Easiest Way to Cook Beef Chow Mein Like A Pro 牛肉炒面 Chinese Stir Fried Noodles with Beef Recipe
Some of you may be confused by chow mein and lo mein. Chow Mein is a literal translation of 炒面, which means fried noodles in Chinese, whereas Lo Mein is 捞面, which means tossed noodles. Both of these dishes are variations on Chinese-style noodles. Chow mein is prepared by stir-frying noodles with sauce and other ingredients in a wok. To make lo mein, cook the ingredients and make the sauce separately, then combine everything with the noodles without using any additional heat. If you're using dehydrated noodles, just blanch them first to soften them. If you're making chow mein, don't overcook the noodles during blanching or they'll be too soggy after they've been fried. For lo mein, cook the noodles through since you won't be cooking them again over heat. If you're using fresh noodles for lo mein, blanch the noodles briefly to warm them up before tossing them with the sauce and other ingredients. Beef Chow Mein 牛肉炒面 Chinese Stir Fried Noodles with Beef Recipe
Ingredients:
Serves 4 pax

Marinated beef:
300g (10.58 oz) thinly sliced chuck tender
3 tablespoons water
1 tablespoon oyster sauce
0.5 teaspoon baking soda (use baking powder if you are sensitive to the taste of baking soda. If you are extremely sensitive, marinate the beef with baking soda or baking powder for 10 mins first then rinse the beef before adding the other ingredients.)
1 tablespoon cornflour
A few dashes of white pepper
1 tablespoon cooking oil
Noodle sauce:
100ml (3.38 fl oz) hot water
0.5 teaspoon sugar
1 tablespoon oyster sauce
1 tablespoon light soy sauce
2 tablespoons premium dark soy sauce (you can use 3 tablespoons if you like your noodles to be darker -- FYI - we used a total of 3 tablespoons in the video)
A few dashes of white pepper
Other ingredients:
220g (7.76 oz) dried egg noodles (you can replace these with fresh egg noodles)
1 medium thinly sliced red or yellow onion
3 stalks of spring onion (add the stem part first when frying the onion, followed by the rest at the end before serving)
4 cloves of chopped garlic
A handful (about 150g 5.29 oz) of your favourite greens (kai lan aka Chinese broccoli or choy sum)

I grew up eating chow mein 3x a week- it's a comfort food to me. This beef chow mein recipe traditional Cantonese style! I'm sure you'll LOVE it!

INGREDIENTS SERVE 2
200 g of beef tenderloin
FOR THE MARINADE:
* 1 tsp of Chinese cooking wine
* 1 tsp of light soy sauce
* 1 tsp of cornstarch
* 1/4 tsp of black pepper
* 1/4 tsp of salt
* 1/4 tsp of baking soda (not baking powder, sorry for the mistake in the video)
FOR THE SAUCE:
* 1 tbsp of hoisin sauce [Lee Kum Kee hoisin sauce:
* 1 tbsp of soy sauce [Kimlan light Soy Sauce:
* 1 tsp of dark soy sauce [Kimlan Dark Soy Sauce:
* 1/2 tsp of five spice [Amazon link:
* Salt to taste
* 1/2 cup of water or beef stock
OTHER INGREDIENTS:
* 300 g hand pull noodles (if you use un-cooked noodles, pre-cook it until it is half way done)
* 2 tbsp of minced garlic
* 1 tbsp of minced ginger
* 2 ounces of carrots (shredded)
* 3 ounces of cabbage (shredded)
* Some bean sprouts
* Some baby bok choy (cut it into smallish pieces)
* 1 tbsp of vegetable oil to cook the beef
* 3 tbsp of vegetable oil to stir fry the noodles
SIMPLE STEPS:
* Slice the beef into thin pieces. Marinate it for 30 minutes. (you can switch it with chicken or pork)
* Mix the marinade
* Heat up your wok, add vegetable oil and your marinated beef. Cook it on high heat for just 2 minutes. Set it aside.
* Add more oil to the same wok, the garlic and ginger- give it a stir until fragrant. Add all your vegetables besides the bean sprouts. Stir fry them for 2 minutes.
* lower the heat to medium. Add your noodles along with the sauce. Mix the sauce and noodles evenly.
* When the sauce is almost gone, quickly add the bean sprouts and mix it well. Add your beef give it a quick stir. When you see the sauce is gone, You can turn off the heat and serve.

-Soy sauce 1 tbs
-Rice vinegar 1 & ½ tbs
-Til ka tel (Sesame oil) ½ tsp
-Kali mirch powder (Black pepper powder) 1 tsp
-Cheeni (Sugar) ½ tbs
-Stock ½ Cup

-Sirak (Vinegar) 1 tbs
-Til ka tel (Sesame oil) ½ tsp
-Safed mirch powder (White pepper powder) 1 tsp
-Cheeni (Sugar) ½ tbs
-Namak (Salt) ¼ tsp or to taste
-Corn flour 2 tsp
-Oil 3-4 tbs
-Lehsan (Garlic) finely chopped 1 tbs
-Adrak (Ginger) finely chopped ½ tbs
-Mushrooms slices ½ Cup
-Gajar (Carrot) julienne ½ Cup
-Pyaz (Onion) sliced ½ Cup
-Yellow bell pepper julienne ½ Cup
-Shimla mirch (Capsicum) julienne ¼ Cup
-Kali mirch (Black pepper) crushed 1 tsp
-Egg noodles boiled 150 gms
-Hara pyaz (Green onion) leaves 2-3 tbs
Directions:
-In bowl,add beef,oyster sauce,soy sauce,rice vinegar,sesame seeds,black pepper powder and sugar,mix well and marinate for 1-2 hours.
-In bowl,add stock,soy sauce,vinegar,sesame oil,white pepper powder,sugar,salt and corn flour,mix well & set aside.
-In wok,add oil,garlic,marinated beef and mix well until changes color.
-Cover and cook on low flame for 6-8 minutes.
-Add ginger,mix well and cook for 2-3 minutes then cook on high flame until dries up.
-Add mushrooms and cook for 2 minutes.
-Add carrot and mix well.
-Add onion,yellow bell pepper,capsicum and mix well.
-Now add prepared sauce and mix well.
-Add black pepper crushed and mix well.
-Add egg noodles and toss well.
-Add green onion leaves,give it a good mix & serve.

-Mushrooms dal dein aur 2 minutes kliya paka lein.
-Gajar dal ker ache tarhan mix karein.
-Pyaz,yellow bell pepper aur shimla mirch dal ker ache tarhan mix ker lein.
-Ab tayyar sauce dal ker ache tarhan mix karein.

2 cups Chopped cabbage
1 cup Chopped bell peppers
1 medium size onion Chopped
2 tbsp garlic
1 tbsp grated ginger
3 stalks green onions Chopped
1 tsp all purpose seasoning
1/2 tsp Chinese 5 spice
1/2 tsp black pepper
1/4 cup dark soy sauce
1/4 cup sweet dark soy sauce
1/4 cup Hoisin sauce
