brie into each cup and top the brie with 1 tsp of fig preserves.
Add a thin slice of fresh fig for garnish.
Bake for 10 -12 minutes, until phyllo is golden brown and fig preserves are bubbling.
Remove from oven and cool for 5 minutes before serving

Caramel Apple Bars
This tastes like a cross between apple pie and apple crumble.
It is very sweet so cut the pieces fairly small.
1 cup packed brown sugar
1/2 cup butter or margarine, softened
1/4 cup shortening
1 3/4 cups all-purpose flour
1 1/2 cups quick-cooking oats
1 teaspoon salt
1/2 teaspoon baking soda
4 1/2 cups coarsely chopped peeled tart apples (3 medium)
3 tablespoons all-purpose flour
1 bag (14 ounces) caramels (about 53)

Heat oven to 400ºF. Mix brown sugar, butter and shortening in large bowl. Stir in 1 3/4 cups flour, the oats, salt and baking soda. Reserve 2 cups oat mixture; press remaining oat mixture in ungreased rectangular pan, 13x9x2 inches.

Toss apples and 3 tablespoons flour; spread over mixture in pan. Heat caramels over low heat, stirring occasionally, until melted; pour evenly over apples. Sprinkle with reserved oat mixture; press lightly.

Bake 25 to 30 minutes or until topping is golden brown and apples are tender. For 36 bars, cut into 6 rows by 6 rows while warm. Store covered in refrigerator.
