How To make Bean& Potato Taco Pie
<Crust> 2 C Mashed Potatoes
1 Env Taco Seasoning Mix
:
<Filling> 1/2 Tsp Olive Oil
1 Lb Ground Chicken Breast, Skinless
1/2 C Onions chopped
1/2 C Bell Peppers :
chopped
1 16 Oz. Can Fat-Free Refried Beans
1/2 C Barbecue Sauce
1/4 C Water
1 C Fat-Free Cheddar Cheese shredded
1 C Iceberg Lettuce :
shredded
Preheat oven to 350. Prepare a 10" pan with cooking spray; set aside. In a small bowl, combine potatoes and 2 tablespoons taco seasoning mix. Press into bottom of prepared pan; set aside. In a skillet, heat oil over medium heat. Add chicken, onions, and bell peppers. Cook until chicken is no longer pink and vegetables are tender. Stir in beans, barbecue sauce, water, and remaining taco seasoning mix. Cook and stir until bubbly. Turn into crust. Bake, uncovered, for 30 minutes. Top with cheese and lettuce.

Ingredients
* 1 lb ground beef
* 2 tbsp taco seasoning
* 2/3 cup water
* 1 red bell pepper, cut into 1-inch strips (optional)
* 2 .5 cups Old El Paso™ Thick 'n Chunky salsa
* 1 can sweet corn
* 6 flour tortillas for soft tacos & fajitas (6 inch)
* 2 cups shredded Colby-Monterey Jack cheese blend
Preparation
* Heat oven to 350°F. In 12-inch skillet, cook beef over medium-high heat 5 to 7 minutes, stirring occasionally, until thoroughly cooked; drain. Stir in taco seasoning mix, water and bell pepper. Simmer 3 to 4 minutes, stirring frequently, until thickened. Stir in salsa and corn.
* Spray 13x9-inch (3-quart) baking dish with cooking spray. Cut tortillas in half; place 6 tortilla halves in bottom of baking dish.
* Top with half of beef mixture. Sprinkle with 3/4 cup of the cheese and remaining tortilla halves. Top with remaining beef mixture and cheese.
* Spray piece of foil large enough to cover baking dish with cooking spray. Cover baking dish with foil sprayed side down. Bake 35 to 40 minutes or until heated through and cheese is melted.

TORTILLAS INGREDIENTS
3 cups all-purpose flour (400 grams of flour)
2 tsp baking powder (7.5 grams baking powder)
8 oz hot water (236.59 ml water )
1/3 cup butter, lard, or shortening (65 grams) *use only 1/4 cup (59 ml) if using oil
1 tsp salt (5 grams salt)
INGREDIENTS FOR REFRIED BEANS
1 1/2 Tbsp bacon fat
1/4 cup diced onion
4 cups cooked pinto beans
1 tsp chili powder
1 tsp garlic powder
1/2 tsp smoked paprika
1/2 tsp ground cumin
salt and pepper to taste
INGREDIENTS FOR AGUA DE PEPINO CON LIMON
1 large cucumber
1 large lime
1/2 cup sugar
3 cups water
pinch of salt
1 lb of ice

Ingredients:
• Minced Soya 2 cups (Soak it in 2 cups of hot boiling water for 20 mins)
• Cheddar Cheese (I’m using vegan, but you can use dairy-based too)
• Salsa sauce- 3tbsp
• Passata – 5tbsp (For tomato base, I’ve mixed 3 tbsp to 5 tbsp passata and I’ve topped my dish with another 4tbsp of passata infused with fresh basil)
• Taco Shells- 5
• Smoked Paprika (you can use any seasoning of choice)
• Garlic
• Olive Oil
• Vegetables of choice (I’ve taken 1 medium side boiled potato, 4-5 Brussel sprouts, and 1 carrot)
• Salt to taste
• Black Pepper
• Fresh basil
Bake at 160 degrees Celsius /320 Fahrenheit (Fan assisted will be 140 degrees) for 35 mins
