Bruges Belgian Waffles
Recipe:
When I visited the stunning and incomparable fairytale city that is Bruges nestled in the northwestern part of Belgium, there were three delicious things I quickly learned were their claims to fame: Beer (it's everywhere and some of the finest in the world), Chocolate (also everywhere and also some of the finest in the world), and the inspiration for this recipe - Waffles! Chances are you've had fluffy Belgian Waffles in your own corner of the world but I'm less-inclined to think you had them with beer in the batter, which we learned is how they're commonly made in Belgium at a super fun Beer & Waffles class we took. And given Belgium's quality of beer, it makes sense! The fluffy and cake-like waffles don't have a beer-heavy flavor but rather a hint of the type used in the batter - so whichever you choose, go with your favorite (or simply use seltzer or even ginger ale in place of it)! This recipe is super easy, fast and a hit every time.

Ingredients:
- 2 cups protein pancake mix
- 1 egg
- 2 tbsp olive oil
- 1 & 1/2 cup club soda
- 1 tsp vanilla extract
- Dash of cinnamon sugar

Instructions:
1) Combine all of the ingredients.
2) Oil and preheat waffle iron.
3) Add some of the batter to the waffle iron.
4) Cook until golden brown and crispy/fluffy!
5) Enjoy :)

Mama’s Saturday Waffles (Vol. 3 Cookbook Recipe)
1/2 STICK BUTTER (MELTED)
3 EGGS, SEPARATED
2 CUPS SIFTED ALL-PURPOSE FLOUR
2 TEASPOONS BAKING POWDER
1 TEASPOON BAKING SODA
1/2 TEASPOON SALT
1 TEASPOON VANILLA EXTRACT
2 CUPS BUTTERMILK
2 TABLESPOONS SUGAR
Melt butter in a batter bowl. Add buttermilk, egg
yolks, and vanilla. Mix well with whisk.
In a separate bowl, beat egg whites until stiff. Turn on
waffle iron so it is preheated.
Sift flour, salt, baking powder, baking soda, and add to
the batter bowl and mix well. Pour batter into a larger
bowl, then add egg whites and fold into batter.
Place ½ cup batter in waffle iron and bake to the color
of your liking. (I like to make mine dark!) You can also
make a bunch, then put them on a wire rack (to
prevent them from getting soggy), and then place them
in the iron again for extra crispy waffles!

Apple Spice Buttermilk Waffles: Recipe & Demo

Buttermilk Waffles with Apples & Spice
1 c. All Purpose Flour
2 t. Baking Powder
1 t. Baking Soda
1/4 c. Cornstarch
1/2 t. Salt
2 T. Sugar
2 t. Cinnamon
1/2 t. Ground Ginger
1/2. c. Vegetable Oil ~or~ Melted Butter
1 c. Buttermilk
1 Egg
1 Apple, peeled and grated (any variety). Optional fruits: sliced bananas, grated pear, also: shredded coconut, chopped/toasted walnuts or pecans.
Preheat waffle maker on medium. Preheat oven to 200-225F. In a medium mixing bowl whisk all of the dry ingredients together including the spices. Make a well in the center and add the egg, oil, and buttermilk. Whisk just until combined. DO NOT OVERMIX. Add grated apple and fold into batter. Lightly oil waffle grids, if necessary for your model. Add batter to waffle iron grids being careful not to overfill. Close and bake until golden and crisp. Transfer finished waffles to warmed oven by placing them directly onto oven rack. DO NOT USE BAKING PAN OR PLATE AS THIS WILL MAKE THE WAFFLES SOGGY. Serve plain or with powdered sugar &/or maple syrup. ENJOY!
