Makes 12 muffins
Ingredients:
3 cups (270g) rolled oats
1 teaspoon cinnamon
2 teaspoons baking powder
1/4 teaspoon salt
1 cup (240ml) milk
2 eggs
1 cup (255g) unsweetened applesauce
3 tablespoons (60g) honey or maple syrup
1 teaspoon vanilla extract
1/2 cup (60g) dried cranberries – optional
Directions:
1. Preheat oven to 360F (180C).
2. In a large bowl, stir oats, baking powder, cinnamon and salt. Set aside.
3. In separate bowl whisk eggs, milk, honey, applesauce and vanilla.
4. Combine dry ingredients with wet ingredients. Mix until combined. Add cranberries or other additions that you like and mix.
5. Divide the batter evenly between 12 greased muffin cups or put paper muffin cups into muffin tin (optional) and spry the paper muffin cups with cooking oil.
6. Bake for 25-30 minutes or until golden.
7. Let cool before releasing from the tin.

Easy Cinnamon Applesauce Muffins! Vegan Gluten-Free Oil-Free Sugar-Free Dairy-Free WFPB
This cinnamon applesauce muffin recipe is going to be your new favorite healthy breakfast or treat!!! It's tasty, healthy and easy to make. It is also vegan, gluten free, refined sugar free, dairy free, oil free, egg free, (WFPB) whole food plant based, and guilt free.
You just need 1 1/4 cup oat flour, 1 cup apple sauce, healthy teaspoon of cinnamon, teaspoon of vanilla extract, teaspoon of baking soda, 1/4 teaspoon baking powder, 2 tablespoons maple syrup, and 2 tablespoons almond milk.
Mix it all together and spoon into muffin cups. Bake your cinnamon applesauce muffins at 350 for about 20 minutes. Let cool and then enjoy your amazing gluten free, vegan cinnamon applesauce muffin recipe for a healthy vegan breakfast, dessert or snack!! BAKED APPLE OATMEAL CUPS RECIPE
3 cups old-fashioned rolled oats
1 teaspoon baking powder
1/2 teaspoon cinnamon
1 cup organic buttermilk (you can sub any milk you prefer)
2 eggs, beaten
1/2 cup applesauce (I used cinnamon applesauce)
1 large apple, chopped (1 heaping cup)
1/4 cup raisins
Preheat oven to 350ºF. Spray a 12-count muffin pan with non-stick cooking spray or coat with coconut oil and set aside.
In a large bowl combine oats, baking powder, cinnamon, buttermilk, eggs, and applesauce. Mix together until everything is well incorporated.
Add in chopped apple and raisins and gently toss until they are evenly distributed throughout the batter.
Divide batter amongst all 12 muffin cups and pop in the oven for 25-30 minutes or until they have set through and are golden brown on top.
Cool and enjoy.
*I like to store these in an airtight container and keep them in the fridge. They will last a good week stored this way.

Ingredients:
4 cups of flour (500g)
2 cups of granulated sugar (400g)
2 large eggs
2 cups of applesauce (500g)
1 cup of melted butter (225g)
1 tsp of vanilla extract (5ml)
1 tsp of cinnamon (2.5g)
1 tsp of baking soda (4g)
1/2 tsp. of salt (2g)

Hello and welcome to In the Kitchen with Matt, I am your host Matt Taylor. Today I am going to teach you how to make Amazing applesauce muffins. They are super delicious, easy to make, and they are cheap. Let’s get started. Ok, for the ingredients, we need four cups of flour, two cups of sugar, two large eggs, two cups of applesauce, one cup of melted butter, one teaspoon of vanilla extract, finally one teaspoon of cinnamon, and one teaspoon of baking soda. First what we are going to is we are going to cream the butter with the sugar. Now what we want to do is we want to add the eggs. Then, we are going to add one teaspoon of vanilla extract. Next, let’s transfer this mixture of sugar, and butter, and extract, and we will go right in with the applesauce, we will get it all in there. Ok now, I am going to add my baking soda and my cinnamon to the flour. And I will wisk this up really well. And Now I am going to add my mixture to the flour. And let’s mix it all together. Scrape the sides a little bit, so we can get the extra flour all mixed in. And let’s go ahead and preheat the over to 350. Take our bowl here, and we can start filling the cups, about 3 quarters full. And then once you have all your cups filled with the batter, let’s go ahead and put these in the oven, remember 350 degrees, and we will cook them for twenty to twenty-five minutes, until they are risen and they are about golden brown, and then what you are going to do is take a toothpick and stab it with a toothpick, pull it out, if it is nice and clean you are good to go. If there is a little bit of batter left on it, put it in for a couple of more minutes. See you when they are done. Ok the muffins are out of the oven and ready to be eaten. First, here’s the breakdown. It took about 15 minutes for the prep and about 25 minutes for the baking time. Total cost $3.64, that makes it about 15 cents per muffin. That is awesome, 15 cents for a muffin. Now, I have never seen applesauce muffins at the store, at least my store, maybe they have some where you live. But uh, yeah, I mean 15 cents for a muffin, can’t beat that. So if you have a bunch of applesauce lying around, and you don’t want to eat it all, why don’t you make some muffins, these things are fantastic. So I am going to have one. Oh yeah, oh, oh, mm, mmm, mmm. Yeah, these are amazing. Mm, mm, not super sweet, a little dense.
