How To make Baja Blintzes
2 tb Butter or margarine
3 tb All-purpose flour
1/2 c Chicken stock or bouillon
1 c Milk -OR- half & half
1 ts Onion; grated
2 tb Canned diced green chilies
1/4 ts Salt
1/2 c Monterey Jack cheese; shred
3 Hard-cooked eggs; sliced
1/2 c Ham; cooked, chopped
6 (8-inch) flour tortillas
Preheat oven to 375~F. In a small saucepan, melt butter. Stir in flour. Cook and stir 2 minutes. Stir in stock and milk. Cook, stirring constantly, over medium heat until thickened; remove from heat. Stir in onion, chilies, salt and cheese. Arrange 1/2 a sliced egg and 1 rounded tablespoon ham on each tortilla. Spoon about 2 tablespoon cheese sauce over ham. Fold both sides of each tortilla over filling; then fold top and bottom to slightly overlap in center. Place filled tortillas, folded-side down, in a shallow baking pan. Cover with foil. Bake in preheated oven 10 to 12 minutes or until heated through. Serve warm. Makes 6 servings.

It's saturday, you're exhausted and the kids are crazy hungry. You have no money to lose on fast food delivery. What to do ? Try this super quick recipe that will convince both adults and kids ! Get the kids going by making them cook the crepes while you take care of the filling. You'll all love it ! It's time to upper your savoury crepes game and don't be fool by the simplicity of it, it's dead good !
Ingredients for 4 full crepes:
- 150 gr of flour
- 200 ml of water (you can substitute with milk for a softer taste or blond beer for a richer taste)
- 2 eggs
- 125 gr of corn
- 420 gr of red kidney beans
- salt
- Burrito mix (You'd like to make your own mix ? You'll need: paprika, cumin, chilli, onion powder, garlic powder, oregano, a touch of ginger powder)
- fried onions
- the sauce of your choice (here, mayo)
You can add any ingredient of your choice to the filling like bell peppers or ham cubes.
To make it vegan, simply skip the eggs (and the mayo of course). The crepes here are thin and neutral flavoured since they're meant to be stuffed. Therefore, you definitely can skip the eggs without thinking about a substitute.

The beauty about these savoury crepes is that they are made first then kept frozen for later use. Once frozen the crepes have to be pan fried which gives the crepes a crispy layer outside and a warm creamy filling inside.
They are perfect to be made in advance in big batch so you have them ready for any occasions. In France those crepes have been round for more than 30 years and are loved by adult and children alike. They are simply one of the best form of savoury crepe you will ever try.
