Authentic Mexican Chicken Tacos:
Salsa Topping
- 2 cloves of garlic peeled and chopped
- Half of a red onion diced and chopped
- 1 jalapeño sliced and chopped
- 1/2 cup of cherry tomatoes sliced and chopped
- Place all your veggies in a mixing bowl
- Add 1 teaspoon of honey
- Add 1 teaspoon of salt
- Mix the ingredients together
- Squeeze in half a lime
- Add chopped cilantro
Grilled Chicken
- 2 chicken breast chopped
- In a saute pan, add 1 tablespoon of olive oil
- Add chopped chicken
- Add 1 Tablespoon of garlic powder
- Add 1 tablespoon of onion powder
- Add 1 tablespoon of salt
- Add 1 tablespoon of taco seasoning
- now saute until chicken is fully cooked
Assembling the Tacos
- 3 corn tortillas
- In each tortilla, add store-bought shredded cabbage
- Followed by your grilled chicken pieces
- Now add avocado slices
- And the salsa topping that you made
- Add crumble Greek cheese (or any cheese of your choosing)
- Top with cilantro and squeezed lime juice

I'm a huge fan of crispy chicken burgers! I've also had some amazing fish tacos at restaurants, so I really wanted to try my hand at making some myself at home! This recipe came about because I didn't have enough shrimp to make just shrimp tacos, and I had some leftover chicken on hand too! What better way than to get the best of both worlds by frying up some chicken and shrimp?
The magic here is in the seasoning with Blackening spice! I used my homemade Blackening spice recipe, but you can use whatever you have on hand! If you don't already have Blackening spice, then no worries, because it only takes about 5 minutes to make, and you'll have so much left for many more delicious blackened recipes!
I love to serve my tacos with mini tortillas! It makes the tacos messy because they're well loaded, but the messier the food is the more fun it is, right?

????????????More Info???????????? This blackened chicken recipe is easy and quick to make and a perfect dish to add to your weekly meal rotation. Marinated and cooked in a delicious spice mix, this easy chicken recipe will be a hit with the whole family.
INGREDIENTS:
2 chicken breasts
6 tablespoons unsalted butter
2 tsp sweet paprika
2 tsp spicy paprika
2 tsp ground thyme
2 tsp cumin
2 tsp garlic powder
2 tsp onion powder
1 tsp salt
Juice of 1 lime
1 tbsp fresh cilantro chopped
3 tbsp sour cream optional
Cajun Blackened Chicken with Supergreen Quinoa
Spicy griddled chicken breasts are served with quinoa packed with herbs, pomegranate, and colorful vegetables for a tasty and nutritious meal.
Ingredients:
2 chicken breasts (about 120g each)
Generous pinch of Cajun spice
2 tbsp olive oil
160g quinoa
1 red chili, deseeded and sliced
20g spring onions, chopped
100g baby spinach leaves
Small pack mint, roughly chopped
Small pack coriander, roughly chopped
20g pomegranate seeds
40g edamame beans
30g Peppadew peppers
100g beetroot (not in vinegar), sliced
1 tbsp pumpkin seeds
50g feta, cut into cubes
80g mango, cut into chunks
Lemon zest, to serve (optional)
Sesame seeds, to serve (optional)
Lime wedges, to serve (optional)
Directions:
1. Heat oven to 180C/160C fan/gas 4. Rub the chicken with the Cajun seasoning until coated. Heat a heavy-based griddle pan over medium heat and add the oil. Add the chicken and color on both sides. Transfer the chicken to a baking tray and bake for 20-25 mins or until cooked.
2. Meanwhile, boil a saucepan of water. Rinse the quinoa under cold water, then put in the pan. Cook for 15 mins, then drain in a sieve. 3 In a food processor, add nearly all the chili, spring onions (reserve some of each to serve), the spinach, mint, and coriander, and blend to a smooth purée.
3. Add the purée to the quinoa and mix well. Add the remaining ingredients, except the chicken, and combine well. Season to taste. Divide the quinoa mix over 2 plates, top each with chicken and serve sprinkled with the lemon zest, sesame seeds, reserved chili, and spring onions and lime wedges, if you like. #1minuterecipe #recipes #easyrecipe #youtuberecipes #recipe #videorecipe
