Recipe for Pulled Beef using a Smoked Chuck Roast
Chuck Roast is one cut of meat that most people don’t associate with BBQ. Much like brisket, chuck roast needs to cook for a long time to become tender. It’s made up of different groups of the shoulder and contains a good bit of fat and collagen. This cut stands up well to long cooks and the fat melts away leaving moist, flavor-packed meat.
I bought 2 chuck roasts weighing 3lbs each. Chuck is considered a lesser cut of beef, so it’s common to find it under $3 per lb. This means you can feed a lot of people some good food without spending a lot.
Much like a pork butt or brisket it takes a while to cook a chuck roast. You want it to be close to falling apart in the end, so it takes some time. You can plan on a 6 hour cook easy depending on the size of the roast.
For this recipe I’m shooting for more of a beefy flavor than typical bbq, so the seasoning I use is savory based. I take my AP seasoning (Salt, Pepper, Garlic) and add a few things to it.
1/2 cup Salt
1/4 cup Garlic
1/4 cup Onion Powder
1/4 cup Chili Powder
1/8 cup Black Pepper
1 tea Ground Parsley
1 tea Ground Oregano
Season all sides of the chuck roast with this mixture (it’s more than enough seasoning for 2)
Now it’s time to light the fire. I’m looking for 250 degrees with a little mild pecan smoke for these chucks. Once the smoker is up to temperature, place the roasts directly on the grate and close the lid.
I’m using my Yoder (set & forget) today but any cooker will work as long as you can regulate the heat.
After 1.5 hours flip both roasts over and continue smoking. Keep adding pecan chunks as necessary and maintain the temperature at 250 degrees.
At the 3 hour mark the chuck roasts should be ready to pan. Take a thermometer reading here; it should read between 140-150 degrees. The meat won’t take any more smoke at this point, so it’s best to get it covered.
For these chuck roasts, I use a large steam pan to hold them both. The meat needs some additional liquid as well, so I pour in 32oz of warmed beef broth. If you want to change it up a little substitute red wine or even a dark beer, go for it.
Cover the pan with aluminum foil and place it back on the smoker still holding 250 degrees.
You’re looking at another 2-3 hours at least, so keep an eye on the pit and add fuel as needed.
You want to go more by the internal temp that the time - and the final target temperature is 195-200 internal. It’s not the end of the world if you overshoot the target temp on this cut of meat. There’s plenty of liquid in the pan to add moisture and you want it falling apart. This beef is for pulling, so we want the collagen and fat holding it together to completely dissolve.
When the thermometer is reading 195 and it feels like a knife sliding into hot butter, you know it’s done. Remove the pan from the smoker and let the steam escape for about 5 minutes. Rest the meat for at least an hour (I go for 2) before breaking it down. Even after two hours it will still be so hot you’ll need to wear hand savers and gloves.
When it’s done properly this meat will practically pull itself. Separate any fat that didn’t render and pull the pieces into small strands. If you don’t want to shred it by hand you can always use a couple forks or a pork puller... it will flake right apart after it cools a little.
I like to reserve the liquid from the large pan. That beef broth is rightly seasoned after you’ve cooked the chuck roasts in it. You can use it to add a little extra moisture to your pulled meat. Just ladle some of the liquid over the pulled meat... and you’re ready to serve.
Now, you can just serve this pulled beef the way it is. And it is some good stuff. But I like to make a pulled beef sandwich. It’s something great to serve for tailgates and football parties because it’s different and delicious.
For my Pulled Beef Sandwich here’s what you’ll need:
Pulled Beef
Onion buns
Carmalized Onions (recipe on the right side)
Horseradish Mayo*
Horseradish Mayo Recipe
- 16oz Mayo
- 6oz Horseradish Cream Sauce
Mix together and place into a squeeze bottle.
All you do to make this sandwich is to split the onion roll and pile on a heaping serving of pulled beef. Then I just top with caramelized onions and Mayo.
It’s easy and folks go crazy over it. You get a little sweetness from the onions – and the horseradish mayo has just enough of a kick without being overpowering.

