Today I am going to show you how to make a healthy blueberry oatmeal bread recipe that's perfect for breakfast, snack or dessert.
And I'm not saying this because I like it so much that I just can't stop eating. It really is suitable for all 3 meals and I'll explain why throughout the article.
Oh, and best of all it's vegetarian. I know it's been a while since I've posted a vegetarian dessert, so I figured it's time to catch up.
This homemade blueberry oatmeal bread is also an excellent way to make your kids eat (gobble up, actually) their breakfast. No child can say No to breakfast when it tastes like a dessert, right?
Moreover, you can serve it as a snack and replace the junk food in their (or even your) diet and they won't hate you for it. Although they might be slightly resilient at first, as giving up sugar is like giving up smoking.
Oh yeah, I forgot to mention that this is a healthy blueberry oatmeal bread because it doesn't have any sugar in it.
I sweetened it with raw honey so we can say it's safe to indulge in more than just a few slices.
Now let me show you a few tricks that will help you make the best blueberry oatmeal bread ever.

1. Adapt the recipe to your taste
Even though I haven't yet met somebody that doesn't like blueberries, I am going to assume they exist and for them, I have the following tip.
You can replace the blueberries with any kind of berries, like blackberries, chopped or diced strawberries, cranberries or even diced peach.
But make sure you don't add more than a cup as the batter will be too runny and won't grow as it should.
Furthermore, you can adjust the sweetness level by adding more or less honey.
I served it for breakfast so I didn't use that much, but if you plan to serve the blueberry oatmeal bread for dessert (or have a massive sweet tooth) you can add an extra spoon of honey.

2. How to serve this healthy blueberry oatmeal bread
If serving it for breakfast, you really need to try it with a dollop of greek or coconut yogurt, fresh berries on top and a drizzle of maple syrup or honey. This combo is truly amazing.
Or, you can warm it up, spread a thick layer of butter right after you take it out of the oven and have it with your morning coffee. Trust me, it's crazy delish!
But if you have it for dessert, then you must pair it with a scoop or two of ice cream. I am pretty sure this will be your new favorite summer dessert.
3. How to keep this homemade blueberry oatmeal bread
You can store it in an airtight container and keep it on the counter for up to 3 days or you can freeze it for up to 3 months.
If you freeze it, it's best to slice it first and then freeze each slice in Ziploc bags. This way, whenever you want a quick bite, you'll just need to reheat a few slices.
4. How to tell when it's baked completely
Do the toothpick test.
Don't know what that is?
No worries, it's quite easy.
First, check the inside of your blueberry oatmeal bread. If it's not cooked through, let it bake a bit longer.
But if the outside is already browned, you don't want to overcook or burn it, right?
So it's best to cover it in foil or parchment paper and place it back in the oven, then test it with a toothpick.
Just stick one into the top and if it comes out clean it's done. If not, place it back but do the toothpick test at short intervals so you won't burn it.

OAT FLOUR BANANA BREAD RECIPE
1 1/2 cups oat flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon cinnamon
1/2 cup coconut sugar
1.5 cup mashed bananas (about 2 large bananas or 265grams)
3 eggs
1/4 cup refined coconut oil, melted
2 teaspoons vanilla extract
1/3 cup semi-sweet chocolate chips
Preheat the oven to 350°F. Grease and line an 8”x4” loaf pan with parchment paper so the parchment overhangs the sides of the pan for easy removal once the cake is baked. Set aside.
In a large bowl, whisk together the oat flour, baking soda, baking powder, cinnamon, and coconut sugar.
In a separate large bowl, whisk together the mashed banana, eggs, melted coconut oil, oat milk, and vanilla extract.
Pour the liquid mixture into the dry ingredients and stir until just combined. Then, mix in ½ cup of chocolate chips.
Transfer the batter to the prepared baking pan and sprinkle with 2 tbsp chocolate chips. Bake in the center rack of the oven for 55-60 minutes or until a toothpick inserted into the center of the cake (not near a melted chocolate chip) comes out clean.
Transfer the loaf pan to a wire rack to cool for 10 minutes. Then, lift up the parchment paper overhang to carefully remove the bread from the pan allowing it to cool on the wire rack for another 20-30 minutes before slicing.
Serve warm, once slightly cooled, or at room temperature.
NOTES
Storing leftovers: This will stay fresh when covered at room temperature on the counter for up to about 2 days. To store for up to about 5 days, place slices in an airtight container or bag in the fridge. To enjoy warm slices, heat in the microwave for about 10-15 seconds or in a toaster oven for a short time.
Freezing: To store in the freezer, tightly wrap the whole loaf in plastic wrap, then place it in a resealable bag and freeze for up to 3 months. Thaw at room temperature, when you’re ready to enjoy it. You can also wrap individual slices in plastic wrap and store them in a resealable bag. Thaw slices at room temperature or microwave them for about 20-30 seconds.

250 gr yoghurt (1 cup)
2 eggs
280 gr oatmeal (3 cups)
1 pack baking powder (15 g)/ 1 tbsp
pinch of salt
handful walnuts
bake at 180˚C (356˚F) for 45 minutes
I used only half of tin, if you wish to make a bigger bread just double the amount of the ingredients ????????
