This easy breakfast casserole makes for a delicious weekend breakfast, it’s ideal for meal prep, and it’s perfect for special occasions and holidays like Christmas morning, or Easter brunch. You can easily feed the entire family (and then some), but you may not have much in the way of leftovers as it always gets devoured! Trust me, it's the best!

1 lb Breakfast Sausage
16 oz colby jack cheese
1 1/2 cups whole milk
20 oz defrosted hash brown
1-2 tsp vegetable base
8 eggs
1 tbsp garlic paste
1 diced onion
1/2 diced green and red bell pepper
1 tbsp butter
4-6 strips thick cut bacon
1/4 cup grated parmesan cheese (garnish)
diced green onion or parsley for garnish
salt, pepper, garlic, onion powder
Bake at 350 for 50-60 minutes

Everything you love about breakfast in one easy and delicious casserole. Perfect for Thanksgiving and Christmas morning or whenever you have company over. Pop it in the oven when you get up and you are good to go.

1 lb bulk sage pork sausage
1 cup green bell pepper, chopped
1 cup red bell pepper, chopped
10 eggs
2 cups whole milk
¼ tsp ground black pepper
½ tsp garlic powder
½ tsp salt
3 cups frozen country style hash browns
1 cup French’s crispy fried onions
8 oz cheddar cheese
hot sauce, optional
Bake at 350 F or 177 C uncovered for 40 minutes. Then cover with foil and bake 10 more minutes.
*Be sure to let the casserole sit out at least 20-30 minutes before baking because the sudden changes in temperature may cause the dish to shatter or break.

Welcome back to my channel or welcome if you are new! Today I am sharing two breakfast casserole recipes that are not only delicious, but quick and easy to make. This time of year, I am always looking for something quick, easy, and comforting to make and these recipes do not disappoint!
BREAKFAST PIZZA
1 (8 oz.) can crescent rolls
1 lb. breakfast sausage
1 (28 oz.) package frozen hash browns with onions and peppers
1 cup shredded Cheddar cheese
4 large eggs
1/2 cup milk
1 tsp. salt
1/2 tsp. pepper
Preheat oven to 375*. Grease a 13-x 9-inch baking dish and place crescent rolls, pressing on bottom and partially up sides. Bake for 5 minutes.
Cook sausage until no longer pink. Drain well.
Prepare frozen hash browns according to package directions.
Sprinkle sausage over crescent rolls, once they are out of the oven. Spoon hash browns over sausage. Sprinkle shredded cheese on top. (Cover and chill up to 24 hours, if desired.)
Whisk together eggs, milk, salt, and pepper. Pour evenly over casserole.
Bake, uncovered, at 350* for 30 to 35 minutes or until set.

Breakfast Casserole, quick, easy, and delicious
Breakfast or dinner, which do you prefer? I love breakfast for dinner. This casserole doesn't disappoint. Serve with a side salad, grilled asparagus, or your favorite side and you have a delicious dinner. Don't forget the salsa! Or, serve with your favorite morning fruit and you have a delicious, hearty breakfast. Whichever you choose to make it for, I just hope you will make it. Let me know if you do. Recipe below.

Ingredients:
2 cups hash brown potatoes O'Brien (if you can't find these potatoes, add a few diced onions and red or green bell peppers)
6 x-large eggs
1 1/4 cups milk, I used half evaporated and half heavy cream
1/2 lb breakfast sausage
2 cups cheese, shredded sharp and/or mild
2 Tbsp mascarpone cheese, can substitute cream cheese
1/2 tsp paprika
1/-1/4 tsp ground red pepper
salt & pepper to taste
Directions:
Preheat oven to 350 degrees.
Spray 8X8 baking dish with non-stick spray.
Add sausage to a skillet, breaking up and cooking until done or almost done. Remember, it will continue cooking in the oven. Meanwhile,
in a separate bowl, beat eggs with milk. I used a combination of evaporated milk and heavy whipping cream. You can use whole milk or half & half. Your choice. Whip in the mascarpone cheese. Stir in cheeses, and seasonings. When sausage is cooked, add to egg mixture, stirring to combine. Add potatoes to bottom of the baking dish, spreading out evenly. Pour mixture into the sprayed baking dish over the potatoes. Bake 45-55 minutes or until a toothpick inserted in the middle comes out clean.
If top of casserole starts getting too brown, cover with aluminum foil and continue to bake.