I was just blown away at the flavor of these BBQ Chuck Roast sandwiches (Chuckies) The flavor is true southern style bbq at it's best! I'm sure there are many bbq sauces that would work well with this, but the Coakley's BBQ sauce was spot on with the other flavors going on in this cook! Ingredients
Chuck roast 4 Pound
Peanut oil 6 Tablespoon
Salt & pepper To Taste
FOR THE RUB
Packed brown sugar 2 1⁄2 Tablespoon
Paprika 2 Tablespoon
Dry mustard 2 Teaspoon
Onion powder 2 Teaspoon
Garlic powder 2 Teaspoon
Dried basil 1 1⁄2 Teaspoon
Ground bay leaves 1 1⁄2 Teaspoon
Ground coriander seeds 3⁄4 Teaspoon
Ground savory 3⁄4 Teaspoon
Ground thyme 3⁄4 Teaspoon
White pepper 3⁄4 Teaspoon
Ground cumin 3⁄4 Teaspoon
OTHER INGREDIENTS
Coke 12 Fluid Ounce
Maple syrup 1 Cup (16 tbs)
Bbq sauce 1 Cup (16 tbs) (Coakley's)
Buns 10
Directions
GETTING READY
1. Prepare the grill for cooking. Bring the temperature up to 250 F.
MAKING
2. Coat chuck roast with peanut oil. Season with salt and pepper all over.
3. Spread rub all over the roast and then place it on the grill.
4. When the internal meat temperature goes upto 140 F, take the probes out and place the meat on an aluminium pan.
5. Pour coke at the bottom of the pan and the maple syrup over the roast. Place the probe back in the meat, cover the pan with aluminium foil and then put the roast back on the grill. Cook until the internal meat temperature reaches up to 215 F.
6. Pull the pan off the grill and let it rest for about 30 minutes.
7. Pour the remaining liquid in the aluminium pan to a bowl. Chill the bowl for sometime until the fat settles on top. Remove the fat from top. Set the liquid aside.
8. Meanwhile, shred the meat with the help of two forks. Check for moistness of the meat. If the meat is a bit dry, add back the fat skimmed liquid else skip adding the liquid. Season with salt and pepper.
9. Pour barbecue sauce over the meat. Mix everything well.
10. Cover the pan back with foil and place it on the grill. Heat the contents for about 10 to 15 minutes such that everything gets well incorporated. Set the shredded meat aside.
11. Toast buns and place a cupful of shredded meat with barbecue sauce in between the buns.
SERVING
12. Arrange the sandwiches on a platter and serve.

INGREDIENTS:
• 2 1.75lb Chuck Roasts

• 1-2 tbsp Heath Riles BBQ Sweet BBQ Sauce
• 1/2 cup Bear and Burton's The W Sauce
• 1 whole Sliced Onion
• 4 Carrots Chopped
• 5 Celery Stalks Chopped
• Ciabatta French Bread
• Provolone
• 1 cup Red Cooking Wine
• 32oz Beef Broth
• 12 Garlic Cloves
• 1/2 stick of Butter
• Blue Plate Mayonnaise
DIRECTIONS:
1. Get your grill up to 275º.
2. Chop all your vegetables, this includes your carrots, celery, and onion. We didn't chop our garlic cloves.
3. Take your chuck roasts out of the pack and season both sides with Heath Riles BBQ Beef Rub.
4. Place your chuck roasts on your grill.
5. Assemble your broth. Add your vegetables, butter, beef broth, cooking wine, and W sauce in a dutch oven. Sprinkle some more Heath Riles BBQ Beef Rub over the top.
6. Add your pot to the grill with your chuck roasts.
7. Once our chuck roasts were hitting between 150-160º after almost 2 hours, we added it to our broth and let it simmer for another 2 hours. You want your beef to be fork tender.
8. Butter and toast your bread the last 15 minutes your chuck roasts are cooking.
9. After about 4 hours, we took our chuck roasts off the grill and shred them with two forks in a pan.
10. Add a couple tbsp of broth and 1-2 tbsp of Heath Riles BBQ Sweet BBQ Sauce to your pulled beef and mix.
11. Assemble your pulled beef sandwiches how you like. We added Blue Plate Mayo, provolone cheese, and some of the onions from our broth.
12. Place the sandwiches back on your grill so the cheese can melt.
13. Once the cheese is melted, remove from the grill and serve. We had about a 4 hour total cook time.

The Most Underrated Beef Short Rib Bao Buns
If you don't eat pork but want to experience the wonders that is a stuffed bao bun then definitely give these a shot as they were an absolutely wonderful blend of food cultures.
Bao buns dough:
1/4 cup warm water
2/3 cup +2 tbsp warm milk
2 tbsp sugar
2 tsp active dry yeast
2 1/2 tbsp avocado oil
2 1/4 cups +2 tbsp all-purpose flour 370 grams
1/2 tsp baking powder
1/2 tsp salt
Beef filling:
3 lbs short ribs
1 1/2 cups water
1/2 cup + 2 tbsp soy sauce
1/4 cup brown sugar
1 tsp white pepper
2-star anise whole
1 tsp five spice
2 tsp sesame oil
5 spring onions cut in half
1 thumb-sized piece of ginger
2 shallots sliced in half
4-5 tsp corn starch mixed with 3 tbsp water
