How To make Barbecued Grilled Pork Tenderloin(Mf)
2 tablespoons dijon mustard
2 tablespoons barbecue sauce
2 tablespoons olive oil
1 teaspoon dried rosemary
salt and freshly ground pepper 16 ounces pork tenderloin
--halved and butterflied
In a shallow nonreactive dish combine the mustard, barbecue sauce and olive oil; season with rosemary, salt and pepper.
Turn butterflied pieces of tenderloin in the mixture and marinate for 30 minutes at least or for an hour (while marinating, take the time to prepare the side dish)
Preheat your grill or broiler and broil for 6 to 7 minutes a side only; let tenderloin rest on a cutting board for 10 minutes before cutting it on the bias into thin slices.

MF Cooks- Meal Prep Sunday
In this episode I will show you how to create (3) different meals for meal prep Sunday. I always try to combine cooking efforts or applications when I can to save cooking time and less mess to clean up. I chose to add the ground chicken with the ground turkey so I could make the meatballs and patties out of the same ingredients. As someone that hates eating the same things over and over this is a way I can accomplish eating a healthy, nutritious dish that isn’t the same all the time. What meals do you like to make and how often to do you meal prep??
Ground Turkey (w Chicken) Meatballs
Air Fried Broccoli and Mushrooms w/ Garlic Pasta
Ground Chicken (w Turkey) Patties
Turnip Puree and Roasted Squash w Zucchini
Peppered Garlic Pork Tenderloin
Sautéed Garlic Spinach w Roasted Sweet Potatoes
Recipes
Meatball/Pattie Mix:
1# Ground Turkey
1# Ground Chicken
2 Eggs
2 Tbsp Parmesan Cheese
1 Tbsp Dried Parsley
1 Tbsp Garlic Powder
1 Tsp Crushed Red Pepper
Panko Bread Crumbs- to consistency that you like
S&P TT
Finish In the oven
Pork Tenderloin-
Sauté Pork Tenderloin and finish in the oven
Broccoli/ Mushrooms-
2 ea Bunch of Broccoli Broken Down
4 oz Baby Bella Mushrooms
Toss lightly in Olive Oil and S&P TT
Air Fry 300 degrees for 14 minutes
Pasta-
1 C Dried Pasta
1 Tsp Garlic Powder
2 Tsp Parmesan Cheese
1 Tsp Dried Parsley
1 Tsp Crushed Red Pepper
S&P TT
Salted Boiling Water until al dente
Turnip Puree-
4 ea Turnips
1 Tbsp Butter Unsalted
2Tbsp Milk Skim
S&P TT
Salted Boiling Water until fork tender then blend with butter milk and seasoning. This is to your taste so add or delete what you don’t want.
Sautéed Spinach-
1 Bag Spinach
2 Tbsp Garlic Minced
Water to steam
S&P TT
Roasted Veggies-
2 ea Sweet Potatoes
2 ea Squash
2ea Zucchini
Chop Veggies to similar size and roast at 400 degree for about 30 mins or until desired texture

Tender, succulent pork knuckles with a wonderful sweet and sour glaze sauce.
Ingredients
2 x 750g Pork knuckles (NOT pickled)
For the master sauce
4 Spring onions, bruised
4cm (1½+ inch) Ginger cut into rounds
2 Tbs Szechuan peppercorns
100ml Light soy sauce
1Tbs (15ml) Oyster sauce
1Tbs (15ml) Hoisin sauce
1Tbs (15ml) Hot chilli sauce
1 Liter good quality chicken stock
Water to cover
For the sauce:
1 Cup of the reserved master sauce
2 Tsp Cornflour dissolved in a little water
1 Tbs Sugar
1 Tbs White wine vinegar
2 Tbs (30ml) Good quality tomato sauce
Instructions
For the knuckles
Examine the pork knuckles to find the thinnest side and cut through the skin down to the bone
Place the knuckles in a pot along with all of the master sauce ingredients
Bring the pot to the boil and continue to boil for 60 minutes
Reduce the heat and simmer the pot for a further 60 minutes
Remove from the heat and transfer the pork to a roasting pan
Roast the pork in a preheated oven at 180c / 350f for 60 minutes, uncovered
Remove from the oven and transfer the knuckles to a carving board
The bone will have loosened from the meat. Cut any remaining connective tissue and remove the bones from the knuckles.
Carve the meat thinly and arrange on platters
For the sauce
Strain the master sauce and measure 1 cup of the strained sauce
Add this and all of the other sauce ingredients to a pan over medium heat
Bring this to the boil. Boil for about 3 minutes until the sauce has thickened and is very glossy.
Spoon the sauce over the pork and serve

8 tomatillos
1 onion
6 garlic cloves
8 cherry toms
1 bu cilantro
2tbsp Cumin
1tbsp Cinnamon

Toast chilies in oil, grill veggies and put everything in a blender. Once blended through pour half over beef shoulder, cover and put into the fridge overnight. Pour the remaining half over pork tenderloin, refrigerate over night.
