How To make Beef Patties, Jamaican Style
PAStrY 2 cups flour 1 tsp salt 3/4 cup vegetable shortening 1/4 - 1/3 cup ice water FILLING 1 lb ground beef 1 scallion, white part only, chopped 1 tsp salt 2 tsp black pepper 1/2-3/4 tsp crumbled dried thyme about 4 inches of french or Italian bread 1 tsp paprika 1 small red pepper, minced, or drops of Caribbean hot sauce, to taste. Make the pastry. Combine the flour and salt in a bowl, and workin the shortening until the dough resembles coarse meal. Add just enough water to make the dough hold together. Wrap the dough in plastic wrap and let it rest in the refrigerator for several hours or overnight. Make the filling. Combine the beef, scallion, salt, black pepper, and half the thyme. Cook the mixture in a skillet just until the meat loses its pink color but is not browned. While the meat cooks, soad the bread inwater to cover for about 5 minutes. Squeeze the bread but save the water. Grind the bread in a food processor or meat grinder. Put the bread and water in a saucepena with the rest of the thyme and cook until most the othe water has evaporated. Add the bread and the paprika to the meat. Stir in the red pepper or hot sauce and cook over low heat, stirring often, for about 20 minutes. Roll the dough out about 1/8 inch thick; the dough should not be too thin or it may break when filled. Cut out circles about 6 inches in diameter. Place a heaping tablespoon of meat in the center of each circle. Using your finger, moisten the edges of the dough with water. Fold the dough over to make a half circle, and crimp the edges with a fork. Repeat until dough and meat are used upp. Place the patties on ungreased baking sheets. Bake about 35 minutes, or until golden brown. Makes about 15 patties. Converted by MMCONV vers. 1.50 -----

Jamaican Beef Patties
Dough
3 cup all-purpose flour
1 tbsp sugar
1 tbsp Turmeric
1 tbsp Curry powder
3 tbsp shortening
1 tbsp butter
1 1/2 cup of ice cold water
Beef Filling
500g ground beef
Pepper for taste
1 tbsp vegetable oil or more if needed
1 tbsp of corn starch
1 tbsp soy sauce
1 tbsp curry powder
1 tbsp of mix spice
1 tsp garlic powder
1 tbsp of ketchup
1/4 tsp ground thyme or fresh
1 onion diced
Scotch bonnet pepper to taste
2 tbsp sliced green onions/spring onions

How to make Jamaican Beef Patties
Jamaican Beef Patties Recipe
Crust: In a large bowl combine 3 cups of all purpose flour, 3 packs of sodium free beef bouillon cube seasoning, 4 tbs of turmeric powder, 2 tsps of sugar, 1 tsp of salt. Stir well
Add chopped up pieces of 1-1/2 stick of cold butter. Mash into flour mixture until it becomes crumbs {as shown in the video}. Add 1/3 cup of Cold Ice Water to flour mixture. Massage gently into flour mixture until it becomes a big ball of dough. {DO NOT OVER KNEAD DOUGH]
Wrap in plastic wrap and place in refrigerator for at least 1 hour.
Filling: Chop up 4-5 pieces of scallions, 2 scotch bonnet peppers, 1 medium yellow onion, along with 1 tsp of minced garlic.
Place in a pan with 1/4 cup of veg oil over high heat.
After 3 minutes add 1 lb of ground beef.
Once ground beef turns brown season with 1/4 cup of breadcrumbs, 3 tbs of ketchup, 3 packs of sodium free beef bouillon cube seasoning, 2 tsp of onion powder, 2 tsp of paprika, 2 tsp of salt, 2 tsp of thyme seasoning, 1 tsp of black pepper and 1 tsp of ground Jamaican all spice seasoning.
Stir in well and reduce heat to low
Add 1 cup of water and cook on low until it cooks down into a nice gravy
Dough: Poor about 1/2 cup of flour onto a wide flat surface like a counter.....cut the dough ball up into 5-8 pieces.
One at a time... flatten dough with rolling pin.... sprinkle flour on both sides.
Once you've obtained desired thickness of dough, engrave a round small bowl inside down into the dough to create a circular shape
Scoop 3-4 tbs of ground beef onto dough and fold other side over meat and press the ends together. Engrave fork prints into ends of pattie
Place oven to 400 degrees
Place patties onto a baking sheet, rub patties down with a little butter and then onto a baking pan and bake until done or for about 20-25 minutes

HOW to make The BEST JAMAICAN BEEF PATTIES||SIMPLE, STEP BY STEP INSTRUCTIONS
In this video I show an easy to follow, step by step method on how to make the BEST Jamaican Beef Patties from scratch.
Recipe yields 8 Patties
Pastry:
2.5 Cups All Purpose Flour
1 Tbsp Turmeric
1 Tsp Curry Powder
1 Tsp Baking Powder
1 Tsp Sugar
1 Tsp Salt
3/4 Cup COLD Butter
4 Tbsp Cold Buttermilk
1 Cup Ice Cold Water
1/4 Cup Butter (Frozen) reserved for lamination
Filling:
500g Ground Beef
Fresh Seasoning:
2 Onions (1 for Browning meat)
3 Garlic
3 Scallion
1 Carrot
1 Scotch Bonnet (seeds removed depending on spice preference)
1/2 Green Pepper (optional)
Seasoning:
1Tbsp each:
Garlic Powder, Onion Powder, Curry Powder, All Purpose Seasoning, Paprika
1 Tsp All Spice & Thyme
2 Tbsp Browning
2 Tbsp Soya Sauce
1 Tbsp Ketchup (optional)
Panade:
3 pieces white bread (crust removed)
4 Tbsp Water or Milk
Directions:
Add Flour, Turmeric, Curry Powder, Baking Powder, Sugar and Salt to a bowl and mix.
Next add cubed pieces of Butter and cut with a pastry cutter or fork.
Once the Flour mixture resembles sand, you want to add your buttermilk and gradually add your ice cold water.
Slowly bring Ingredients together, using a fork or wooden spoon. You want to handle this dough as LITTLE as possible so as to not melt the butter.
Turn the dough out onto a floured surface and once a ball is formed, wrap in plastic wrap and place in fridge for 30 minutes.
Filling:
Take all ingredients listed under 'Fresh Seasoning' to a food processor and mix.
Meanwhile sautee one Onion and chopped garlic until fragrant.
Next add your ground beef and brown.
Once browned, add your Fresh Seasoning mix and all ingredients listed under 'Seasoning'.
While the ingredients for the filling are coming together, make your panade.
This is a very important step. The panade ensures the beef stays tender and doesn't leak out of your patty.
Combine the 3 pieces of bread and just enough water to cover in a food processor.
Pour the panade mixture over your beef mixture and stir until combined.
Pastry Lamination:
Remove pastry from fridge and turn out onto a well floured surface.
Using a rolling pin, roll out the pastry until it's 1/4 inch thick.
Next take your butter from the freezer and using a grater, grate 1/4 of the butter over the pastry, then fold over into itself.
Repeat this process at least 2 more times.
The more times you do this, the flakier your pastry will become once cooked.
Take care not to over handle the pastry.
Next, roll out one final time and using a bowl as a guide, cut 8 circles.
Take 1/4 Cup of your filling and place it on one half of the pastry. Then take a small amount of water and wet the edge of the meat side of the pastry.
Take the empty side of the pastry and fold over.
Next, using a fork, crimp and seal the edge of your patty.
Place patties on a lined baking sheet and bake at 375 for 30 minutes or until golden brown.
Let cool and enjoy!
