Blueberry Muffins | ब्लुबेरी मफिन्स | Sanjeev Kapoor Khazana
The moisture from the blueberries and the soft muffins with a lovely brown crust are such a delightful treat anytime of the day. Taste yum when warm.
BLUEBERRY MUFFINS
Ingredients
15-20 fresh blueberries + for topping
1 cup castor sugar
1 cup butter
3 eggs
1 tsp vanilla essence
1 cup + 1 tbsp refined flour (maida)
1 tsp baking powder
Method
1. Preheat the oven at 180ºC.
2. Take the sugar in a large bowl, add butter and beat the mixture with the help of an electric beater till light and fluffy.
3. Break in the eggs one at a time and continue to beat till the mixture is well combined. Add vanilla essence and beat well.
4. Sift 1 cup refined flour, baking powder directly into the butter-sugar mixture.
5. Take the blueberries in a small bowl, add remaining refined flour and mix well. Add this into the butter-sugar mixture as well. Gently fold in till well combined.
6. Transfer the mixture into individual lined muffin moulds, top with a few blueberries and place it in the preheated oven and bake for 30-35 minutes.
7. Bring the muffin out of the oven and allow to cool completely.
8. Serve.

1 cup (120 g) whole wheat flour

2 tsp (8 g) baking powder
1/2 tsp (2 g) baking soda
1/4 cup (50 g) Demerara sugar
1 cup (240 g) Buttermilk
1 Orange (Zest + Juice (1/4 cup) )
2 Tbsp (30 g) Canola Oil
1 egg
1 tsp (4 g) Vanilla extract
2 cups (295 g) fresh blueberries
TOPPINGS

Makes 12 muffins
Ingredients:
For the muffins:
1¾ cups (220g) Plain flour
1/2 teaspoon Baking soda
2 teaspoons Baking powder
1/4 teaspoon Salt
3/4 cup (150g) Sugar
2 Eggs
1/2 cup (120ml) Buttermilk/milk or non-dairy milk
1/3 cup (80ml) Oil
1 teaspoon Vanilla extract
Lemon zest
1 cup Blueberries, fresh or frozen
For the crumble:
1/2 cup (50g) Sugar
1/3 cup (42g) Flour
3 tablespoons (45g) Butter, cold
1/2 teaspoon Cinnamon (optional)
Directions:
1. Make the muffins: Preheat the oven to 375F (190C). Grease 12 muffin cups or line with paper liners.
2. In a large bowl mix flour, baking powder, baking soda, salt.
3. In a separate bowl whisk egg and sugar until light and fluffy. Add milk, oil, vanilla extract and lemon zest. Whisk until combined.
4. Pour the wet mixture into the dry mixture and mix until combined. Add blueberries and mix just until combined.
5. Scoop the batter into muffin cups until 3/4 full.
6. Make the crumble (optional): Combine the ingredients for the crumble topping together in a small bowl and crumble together using your fingertips.
7. Sprinkle some crumble on top of each muffin batter. Bake for 20-25 minutes, until a toothpick inserted into the center comes out clean.
8. Allow to cool before serving.

The trick is in smart ingredient swaps. Instead of oil, eggs, or milk, this muffin recipe calls for low-fat plain yogurt. Cornmeal adds a great texture, and the blueberries and orange bring a bright, sunny flavor. So good -- and good for you!

50g (3½ tbsp) – butter (soft)
190g (~1½ cup) – all-purpose flour
⅓ tsp – salt
70g (⅓ cup) – sugar
1 – egg
70g – milk
80g – orange juice (fresh-squeezed)
½ tsp – orange zest
¾ tsp – baking powder
For topping:
30g (2 tbsp) – melted butter
½ tsp – cinnamon
1 ½ tbsp – sugar

Isn't great when you can bake these and eat them too? These muffins are so good that you can have them for breakfast,and snack with your favorite coffee.,whats more they are loaded with healthy blueberries and the addition of orange juice and zest make them even more tasty..you may add some lemon juice too if you want a more tangier taste.the crumb topping is totally optional and they are delicious any way.Also, you can use frozen blueberries or fresh blueberries.no problem..so lets get it on.
What we need:
•3/4 cup organic brown sugar
•1/2 cup canola or veg. oil
•1/4 cup honey( organic or any good honey)
•2 large eggs at room temp.
•Zest of half an orange
•2 Tbsp fresh orange juice
1/2 cup ful cream milk
•1 Tbsp greek yogurt
•1 to 2 tsps vanilla extract
•2.5 cups All-purpose flour
•1Tbsps baking powder
•1tsp salt(pink or any regular salt)
•2.5 to 3 cups fresh or frozen blueberries
Streusel topping
•1/2 cup AP flour
•1 Tbsp cinnamon powder
•2 to 3 Tbsps raw sugar or white
•3 Tbsps melted butter
Mix all ingredients together
Directions for muffin
1.Preheat oven to 200 °C
2.In a large bowl,combine the first 9 ingredients together.mix well with a hand whisk.
3.In another bowl,combine the dry ingredients and sift into the wet ingredients..fold or whisk gently..do not over beat.
4.Finally add the blueberries.leaving some aside.
5. Fill muffin cases with the batter ,all the way up to the top,top with the remaing blueberries.
6.Sprinkle with the streusel toppings if using.
7. Bake them in the preheated hot oven for 9 minutes then turn temp. down to 180°C and continue baking them for another ,6 to 8 minutes.
