Apple Cider Donut Cake
350° 10 cup Bundt Pan
2 1/2 C Flour
3/4 tsp Baking Powder
1/4 tsp Baking Soda
1/2 tsp Salt
3/4 tsp Cinnamon
1/4 tsp Ginger
1/8 tsp Cloves
10 Tbsp Butter - room temperature
1 1/4 C Sugar
2 Eggs
1 C Apple Cider
3/4 C Unsweetened Applesauce
2 tsp Vanilla
Topping
2 Tbsp Butter - melted
1/4 C |Sugar
1/2 tsp Cinnamon
Whisk together in a medium sized bowl flour, baking powder,baking soda, spices & salt - set aside
Beat butter & sugar in a large bowl until light & fluffy, approx 2 minutes. Beat in eggs one at a time. In a separate bowl
pour cider, applesauce & vanilla. Stir around a bit.
Beat flour/apple mixture into the butter alternating small batches until well combined.
Spoon into well sprayed bundt pan. Bake @ 350° for 45 - 50 minutes or until toothpick comes out clean.
Let cool in pan for 10 minutes then invert onto cake pan.

To make topping:
Melt butter and brush onto cake.
Mix sugar & cinnamon in a small bowl and pour onto cake.

Apple Cider Doughnuts, that stalwart of autumn and a harbinger of the holidays, are often oily, lacking in apple flavor, and disappointingly stale. But it’s not their fault! Turns out doughnuts are better made at home so they can be eaten fresh, and as long as you follow Claire’s tips for a successful cake doughnut, you can enjoy this perfect taste of fall! Follow along.

Ingredients:
2 cups cider -- boiled down to ½ cup
½ cup apple butter
½ cup sour cream
2 teaspoons vanilla extract
3½ cups all-purpose flour
1 teaspoon kosher salt
2½ teaspoons baking powder
½ teaspoon baking soda
1 teaspoon ground cinnamon
¼ teaspoon ground nutmeg
2 large eggs, at room temperature
½ cup granulated sugar
¼ cup light brown sugar
4 tablespoons unsalted butter, melted and cooled
Cinnamon sugar and oil, for assembling

The Dry Ingredients:
• 2 cups all-purpose flour
• 2 teaspoons ground cinnamon
• 1 teaspoon baking powder
• ½ teaspoon baking soda
• ½ teaspoon salt
• ¼ teaspoon ground cloves
The Wet Ingredients:
• 4 eggs
• 1 and ½ cups granulated sugar
• 1 cup of vegetable oil
• ½ cup milk
• 2 teaspoons pure vanilla extract
The add-ins:
• ¾ cup chopped walnuts
• ½ cup raisins
• 2 tablespoons all-purpose flour
• 2 Fuji apples, peeled, cored, and finely diced
• ¼ cup light brown sugar
• ½-1 teaspoon ground cinnamon
The topping:
• 1 Fuji apple, cored and thinly sliced
• 2 tablespoons (approximately) granulated sugar
• 2 tablespoons melted butter
Preheat the oven to 350 °F, 180 °C.
Grease 2 (8.5 by 4.25 by 2.75 inches) loaf pans with soft or melted butter and line them with parchment paper.
Combine the wet ingredients in a large mixing bowl and whisk together until smooth.
Combine the dry ingredients in a bowl and whisk together. Sift the dry ingredients into the wet ingredients and whisk until combined.
Combine the raisins, walnuts, and 2 tablespoons of flour in a small bowl and mix together. Fold these into the batter.
For the Apple Spice cake, pour half of the batter into one of the prepared loaf pans. If you’re making two apple spice cakes then, pour the remaining batter in the other loaf pan.
Combine the diced apples, brown sugar, and cinnamon in a bowl and mix together. Add a tablespoon of flour and mix it together. Add the apples to the remaining batter to make the Apple Spice Loaf. Fold the apples into the batter then, pour it into the prepared loaf pan.
Arrange the apple slices over the batter (both pans) then brush them with the melted butter. Sprinkle the granulated sugar on top.
Bake in the center rack of the oven.
The Apple Spice Cake will bake faster than the loaf. Check them at the 40-45-minute mark by inserting a toothpick in the center of the cake/loaf. If the toothpick comes out clean, then, they are ready.
The Spice Cake should be ready at 45 minutes.
The Apple Loaf cake, that has the diced apples inside, will take longer. Up to 1 hour and 10 minutes.
Remove from the oven and allow the cakes to cool for 10-15 minutes, inside the loaf pans. Run a knife around the edges and take the cakes out of the pans. Set on serving trays and cool completely.
Dust with some confectioner’s sugar and serve with tea or coffee. Enjoy!
Notes:
Granny Smith apples are too tart for this cake. It is better to use Fuji, Gala, Braeburn, Honeycrisp, or any apples that will not melt that are also sweet. Red delicious apples will turn to applesauce.
The Apple Spice cake (without the apples inside the batter) will bake much faster than the loaf. It will be ready in 40-45 minutes.
The Apple Spice Loaf (full of apples) will take at least an hour, depending on your oven, to bake.
Chop the apples very small so that they bake evenly.

