How To make Banana Oatmeal Pecan Bread
1/2 c Margarine, room temperature
1/4 c Honey
2 Eggs
3 Bananas, mashed
1/4 c Buttermilk
1 ts Vanilla
1 ts Baking powder
1 ts Baking soda
1/2 ts Salt
1/2 c Oats
2 c Wholewheat flour
1 c Broken pecans
Preheat oven to 350F. In a medium sized bowl, cream together butter & honey till mixture is smooth. Beat in eggs one at a time. Stir in bananas, buttermilk & vanilla. When well blended, mix in baking powder, soda & salt. Blend in the rest of the ingredients. Turn mixture into a buttered loaf pan 9" by 5" by 3". Bake for 55 minutes. Cool on wire rack. This vegan banana bread seriously tastes like regular banana bread. It's so moist and fluffy! Full of fresh banana flavor with hints of cinnamon and vanilla. Not to mention it has such beautiful moist cracks and crevices which I love. It's the perfect gift-giving or shipping bread because, like all banana bread, the flavor is even better the next day!
????Tips for making the Best Vegan Banana Bread????
➜Use ripe bananas. Ripe bananas are sweet and easy to mash, which makes them perfect for banana bread. Once the peel starts to get brown spots it's ready!
➜Don't over stir. This is a quick bread so you want to be careful not to over stir the batter or you'll have dry bread on your hands. Just stir enough to combine the ingredients. I like to make this bread by hand and not use a mixer to prevent overworking the batter.
➜Use your favorite vegan brands. In this recipe, I use Earth Balance butter instead of real butter and Silk original almond milk instead of buttermilk. I like these brands but feel free to use your favorites.

* 5 large ripe to overripe banana
* 1 cup white sugar (or as desired)
* 2-2 ½ cups flour
* ¾ cup coconut oil
* 2 large eggs
* ½ cup buttermilk
* 1 tablespoon vanilla extract
* 1 teaspoon baking powder
* ½ teaspoon nutmeg
* 1/3 cup yogurt (optional)
* 1 cup Pecans (or as desired)
- Mash bananas, add eggs, sugar and mix
-Add vanilla extract, coconut oil, yogurt, buttermilk and mix
-Add baking powder, nutmeg, crushed pecans, flour and mix
-Transfer to a lined baking pan and top with more pecans as desired or other dried fruits or nuts
-Bake in a pre-heated oven @325 degrees Fahrenheit for 50 minutes or until toothpick inserted comes out clean or dry
-Slice once slightly cool and enjoy
