How To make Bacon& Cheese Sourdough Muffins
4 sl Bacon
1 1/2 c All-purpose flour
2 ts Baking powder
1/4 ts Baking soda
1/2 ts Salt
1/4 c Sugar
1/2 c Shredded cheddar cheese 2-oz
1 Egg
1/2 c Sourdough starter
2/3 c Milk
1/3 c Vegetable oil or bacon
- drippings
In a skillet, cook bacon over medium heat until crisp. Reserve bacon drippings, if desired. Drain cooked bacon on paper towels. Crumble and set aside. Grease 12 muffin cups or line with paper liners; set aside.
Preheat oven to 400~F. In a large bowl, sitr together flour, baking powder, baking soda, salt and sugar. Stir in cheese; set aside. In a medium bowl, beat egg. Stir in sourdough starter, milk and oil or drippings. Add to flour mixture. Stir with fork until dry ingredients are just moistened. Fold in crumbled bacon. Fill prepared muffin cups 2/3 to 3/4 full with batter. Bake in preheated oven 20 to 25 minutes or until golden brown. Remove from muffin cups. Serve hot. Great for breakfast with a glass of orange juice! These turned out absolutely WONDERFUL. I would suggest greasing the muffin tins very well. The cheese tends to make them stick a little! Ingredients needed for each sandwich you make:
1 English Muffin (regular, extra crispy or sourdough are the best)
1 egg
1 slice of Spam or your favorite similar type canned meat
1 slice of your favorite cheese
1 slice of tomato
Butter (softened so you can spread it, and a little to cook each egg with)
A dash of your favorite hot sauce or seasoning (optional)

Ingredients
BASE:
12 large eggs
2 tablespoons finely chopped onion, (red, white or yellow/brown)
Salt and pepper, to taste
BACON CHEDDAR:
1/4 cup cooked bacon, chopped
1/4 cup shredded cheddar cheese
GARLIC MUSHROOM PEPPER:
1/4 cup sliced brown mushrooms
1/4 cup red bell pepper, (capsicum), diced
1 tablespoon fresh chopped parsley
1/4 teaspoon garlic powder or 1/3 teaspoon minced garlic
Method
Preheat oven to 180°C. Lightly spray a 12-cup capacity muffin tin with nonstick oil spray.
In a large bowl, whisk together eggs and onion. Season with salt and pepper, to taste.
Add egg mixture halfway up into each tin of a greased muffin tin.
Divide the three topping combinations into 4 muffin cups each.
Bake for 20 minutes.
Serve OR store in an airtight container in the refrigerator for up to 4 days and reheat when ready to serve.

Bacon & Cheddar Strata -- Lynn's Recipes Easter Brunch
Lynn demonstrates how to make a delicious Bacon & Cheddar Strata that is perfect for Easter Brunch. This is also appropriate for any other holiday or brunch get together. From Taste of Home.
1 pound bacon strips
1 medium sweet red pepper, finely chopped
8 green onions, thinly sliced
½ cup chopped oil-packed sun-dried tomatoes
8 slices white bread, cubed
1 cups (8 ounces) shredded cheddar cheese
6 eggs, lightly beaten
1-1/2 cups milk
¼ cup mayonnaise
½ teaspoon salt
¼ teaspoon ground mustard
1/8 teaspoon black pepper
Spray a 9 x 13 casserole dish with cooking spray. Set aside.
In a large skillet, (or however you prefer to prepare bacon), cook bacon until crisp; drain on paper towels. Crumble in a small bowl. Add the red pepper, onions and sun-dried tomatoes. Set aside.
In another bowl, combine the eggs, milk, mayonnaise and seasonings.
In the baking dish, layer half of the bread, half of the bacon mixture, and half of the cheese. Top with the remaining bread and bacon mixture. Pour the egg mixture over the top and sprinkle with the remaining cheese. Cover and refrigerate overnight.
Remove from the refrigerator 30 minutes before baking.
Preheat oven to 350°. Cover the casserole with aluminum foil and place in the oven and bake for 40 minutes. Uncover and continue to bake for 5-10 minutes longer or until a knife inserted near the center comes out clean. Let stand for 5 minutes before cutting and serving.
Yield: 10 servings.

1 pkg english muffins
soy cheese
Vegan Mayo
1 green bell pepper cut in strips
1/2 white onion cut in strips
salt to taste
veggie bacon strips
Saute onion and bell pepper strips until tender. Add salt to taste. Lightly toast english muffins. Spread mayo on either side of bun then layer cheese, bacon strips, and veggies. Yum!