Apple cider Bundt cake
For the cake:
1 box yellow cake mix
1 cup apple cider
1 tbsp brown sugar
3 eggs
1 tbsp cinnamon
1 tsp vanilla
1/4 tsp salt
1/2 cup unsweetened applesauce
For the icing:
1 1/2 cup powdered sugar
2 tbsp apple cider
Preheat oven to 350°
In a mixing bowl combine all cake ingredients and mix until combined
Butter and flour a bundt pan very well
Pour the cake mixture into the bundt pan
Bake for 40 minutes or until a toothpick comes out clean
Let cool in the pan 20 minutes then flip on to a plate
Mix the icing ingredients together. If it’s too thin add more powdered sugar a little at a time. If it’s too thick add more apple cider a little at a time
Pour the icing glaze over the cake.
If desired, sprinkle a little cinnamon sugar mixture on top of the glaze

Apple Cider Donut Cake
1 1/2 cups sugar

1 cup oil
3 cups flour
2 tsp baking powder
11/2 tsp salt
1/2 cup sweetened apple sauce
1 cup apple cider
1 tsp vanilla extract
1 tsp Almond extract ( optional )
2 tsp cinnamon- pinch ground clove and all spice
1 can sweetened condensed milk !
Cinnamon sugar coating
1/4 cup melted salted butter
3 tbsp sugar
1/2 tap cinnamon!

Donut Batter
1 1/2 cups apple cider
2 cups all-purpose flour
1 1/2 tsp ground cinnamon
1/4 tsp ground nutmeg
1/4 tsp ground allspice
2 tsp baking powder
1/4 tsp salt
1/2 cup buttermilk
1 large egg
2 tbsp melted butter
1 tsp vanilla extract
1/2 cup granulated sugar
1/2 cup brown sugar
Spiced Sugar
1 cup granulated sugar
1 tsp ground cinnamon
1/4 tsp ground nutmeg
1/4 tsp ground allspice
6 tbsp melted butter
Preheat the oven to 350ºF. Grease a mini donut baking pan. Set it aside.
To make the donut batter, simmer the apple cider in a small pot until the liquid has reduced and only 1/2 cup remains, about 20 to 25 minutes.
While the cider is reducing, in a large bowl, whisk together the flour, cinnamon, nutmeg, allspice, baking powder, and salt. Set it aside.
In another large bowl, whisk together the buttermilk, egg, melted butter, and vanilla extract. Whisk in the granulated sugar and brown sugar. Mix until smooth. Add half of the flour mixture to the wet ingredients and mix. Add the remaining flour mixture and mix. Whisk in the concentrated apple cider until the batter is smooth. Transfer the mixture to a piping bag. Pipe some of the batter into each donut mold, filling about halfway.
Bake the donuts until they are lightly golden and an inserted toothpick comes out clean, about 8 to 10 minutes.
While the donuts are in the oven, to make the spiced sugar, in a medium bowl, whisk together the sugar, cinnamon, nutmeg, and allspice.
Once the donuts are cool enough to handle, dip each donut into the melted butter and roll it in the spiced sugar.
Serve immediately or once cooled completely, store them in an airtight container for up to 3 days.
