Fresh Bacon & Cheese

Yield: 7 mufins
Ingredients
164 grams Plan flour
6 grams baking powder
125 grams milk
110 grams eggs, lightly beaten { 2 lge eggs }
62 grams butter, melted
12 grams caster sugar
Mixed Cheese 40 grams
Chopped Bacon 80 grams
Directions
Preheat the oven to 180c fan.
Line muffin tins with paper liners.
Sift the flour, baking powder, & sugars together in a large bowl. Stir with your hand to be sure the ingredients are combined. mix the milk, eggs & then melted butter. Make a well in the middle of the dry mixture, pour the wet mixture into the well, and fold until just combined. There will be some lumps but don't overmix, Add the cheese & chopped bacon fold in gently to combine.
Topping : with mixed cheese
Using a 1/3 cup, or spoon the batter into the muffin cups to fill the liners dont over fill . Bake for 18 minutes, until a cake tester comes out clean and the tops are nicely browned.
Cool on a baking wire, and eat Laters ????

• 1 pound bacon
• 1/3 cup bacon drippings
• 1 large egg
• 3/4 cup milk
• 1 3/4 cups all-purpose flour
• 1/4 cup brown sugar
• 1 tablespoon baking powder
• 2 cups shredded cheddar cheese

1️⃣ 00:15 - Lay bacon out on a baking sheet in an even layer. Place the baking sheet into a cold oven. Set the temperature to 400 degrees and set a timer for 20 minutes. After 20 minutes check the bacon and remove when crispy. Transfer to a paper towel lined plate to drain. Reserve the drippings and measure out 1/3 cup. Once the bacon is cool, crumble it.
2️⃣ 00:38 - In a medium mixing bowl, combine the egg, milk, flour, sugar, baking powder, and bacon drippings. Stir until combined. There will still be some lumps. Stir in the bacon and cheese until evenly distributed.
3️⃣ 01:43 - Divide the batter among a lightly greased muffin tin. Bake at 400 degrees for about 15 minutes, until golden brown. Remove from the pan and cool or eat warm.

Bacon & Onion Muffins Chinese Style
Welcome to Chinese Cooking. My name is Xiao Wei, even at a early age I have always had a strong passion for Cooking. My family still live in northern Chinese, where I visit each year and pick-up new Asian/Chinese recipes.
Ingredients:
40g Bacon
1 Red Onion
1 Egg
40g Oil
50g Milk
90g Plain Flour
5g Baking Powder
Salt to Taste
Method:
1. Dice the onion and bacon finely.
2. Fry the bacon for 5 minutes.
3. Add the onion and fry for 3 minutes until soft.
4. Remove from heat to cool down.
5. Break a egg into a mixing bowl and beat well.
6. Add oil, milk and mix well.
7. Sieve flour, baking powder and soda into the egg and mix ingredients.
8. Add the fried bacon and onion, fold with a rubber or wooden spoon until evenly mixed.
9. Fill muffin cups to about 80% full.
10. Place into pre heated oven at 180 degree and cook for about 25 minutes.
11. Remove from oven and serve.
