How To make Apple Walnut Cake with Apple Cider Glaze
1 1/2 c Vegetable oil
2 c Granulated sugar
3 Eggs
2 c Unbleached all-purpose
-flour, sifted 1/8 ts Ground cloves
1 1/4 ts Ground cinnamon
1/4 ts Ground mace
1 ts Baking soda
1/2 ts Salt
1 c Whole-wheat flour, sifted
4 c Shelled walnuts, coarsely
-chopped 1 1/4 c Coarse chunks of peeled and
-cored apples 3 tb Applejack
Apple Cider Glaze (see -recipe)
APPLE CIDER GLAZE:
4 tb Sweet butter
2 tb Brown sugar
6 tb Granulated sugar
3 tb Applejack or apple brandy
4 tb Sweet cider
2 tb Fresh orange juice
2 tb Heavy cream
Preheat oven to 325F. In a large bowl, beat vegetable oil and sugar until thick and opaque. Add eggs, one at a time, beating well after each addition. Sift together flour, cloves, cinnamon, mace, baking soda and salt, then stir in whole-wheat flour. Add to oil and egg mixture and mix until well blended. Add walnuts, apple chunks and applejack all at once and stir batter until pieces are evenly distributed. Pour batter into a greased 10-inch round cake pan. Bake for 1 hour and 15 minutes or until cake tester inserted in center comes out clean. APPLE CIDER GLAZE: Melt butter in a small saucepan and stir in both sugars. Add remaining ingredients, stir, and bring to a boil. Reduce heat slightly and cook for 4 minutes. Remove from heat and cool slightly. Pour while still warm over warm cake. Makes 1 1/2 cups glaze. 4 small or 3 large baking apples (such as Pink Lady), peeled, halved, cored
½ cup (packed) light brown sugar, divided
1 cup all-purpose flour

¼ tsp. freshly grated nutmeg

Ingredients:
6 Tbsp. Butter, softened
3/4 cup Applesauce
2/3 cup Sugar
1 Tbsp. Milk
1 tsp. Vanilla Extract
1.25 cups Flour or Gluten-Free Flour Blend
1 tsp. Baking Powder
1 tsp Cinnamon
1/2 tsp. Baking Soda
1/2 tsp. Ground Ginger
1/8 tsp. Nutmeg
Pinch of Allspice
Pinch of Salt
3 Eggs
1 cup Apples peeled and chopped
1/2 cup chopped Walnuts, divided
Icing:
½ cup Powdered Sugar
½ tsp. Vanilla Extract
Milk to thin
Directions:
Preheat your oven to 350 degrees Fahrenheit. In a bowl, cream the butter and sugar together. Add in the applesauce, milk and vanilla.
In another bowl, combine the flour, baking powder, baking soda, spices and salt. Pour the dry ingredients into the wet ingredients and mix until combined. Whisk the eggs and combine the eggs in the batter. Fold the chopped apples and half of the walnuts into the batter.
Grease an 8” pan and line it with parchment. Pour the batter into the pan and sprinkle the rest of the chopped walnuts on top. Bake for 45-50 minutes, or until the internal temperature of the cake reads 190-195 degrees Fahrenheit on your ThermoPro thermometer. Set the cake aside to cool.
After the cake has cooled, sift the powdered sugar into a bowl. Whisk in the vanilla extract and milk 1 teaspoon at a time until the icing reaches your desired thickness. Pour the icing over the top of the cake. Slice and enjoy.

Makes 12 muffins
Ingredients:
For the muffins:
2 Apples
1 Egg, large
1/2 cup (120ml) Milk
1/3 cup (80ml) vegetable oil
1¼ cups (160g) Flour
2 teaspoons Baking powder
1/4 teaspoon Salt
3/4 cup (150g) Sugar
1 teaspoon Vanilla extract
For the crumble:
1/4 cup (60g) Butter, cold
1/2 cup (65g) Flour
1/2 cup (100g) brown Sugar
1 teaspoon Cinnamon
Directions:
1. Preheat oven to 350F (175C). Line a 12-cup muffin pan with muffins liners, spray the cups with oil (optional) and set aside.
2. Make the muffins: In a bowl mix milk, oil, egg and vanilla extract. Set aside.
3. In a separate bowl, combine flour, baking powder, sugar and salt.
4. Peel the apples and cut into small chunks. Place apple chunks into the flour mixture and toss well to ensure the apples are well coated.
5. Pour the wet mixture into the dry mixture and mix until combined.
6. Scoop the batter into muffin cups until 3/4 full.
7. Make the crumble: Combine the ingredients for the crumble topping together in a small bowl and crumble together using your finger tips.
8. Sprinkle some crumble on top of each muffin batter. Bake for 20-25 minutes, until a toothpick inserted into the center comes out clean.
9. Let cool before serving.
