How to Make A Moist 7UP CAKE from a BOX CAKE MIX with a Homemade LEMON GLAZE using Easy baking hacks

Bump up that yellow cake mix into a soft, moist and airy 7UP lemon box cake. This makes a delicious homemade cake, drizzled with a homemade lemon glaze as well!

Ingredients Used
1 yellow box cake mix
1 (3.4 oz) pack of instant Lemon pudding
4 eggs @ room temperature
2/3 cup vegetable oil
1 cup cold 7UP
1 tsp fresh lemon zest
1 -2 tsp freshly squeezed Lemon juice
1 tsp pure vanilla extract
For the glaze
1 cup powdered sugar
1 Tbsp freshly squeezed lemon Juice
1-2 Tbsp cold whole milk
1 tsp pure vanilla extract
Mix all ingredients and follow the box instructions for mixing. Bake at 350 F for about 35-36 minutes if using a bundt pan like I do. A toothpick inserted should come out clean!
Allow cake to cool down completely. Mix ingredients for the glaze and drizzle the yummy glaze all over the cake. Allow it to set before serving. Enjoy!

This cake is very moist and delicious with the combination of pineapple and a fluffy white frosting that taste like marshmallow cream!!!
CAKE RECIPE
1/2 CUP SHORTENING,1/2 CUP BUTTER
2 CUPS SUGAR
4 EGGS
2 2/3 CUPS SIFTED CAKE FLOUR (I USE WHITE LILY ALL PURPOSE)
2 TSP. BAKING POWDER
1/2 TSP. SALT
1 CUP MILK
1 TSP. VANILLA
GREASE & FLOUR 4 CAKE PANS ( I USE BAKERS JOY) AND PREHEAT OVEN TO 350*
CREAM SHORTENING, ADD SUGAR GRADUALLY. CREAM UNTIL MIXTURE IS VERY FLUFFY. ADD EGGS ONE AT A TIME, BEATING WELL AFTER EACH ADDITION. SIFT FLOUR, BAKING POWDER AND SALT TOGETHER, ADD TO MIXTURE ALTERNATELY WITH MILK. ADD FLAVORINGS.
BAKE UNTIL GOLDEN , APPROXIMATELY 20-25 MIN.
COOL ON COOLING RACK.
FLUFFY FROSTING RECIPE
3/4 CUP SUGAR
1/4 CUP KARO
2 TBSP WATER
1 TSP VANILLA FLAVORING
3 EGG WHITES
ADD SUGAR, SYRUP AND WATER TO SAUCEPAN AND COOK TO 240* ( SOFTBALL STAGE)
POUR SLOWLY OVER STIFFLY BEATEN EGG WHITES, BEATING CONSTANTLY.
PINEAPPLE FILLING
1 & 2/3 CAN CRUSHED PINEAPPLE
3/4 CUP SUGAR
JUICE OF 1/2 LEMON
1/2 STICK OF BUTTER
1 1/2 TBSP. CORNSTARCH MIXED WITH JUST ENOUGH WATER TO MIX.
COOK UNTIL BUTTER IS MELTED AND ADD CORNSTARCH AND COOK UNTIL THICKENED.

A yellow cake mix and vanilla pudding make this delicious pineapple cake such an easy dessert. Pineapple 7UP Cake has soda in the cake and coconut topping.
WHAT ARE THE INGREDIENTS FOR A 7UP CAKE?
Some 7UP cakes are made from scratch and are in a bundt cake form, but this pineapple 7UP cake is made from a box cake mix. A small box of dry pudding mix, eggs, oil and 7UP make this cake not only easy, but very moist and flavorful.
HOW TO MAKE 7UP CAKE
The cake part of this recipe is very easy. Simply pour all of the ingredients except the 7UP in a large mixing bowl. Use a hand mixer or stand mixer to beat the batter together well. Lastly, mix in the 7UP. The 7UP will give it flavor, plus add a little bit of a light texture to the cake. Bake in a 9×13 baking pan for about 35-40 minutes. The center of the cake will spring back when you touch it. Don’t open the oven before the cake “looks” done (use your oven light) or the cake might fall in the center.
While the cake is baking, prepare the icing so you can spread it on the warm cake.
Ingredients
For the Cake:
1 box yellow cake mix
1 small box vanilla instant pudding (3.5 ounces)
4 large eggs
¾ cup vegetable oil
1 ¼ cups 7UP soda
Pineapple Topping:
1 ½ cups sugar
2 tablespoons all-purpose flour
2 large eggs (beaten)
½ cup butter
20 ounces crushed pineapple (with juice)
½ cup shredded coconut
Instructions
Preheat the oven to 350º Fahrenheit. Spray a 9x13 baking pan with cooking spray.
In a large bowl, combine the cake mix, pudding mix, eggs and oil. Beat until light and fluffy. Add the 7up and beat well.
Pour the batter into a greased 9x13 baking pan.
Bake for 30-35 minutes or until the center of the cake springs back when you touch it.
While the cake is baking, make the pineapple topping.
Combine the sugar and flour in a saucepan.
Stir in the eggs, butter and pineapple. Cook over low heat, stirring constantly, until thickened.
Remove from the heat and stir in the coconut.
Spread the pineapple topping over the warm cake.
Place the cake on a wire rack to cool completely.
Serve with whipped cream.
Store in an airtight container in the refrigerator.
