How To make Arni Souvlaki
-NANCY BERRY (CWBJ78A) 1 Leg lamb;about 4 lb.
boned
1/2 cup Olive oil
1/2 cup Dry white wine
Juice of 1 lemon 2 teaspoons Dried oregano
20 milliliters Garlic :
crushed or chopped
3 Bay leaves -- broken in pieces
-salt and freshly ground -black pepper to taste
Cut lamb into 1 1/2 inch cubes and place in a non-reactive (glass or earthenware) dish. Add remaining ingredients to lamb, mix well to coat meat, and cover. You can also place all ingredients in a heavy plastic bag and seal. Leave in refrigerator to marinate for 12-24 hours, stirring meat occasionally. Lift lamb out of marinade and thread onto metal skewers. Pieces of bay leaf may be placed between lamb cubes. Since most vegetables have different cooking times, I would suggest that you skewer peppers, onions, etc. separately and serve them together with the lamb. If you wish these may be marinated also (in a separate bag.) Cook under a hot broiler or over glowing charcoal, turning and basting frequently with marinade. I like this best medium rare. Keep checking the meat -- the cooking time will vary because charcoal fires are so variable. Place on a platter and garnish with parsley and lemon wedges. Serves 6-8.

سوولاکی - کباب یونانی - Chicken souvlaki
Souvlaki in greek simply means “meat on skewers”
But in Greece, they use it to describe the actual meal which is a pita bread filed with a skewer of meat & tatziki.
It is also made with chicken, beef or lamb but the most common one is with pork!

Souvlaki is probably the most popular fast foods in greece! I just cant wait to go back and sit in a typical busy & noisy greek restaurant, in one of those tiny/narrow roads with greek music playing at the background and have a souvlaki with a pint of cold beer! Opaaaa !

Ingredients for marinade:

1 tbsp rosemary, 2 cloves of garlic - 1 tsp of each : Thyme, red pepper, cinnamon, salt, paprika, cumin , 1 lime juice , 1 tbsp dried mint - bell peppers cut into cubes for skewing.

ریشه کلمه سوولاکی در یونان باستان به معنای سیخ است و اکثر گوشتهایی که با سبزیجات به سیخ کشیده وکباب میشوند را سوولاکی میگویند. معروفترین آن با گوشت خوک است ولی با گوشتهای دیگر هم مثل مرغ و گاو وحتی ماهی هم درست میشود. معمولا گوشت برای مدت یکشب در مواد خاصی خوابانده میشود تا طعم بگیرد و نرم شود و سپس با سیخهای کوچکفلزی یا چوبی کباب میشوند. و اکثرا بصورت فست فود لای نان پیتا با کمیماست و خیار به عنوان سس روی آن و در کنار سیب زمینی سرخ کرده سرو یا فروخته میشود.

مواد لازم برای خواباندن گوشت:
۱ قاشق رزماری، ۲ حبه سیر، آویشن، فلفل قرمز ، دارچین ،نمک, پاپریکا، زیره ( ۱ قاشق چایخوریاز هرکدام)، ۱ عدد لیموترش، ۱ قاشق نعنای خشک- فلفل دلمه ای رنگی .
???? اگر از گوشت قرمز استفاده میکردید نمک را قبل از کباب کردن به آن اضافه کنید.

Easy original Greek pork skewer souvlaki in pita
Recipe below ⬇️
• ingredients:
- pork shoulder in cubes (about 2lb makes around to 10 skewers)
- salt
- pepper
- oregano
- olive oil
- lemon juice
- paprika ( optional)
• instructions:
- cut the pork shoulder in cubes about 1.5 - 2 inches thick
- add all the seasoning ( salt, pepper, oregano, olive oil, lemon juice)
- mix very well
- add the pork at the skewers
- and cook them into a skillet or pan, or bake or grill them ( you choose)
- when are ready you can enjoy either as they are with grilled pita or grilled bread and Horiatki
- or you can make pita souvlaki with tzatziki, onion, tomatoes and patates( French fries)
