1 ts Salt 3 c All-purpose flour 1 ts Baking soda 1 ts Cinnamon 2 c Sugar 3 lg Eggs 1 1/2 c Oil 1 cn Crushed pineapple in juice - 2 c Bananas; mashed with About 6 1 1/2 ts Vanilla extract Mix dry ingredients. Add the remaining ingredients. Blend (do not beat) (I use my mixer on low) Pour into greased tube pan and bake at 350 for approximately l hour, 20 minutes. Check at one hour. After you take it out of the oven, set aside to cool without removing from pan. Nancy Bushner-- this is EXtrEMELY moist - better baked a day ahead and freezes GREAT! -----

Bake at 160°c for 30-35mins loaf cake pan size - 4x 7 Bowl and beater not contain water,it should be clean and dry ,not use spoil egg(near to exper date),add 1/4 tsp of lemon juice or salt or cream of tartar before the whisk, and add sugar little by little during the whisk, Eggs should be at room temperature and do'not mix egg whites with egg yolk. these factors more important to make a prefect egg white meringue and perfect cake.

Cream butter and sugar until light and fluffy. Add eggs; mix well. Stir in banana. Sift together flour baking powder, baking soda, and salt. Add to creamed mixture; mix well. Fold in pineapple and coconut. Pour into greased and floured 9 x 5 loaf pan. Bake at 350 for 1 hour and 10 minutes (I had to bake mine for an extra 8 minutes). Let stand for 10 minutes.
