How To make Apple and Carrot Cake
2 c Whole wheat flour;
-self-rising 1/2 c Margarine;
1 ts Cinnamon;
1 c Walnuts; chopped
2/3 c Raisins;
2 c Dessert apples; peeled cored
-grated 1 c Carrot; grated
Grated peel of 1 orange 2 lg Eggs;*
4 tb Fresh orange juice;
Line the base and grease of a loaf pan with 4 cup capcity. Preheat the oven to 350 degrees. Place the flour in a bowl and mix well, then cut in the margarine and stir in the cinnamon. Stir in the walnuts, raisins, apples and carrot. Add the orange peel, eggs and juice, then beat well until thoroughly combined. Spoon the mixture into the prepared pan, smooth the top and bake for about 1 1/4 hours, or until the cake is well risen and firm to touch. Turn out on a wire rack. Great taste from simple ingredients! Light dessert for breakfast in 5 minutes! The recipe is simple and quick, but very tasty. Easy dessert recipe in 5 minutes. A dessert loved by both adults and children. All I can say is that it was over very quickly, and I will definitely do it again soon.

Ingredients:
120 g rolled oats/ 1 1/4 cup
pinch of salt
220 ml kefir(or greek yogurt) / 3/4 cup
2 eggs
50 g erytrytol sweetener/ 1/2 cup
2 small carrots
2 medium apples
1/2 teaspoon cinnamon
4 g baking powder/ 3/4 tsp
grease with butter/ oil a 19 cm pan
bake 40-45 minutes at 180°C/ 360°F
smear with honey or syrup
chopped walnuts(optional)

You like carrots or not you will like this carrot cake. It's soft and moist, you don't really taste carrot in it. The orange flavour goes very well with it, This is my own recipe and this is how I like my carrot cake. but if you want to use vanilla, cinnamon, or almond you certainly can. Although I strongly recommend that you try the way it is.

1 tbsp cinnamon
1 tsp baking soda
1 pinch salt
3/4 cup vegetable oil
1/2 cup white sugar
1/2 cup brown sugar/golden syrup (optional)
2 large eggs
11/2 cup grated carrots
1 cup grated apples
*For the golden syrup you can also use maple syrup or honey if you have any as a substitute.????

Carrot cake is my WEAKNESS ???? A super moist carrot cake, packed with juicy, plump raisins, topped with a thick and creamy cream cheese icing ???? I love it so much!
It’s super easy to make, similar to my carrot cake loaf cake with a few adjustments ????

All you need is????
For the cake:
2 large eggs, room temp
100g dark brown sugar
75g granulated sugar
50ml buttermilk
175ml vegetable oil
225g plain flour
1/2 tsp baking powder
½ tsp bicarbonate of soda
1/4 tsp salt
2 tsp cinnamon
1/2 tsp nutmeg
220g carrots (finely grated)
150g raisins
For the icing:
90g unsalted butter, softened
90g full-fat cream cheese
1 tsp vanilla extract
250g icing sugar, sifted
Tin size: 8x8”
Bake 160C (fan) 25-30 minutes or until a toothpick comes out clean
Make sure you let the cake cool before icing it ????
