New favorite Go-To raisin bran muffins - NO WHITE FLOUR!
These are now my go-to raisin bran muffins, because they are delicious and nutritious and use NO WHITE FLOUR!! So simple and easy to make - they keep well in the fridge or if need be, they can be frozen and enjoyed later :)

Ivo’s Cocoa/Cinnamon Bran Muffins – with whole wheat flour
Makes 9 large or 12 medium sized muffins.
Ingredients
• 150 grams ( 5.3 oz) (~1 ¼ cup) whole wheat flour
• ½ TSP fine salt
• 1 TSP Baking Soda
• 1 TSP Baking Powder
• 1 TBSP Cinnamon
• 3 TBSP Cocoa
• 1 1/2 cups, wheat bran
• 1 ¼ cup buttermilk (or mix regular milk with 1 TBSP lemon juice to make buttermilk)
• 2/3 cup raisins
• ¼ - ½ cup chopped walnuts (or nuts of your choice)
• 1/3 cup olive oil or extra virgin olive oil.
• ¼ cup unsweetened apple sauce
• ½ cup brown sugar (or ¾ cup if you prefer sweeter muffins)
• 2 large eggs, slightly beaten.
• 2 TSP vanilla
• 1/3 cup olive oil (or vegetable oil)
• Optional oatmeal for decorating
Process
• Preheat oven to 375 degrees F.
• Soak raisins in water, set aside.
• In a bowl, mix buttermilk to bran until incorporated – set aside, let stand 5 minutes.
• In a different bowl, add flour, salt, baking soda, baking powder, cinnamon, and cocoa. Mix (a whisk works great), set aside.
• To your bran mixture, add the eggs, vanilla, brown sugar, apple sauce and olive oil – mix to incorporate.
• Now you can mix the bran mixture with the flour mixture and mix until all the flour is absorbed.
• Fold the nuts into the mixture.
• Strain the water from your raisins and fold them in as well.
• Place muffin cups in your muffin baking pan and fill each of them to the same level
• Sprinkle optional oatmeal on top of each muffin.
• Bake for 17 – 20 minutes.
• Let cool and enjoy ????

• 1 large egg
• 2/3 cup brown sugar

• 1 teaspoon baking soda
• 1 teaspoon baking powder
• 1/2 teaspoon salt
✅Instructions
00:00:53 - What kind of bran cereal to use for muffins
1️⃣ 00:00:44 - Preheat oven to 450 degrees Fahrenheit. Lightly spray a muffin pan with nonstick spray or line with paper cups.
2️⃣ 00:00:53 - In a medium sized mixing bowl soak bran cereal and buttermilk for about 10 minutes until it gets all soggy.
3️⃣ 00:01:30 - Add in melted coconut oil, egg, brown sugar, vanilla extract, flour, baking soda, baking powder and salt. Stir thoroughly. This mixture will be very thick.
4️⃣ 00:02:34 - Divide the batter equally among the 12 muffin cups, filling almost all the way full.
5️⃣ 00:02:57 - Bake in the preheated 450 degree oven for 5 minutes. Without opening the door, reduce the heat to 350 degrees and let the muffins continue baking another 8 to 10 minutes. Remove from the pan and cool on a wire rack.

Fiber Enhanced Whole Wheat Oat Bran muffins with cranberries and raisins.
For the recipe:
1 cup or less vegan milk( we used unsweetened low fat coconut milk),
1/3 cup of coconut sugar,
1 cup whole wheat pastry flour,
1 cup oat bran,
1 table sp.wheat germ,
1/3 cup olive oil,
1 tea sp.baking powder,
1/2 tea sp. baking soda,
raisins,cranberries, fresh orange peel,
1/2 banana ( can be substitute with apple sauce)
Bake for 20 min, 375F.

Chunky Banana Bran Muffins

Yield: 10 to 12 muffins
Ingredients
1 cup unprocessed wheat bran
1 cup buttermilk (shaken)
4 tablespoons unsalted butter, at room temperature
1/4 cup light brown sugar, lightly packed
2 extra-large eggs, at room temperature
6 tablespoons unsulphured molasses
1 teaspoon grated orange zest
1/2 teaspoon pure vanilla extract
1 1/2 cups all-purpose flour
3/4 teaspoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon kosher salt
1 cup raisins
1 cup large-diced bananas
1/2 cup chopped walnuts
Directions
Preheat the oven to 350 degrees F. Place paper liners into 1 (10 or 12-cup) muffin tin.
Combine the bran and buttermilk and set aside. Cream the butter and sugar in the bowl of an electric mixer fitted with the paddle attachment for about 5 minutes, until light and fluffy. With the mixer on low, add the eggs, 1 at a time. Scrape the bowl and then add the molasses, orange zest, and vanilla. (The mixture will look curdled.) Add the bran/buttermilk mixture and combine.
In a separate bowl, sift together the flour, baking powder, baking soda, and salt. With the mixer on low speed, slowly add the flour mixture to the batter just until combined. Don't overmix it! Fold in the raisins, bananas and walnuts with a rubber spatula.
With an ice cream scoop or large spoon, fill the muffin cups to the top and bake for 25 to 30 minutes, until a cake tester comes out clean.
