Ingredients:
For moutabal:
1 medium eggplant rousted
1 clove of garlic minced
1/4 cup tahini
half lemon juice
1 tbsp yogurt
salt
olive oil on top
For baba ganoush:
1 eggplant rousted
1 clove of minced garlic
1 tbsp parsley minced
1 tbsp chopped green bell pepper
half small tomato cut it in to small pieces
1/4 small onion finely chopped
half lemon juice
olive oil on top

Baba Ghanoush
Recipe in English:
Ingredients:
-Baigan (Eggplant) round 3
-Lehsan (Garlic) cloves 10-12
-Tahini paste 8 tbs
-Lemon juice 3-4 tbs
-Namak (Salt) ½ tsp or to taste
-Lal mirch powder (Red chili powder) ½ tsp or to taste
-Olive oil 4 tbs
With Tomato & Capsicum:
-Tamatar (Tomato) deseeded & finely chopped 1 tbs
-Shimla mirch (Capsicum) finely chopped 1 tbs
With Coriander & Garlic:
-Hara dhania (Fresh coriander) finely chopped 1-2 tbs
-Lehsan (Garlic) finely chopped 1 tsp
With Garlic:
-Lehsan (Garlic) finely chopped 1 tsp
Directions:
-Add cuts on eggplants and stuffed with whole garlics.
-Heat griddle,place stuffed eggplants,cover and roast for 15 minutes (each side) then turn and roast until soft and skin is burnt (approx.30-40 minutes).
-Let the eggplants cool and cut into two halves.
-With the help of the spoon,scoop out the flesh and discard skin,excess seeds and drain or remove excess liquid.
-Now chop well the eggplant.
-In bowl,add chopped eggplant,tahini paste,lemon juice,salt,red chili powder and mix well.
-Add olive oil and mix well.
-Divide prepared eggplant paste into three portions.
With Tomato & Capsicum:
-In prepared eggplant paste,add tomato,capsicum and mix well.
With Coriander & Garlic:
-In prepared eggplant paste,add fresh coriander,garlic and mix well.
With Garlic:
-In prepared eggplant paste,add garlic and mix well.
-Sprinkle paprika powder,drizzle olive oil & serve with pita bread.

-Baigan mein cuts laga lein aur sabut lehsan ko cuts ka ander dal dein.
-Tawa ko garam karein aur stuffed baigan rakh dein,dhak ker 15 minutes kliya roast karein (each side) phir turn ker lein aur naram hunay & jal janay tak tak roast ker lein (approx.30- 40 minutes).
-Baigan ko thanda ker lein aur do hisson mein cut ker lein.
-Spoon ki madad sa baigan ka ander ka gooda nikla lein,skin ko pheek dein aur excess nikal lein aur excess liquid ko remove ker lein.
-Ab baigan ka gooda ko ache tarhan chop ker lein.
-Bowl mein chopped baigan,tahini paste,lemon juice,namak aur lal mirch powder dal ker ache tarhan mxi ker lein.
-Olive oil shamil karein aur ache tarhan mix ker lein.
-Baigan ka paste ko teen portions mein divide ker lein.
With Tomato & Capsicum:
-Tayyar baigan ka paste mein tamatar aur shimla mirch dal ker ache tarhan mix ker lein.
With Coriander & Garlic:
-Tayyar baigan ka paste mein hara dhania aur lehsan dal ker ache tarhan mix ker lein.
With Garlic:
-Tayyar baigan ka paste mein lehsan dal ker ache tarhan mix ker lein.
-Paprika powder aur olive oil dal dein & pita bread ka saath serve karein.

Baba Ganoush: Give this Baba Ganoush Recipe a go this weekend! A unique Baba Ganoush Recipe perfect combo with Pita Bread and Vegetables. Try it and enjoy it.
Baba ganoush Recipe in English:
Ingredients:
5-7 Egg plants
1 tsp Garlic (chopped)
1 tbsp Lemon juice
1/4 cup Tahini paste
1 tbsp Olive oil
Salt to taste
1/4 tsp Cumin powder
Paprika a pinch
Coriander for garnish
Ingredients for tahini sauce:
1 cup Sesame seeds
1/2 cup Olive oil
Directions:
Preheat the oven, line a baking tray with parchment paper to prevent the egg plants from sticking to the pan.
Roast the egg plants at 180 degree for 12 to 15 minutes or until skin is soft.
Scoop out the flesh of eggplants with a large spoon leaving the skin behind.
In a bowl add tahini sauce, garlic, lemon juice and mix well.
Then add eggplant flesh, salt, cumin, olive oil, and mix it well.
Garnish with paprika, coriander leaves and olive oil.
Serve with carrots, cucumbers, olives and pita bread.
Directions for tahini sauce:
Roast sesame seeds and let it cool for 1 to 2 minutes.
In a blender, blend sesame seeds and gradually add olive oil.
Blend until smooth and your sauce is ready.
Preparation time: 15 minutes
Cooking time: 30 minutes
Serving: 4-5

Ingredients:
2 Medium-large eggplants
2 Garlic cloves, crushed
1/3 cup (80g) Tahini, raw
1/4 cup (60ml) Olive oil
2 tablespoons Lemon juice
Salt to taste
1/2 teaspoon Cumin
1/4 teaspoon Paprika
For garnishing (optional):
Paprika
Olive oil
Parsley, chopped
Directions:
1. Preheat oven to 450F (225C). Line a baking tray with parchment paper or with a foil.
2. Pierce the eggplants with a fork, place them on the baking sheet and roast them for 40-50 minutes, or until it is soft and collapses to the touch. Remove from the oven and allow to cool.
3. Peel the skin (or just scoop the flesh out) and remove as much seeds as possible. Drain the eggplants from the liquids and place in a food processor.
4. Add garlic, lemon juice, olive oil, tahini, salt, pepper and paprika. Process just until everything is blended, do not over process.
5. Transfer to a serving dish, sprinkle with chopped parsley, paprika, and some olive oil. Serve with pita and veggies.

Easy Baba Ganoush Recipe - Delicious Vegan Dip
Today we are making Baba Ganoush, it’s a delicious Labanese dip made from roasted eggplants. Traditionally Baba Ganoush is made by grilling the eggplants which gives it an additional layer of smoky flavor but for this recipe we are using an oven. Baba Ganoush is a way of rediscovering eggplants. It is one of my favorite eggplants recipe ever as it is gluten free and naturally Vegan.
Baba Ganoush is similar to hummus but lighter and creamier. You can serve this with so many different dishes, it is one of those dips which I just can’t stop eating and I am so happy that it's healthy and low in calories. Baba Ganoush can be eaten with pita bread or raw vegetables such as carrots, peppers or cucumber.
