Ingredients:
90 g oat flakes(1 cup)
a pinch of salt
1 teaspoon baking soda
2 tablespoons mix seeds
200 ml kefir/ or yogurt(~ 3/4 cup)
1 medium egg
1 teaspoon apple cider vinegar
seeds for decoration
bake 30-35 minutes at 180°C /360°F
20 x 10 cm/ 8 x 4 inches baking form

Ingredients
1 cup (198g) granulated sugar
2 large eggs
1/2 cup (99g) vegetable oil
1 1/2 teaspoons vanilla extract
1/2 cup (57g) White Whole Wheat Flour
1cup (120g) Unbleached All-Purpose Flour
1/4 teaspoon baking powder
1/2 teaspoon baking soda
11/2 teaspoon cinnamon
1/2 teaspoon allspice
1/4 teaspoon nutmeg
1/2 teaspoon salt
1/2 cup rolled oats (old fashioned or quick cooking)
3/4 cup applesauce, unsweetened
Directions
Preheat the oven to 350°F. Spray non-stick baking spray 9″ x 5″ loaf pan
In a large bowl, mix together the sugar, eggs, oil and vanilla
In a separate bowl, medium size, mix together the flours, baking powder and soda, spices, and salt, and add them to the wet ingredients in the bowl
Mix in the rolled oats, applesauce
Pour the mixture into the prepared loaf pan. Bake the bread for 50 to 55 minutes, until a toothpick inserted into the center comes out clean. Allow to cool completely on rack.

Ingredients:
1 cup (90g) Rolled oats
3 cups (375g) All-purpose/Bread flour
1/4 cup (80g) Maple syrup
1 1/3 cups (320ml) Boiling water
1¼ teaspoons Instant dry yeast
1½ teaspoons Salt
2 tablespoons (30g) Melted butter
Directions:
1. In a large mixing bowl, or in the bowl of an electric mixer combine boiling water, oats, maple syrup, butter and salt. Mix and let cool slightly.
2. Add flour, yeast and stir until dough forms. Knead the dough for 7-8 minutes.
3. Place the dough in a lightly greased bowl, cover and let rise 1 hour, until doubled.
4. Gently deflate the dough, shape it into a log. Place the log in a lightly greased 9 x 5-inch loaf pan. Cover the pan, let rise for about 1 hour or it's crowned about 1-inch over the rim of the pan.
5. Preheat oven to 350°F (175°C).
6. Brush with water and sprinkle some rolled oats on top of the loaf. Bake for 40-45 minutes. If the bread appears to be browning too quickly, cover with aluminum foil for the rest of baking.
7. Let cool completely before cutting.

OAT FLOUR BREAD RECIPE
(makes 4 slices)
Ingredients:
3/4 cups ground oats, or oat flour (75g)
1 tbsp tapioca starch or cornstarch
1/2 tsp baking powder
1/4 tsp baking soda
1/8 tsp salt
2 egg whites
1 tsp olive oil
2 tbsp Greek yogurt, or sour cream
1 tbsp water
NUTRITIONAL INFO (per slice):
99 calories, fat 2.5g, carb 14.1g, protein 4.8g
Preparation:
In a bowl add all the dry ingredients, ground oats, tapioca starch, baking powder, baking soda and salt, and mix together.
In separate bowl add the egg whites, Greek yogurt, olive oil and water. Whisk well.
Pour the wet ingredients into the dry ingredients and gently fold in.
Grease your glass container or microwave safe bowl (I use 6 inch or 15cm square container) and pour in the batter.
Microwave on high for 1.5 - 2.5 mintues (depends on the power of your microwave).
Let it cool for 2 minutes, then transfer to a wire rack.
Slice diagonally and then horizontally, you'll have 4 slices.
It's great for making sandwiches, toast or grilled cheese.
