How To make Baked Snapper Gremolata
1 1/2 lb Potatoes, peeled & sliced
1 x 1/4" thick
2 tb Olive oil
1 1/2 ts Fresh thyme leaves OR
3/4 ts Dried thyme
1 x Coarse black pepper
1 tb Parsley, chopped
1 t Lemon zest, chopped fine
1 t Garlic, chopped fine
1 tb Fresh lemon juice
1 1/2 lb Red snapper
NOTE: dish may also be prepared with cod, flounder, tilefish, turbot or even oily fish such as bluefish, mako shark or seatrout. Heat oven to 400 degrees. In large bowl, toss potatoes with olive oil, 1 teaspoon of the fresh thyme (1/2 tsp. of the dried), a pinch of salt and a grinding of pepper. Spread mixture in an even layer in 15x10 inch jelly roll pan. Roast until potatoes are browned, about 35 minutes. Remove pan from oven and increase temperature to 450. In small bowl, blend parsley, lemon zest and remaining thyme. Sprinkle lemon juice then herb mixture evenly over fish fillets and sprinkle lightly with salt and pepper. Arrange fish on top of potatoes. Return pan to oven and bake until fish is opaque in center, about 10 minutes. For each individual serving, scoop up crusty potatoes topped with fish. Garnish with fresh parsley sprigs if desired. Nutrients per serving: calories 233, protein 19g, carbohydrates 27g, fat 6g,dietary

Grilled Branzino with Lemon Gremolata Recipe
Ingredients
1 whole branzino- cleaned or 2-4 filets
1 tbsp grape seed oil (optional)
1-4 tbsp olive oil
1 tsp salt
1 tsp pepper (I used dash of dacy salt & pepper blend)
1 tsp garlic powder
1/4 tsp onion powder
1 lemon
a small handful of fresh herbs- parsley, thyme, or rosemary
Lemon Gremolata:
1 bunch flat-leaf parsley, finely chopped (about 1 cup, tender stems ok)
1/4 cup lemon juice
2 garlic cloves, finely chopped
1/2 cup olive oil (I used garlic olive oil)
optional chili flakes
Instructions:
If you buy a whole fish- make sure it is gutted and descaled.
Rinse it off inside and out (or filets) and pat it extra dry.
Season generously with salt and pepper and additional seasonings you decide to use. (Inside and out if using a whole fish).
(Slice some lemons and place inside the cavity of the fish. Tuck in some fresh herbs like thyme, rosemary, sage or parsley.)
Heat the grill (I used a grill pan) to medium-high heat, 380-400F.
Place the fish on hot, greased grill. Grill, not moving it for about 5 minutes before flipping over. Cover grill pan with a lid and allow fish to cook for 10-15 minutes.
While the fish is grilling make the flavorful Lemon Gremolata, placing all ingredients in a bowl and stir.
Place fish on a platter and right before serving spoon the flavorful Gremolata over top.
