RECIPE
Streusel topping:
1/3 cup organic brown sugar
1/4 cup gluten-free oat flour
1 Tbsp. vegan margarine
1 tsp. ground cinnamon
Muffins:
3 cups gluten-free oat flour
1 1/2 cups apple, finely chopped
1/2 cup organic brown sugar
1 tsp. baking powder
1 tsp. ground cinnamon
1/2 tsp. ground nutmeg
1/2 tsp. ground cloves
1/2 tsp. salt
3/4 cup apple juice or apple cider
1/4 cup oil (canola, vegetable, or light olive)
Preheat the oven to 350 degrees Fahrenheit. To make the streusel topping, to a bowl add brown sugar, oat flour, margarine, and cinnamon. Stir well, and set to the side. To another bowl, add oat flour, apple, brown sugar, baking powder, cinnamon, nutmeg, cloves, and salt. Stir well. Add apple juice, and oil. Stir until well combined. Scoop the batter into a greased muffin pan. Sprinkle each muffin with some of the streusel. Bake 25-30 minutes. Makes one dozen muffins.

Apple Streusel Muffins | Easy Recipe
Moist muffins full of apples topped with a buttery streusel are easy to make and incredibly delicious.
Ingredients: Makes 12 muffins
-Crumb Topping
Flour ⅔ cup (80 g)
Sugar ¼ cup (50 g)
Brown Sugar ¼ cup (50 g)
Salt ¼ tsp (1.5 g)
Butter, softened ¼ cup (56 g)
-Muffin Batter
Flour 1 ½ cups (180 g)
Baking Powder 2 tsp (8 g)
Salt ½ tsp (3 g)
Cinnamon 1 tsp (2 g)
Eggs 2 (100 g)
Sugar ½ c (100 g)
Brown Sugar ¼ cup (50 g)
Oil ⅓ cup (75 g)
Vanilla Extract 1 tsp (5 mL)
Apples, grated 2 large (300 g)
Directions
1. To make the crumb topping, stir together flour, sugars and salt. Add softened butter and stir until crumbly. Set aside.
2. For the muffin batter, whisk together flour, baking powder, salt, and cinnamon until combined. Set aside.
3. Whisk eggs, brown sugar and granulated sugar until sugars have dissolved and mixture is thick and creamy. Add oil, vanilla, and grated apples (along with any collected juice).
4. Add flour mixture and stir just until there are no more streaks of flour.
5. Allow batter to rest for 30 minutes, meanwhile preheat oven to 425° F (218° C).
6. Scoop batter into muffin cups (about ¼ cup (60 mL) per muffin). Divide the crumb topping mixture evenly among muffins.
7. Place in preheated oven and bake for 10 minutes, then lower temperature to 350° F (177° C) and bake for an additional 10-12 minutes or until a toothpick comes out clean.
8. Cool in the pan for 10 minutes before removing to a wire rack to finish cooling.

APPLE STREUSEL MUFFINS
(Makes 12)
Preheat oven to 375 degrees F.
Lightly grease or paper-line 12 muffin cups. Set aside.
2 cup all-purpose flour or substitute with bread flour
1 cup granulated sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2 large eggs, room temperature
1/2 cup butter, melted
1 teaspoon pure vanilla extract
1-1/2 cups tart apples, peeled, cored, and chopped
STREUSEL TOPPING
1/3 cup packed light brown sugar
1 tablespoon all-purpose flour or substitute with bread flour
1/8-1/4 teaspoon ground cinnamon
1 tablespoon butter, keep chilled before using
GLAZE
1/2 cup powder sugar
1-2 teaspoon coconut milk or substitute with milk or water
1. In a large mixing bowl whisk together first 5 ingredients. Set aside.
2. In a medium bowl whisk together to eggs, vanilla extract, and butter; add to flour mixture. Stir until the flour is no longer visible. Batter will be stiff. Stir in apples.
3. Fill prepared greased or paper-lined muffin cups three-fourths full.
4. In a small bowl add all ingredients for the streusel topping. With a folk work ingredients together until crumbly. Add 1 teaspoon or so of streusel to each top of muffins batter.
5. Bake for 15 to 20 minutes or until a toothpick inserted in center comes out clean. Cool for 5 minutes before removing from pan to a wire rack to cool completely.
6. In a small bowl whisk GLAZE ingredients together. Drizzle on top of muffins.
TIPS: Store MUFFINS in a airtight container, up to 3 months, in the freezer. Thaw overnight in refrigerator. Microwave 5 seconds, at a time, until desired warmness.
