Fresh, delicious shrimp tacos with mango salsa

For the mango salsa:
- mango
- avocado
- red onion
- cilantro
- cucumber
- chilli pepper or jalapeño
- lemon juice
- salt

Cut all ingredients in small pieces. Drizzle with lemon juice and salt to taste. Stir to combine and refrigerate for 15-30 minutes.

For the shrimp:
- shrimp
- chilli powder and salt
- olive oil
⠀
Salt and pepper shrimps to taste.
Fry over medium heat with 1 tbsp olive oil for 2 minutes per side.

For the sauce: (optional)
- mustard
- olive oil
- cilantro
- honey
- lemon juice
⠀
Combine all ingredients.
⠀
To assemble the tacos, toast tortillas, spoon salsa over tortilla, then top with 2 shrimp and drizzle with the sauce.

Garlic Shrimp Scampi Recipe:
De-vein 1 lb large prawns (16-20 size), keeping the shell intact
Wash, place in a bowl, and add
1 tbsp minced garlic
2 tbsp paprika
1 tsp Hawaiian salt
1/4 cup olive oil
Squeeze of lemon
Mix and marinate 15-30 minutes
In a heated large skillet (medium-low) add a layer of cooking oil
Dredge the shrimp in cornstarch and fry 2-3 minutes each side
Cook in batches and drain on a paper towel.
With the oil remaining in the pan add 5 tbsp unsalted butter and 1/4 cup minced garlic, saute until golden brown, stirring constantly
Add 1/2 lemon’s juice, and a pinch of salt, then the shrimp. Coat evenly in the butter garlic sauce. Plate with steaming hot rice, a wedge of lemon, and spicy sauce

Shrimp scampi with breadcrumbs, garlic, parmesan and butter - the perfect easy and delicious appetizer! Thanks so much for watching the video and let me know if you have any questions :)
RECIPE:
-1 lb. Large Shrimp, peeled & deveined (~20 shrimp)
-Salt
-1/4 Cup Breadcrumbs
-1/4 Cup Parmesan
-1/4 Cup Butter
-2 Garlic Cloves, minced
-1 Tbsp Parsley, minced
-Lemon wedges, for serving
1. Preheat oven to 375°F
2. Melt butter and garlic together in the microwave
3. Place shrimp in a baking dish and sprinkle with salt; top with breadcrumbs, parmesan & garlic butter
4. Bake for 15 minutes then squeeze lemon on top and garnish with parsley, enjoy!
15 minute prep time + 15 minute cook time
Recipe makes 4 appetizer sized servings

1 handful fresh spinach
1 cup heavy cream
1 cup parmesan cheese
